GRILLED HALIBUT WITH TOMATO-BASIL SALSA



Grilled Halibut With Tomato-Basil Salsa image

This is an easy fish recipe with light, bright flavors. You can use any mild flavored, firm, white fish; but halibut is my favorite with this. Watch the fish carefully as it cooks, if you overcook it, it will be rubbery. Make sure that the tomato you choose is fully ripe- this will not come out tasting right with under ripe tomatoes.

1 tablespoon extra virgin olive oil
1 tablespoon balsamic vinegar
1 garlic clove, minced or pressed
1/8 teaspoon kosher salt
1/8 teaspoon ground black pepper
1 medium tomatoes, cored seeded and diced
1/2 ounce basil leaves, sliced into ribbons (about 5 large leaves)
8 ounces halibut fillets
salt and pepper

Steps:

  • In a non-reactive bowl, whisk together the oil, vinegar, garlic, salt and pepper.
  • Add the tomatoes and basil, stirring gently to combine. Set aside while you cook the fish.
  • Preheat your grill to medium high.
  • If your fish has skin on it, season the flesh side with salt and pepper. If it has no skin, place the fish on a folded piece of aluminum foil, large enough to hold the fish in one flat layer, coated with cooking spray. Season with salt and pepper.
  • Place the fish on the grill, skin/foil side down. Cook until the fish flakes with a fork, or is barely opaque in the middle. It should still look a little wet in the center.
  • Remove the flesh from the skin (I just leave the skin on the grill and burn it off) or the foil, and place on a serving platter. Stir the salsa, then drizzle over the fish. Serve immediately.

I marinate the shrimp in a sweet and spicy coconut milk marinade then I cook them in a dry pan. The salsa finishes it off with more sweetness and heat. Basil keeps the tongue awake through it all.

1 mango, peeled and finely diced
3 scallions, sliced
5 basil leaves, julienned
1 lime, juiced
Kosher salt and freshly ground black pepper
2 fresh jalapenos, sliced
3 cloves garlic, thinly sliced
1/2--inch piece ginger, peeled and grated
2 tablespoons dark brown sugar
2 tablespoons soy sauce
1/2 lime, zested
1/4 cup coconut milk
Small handful basil leaves, torn
2 tablespoons vegetable oil
1/2 teaspoon salt
15 grinds pepper
1 pound peeled, deveined shrimp
Lime Jasmine Rice, recipe follows
1 cup jasmine rice
3/4 cup coconut milk
3/4 cup water
Pinch salt
1/2 lime, zested

Steps:

  • For the salsa: Combine all ingredients together in a mixing bowl. Make up to a day in advance. Keep covered in the refrigerator.
  • For the shrimp: In a mixing bowl, combine jalapenos, garlic, ginger, brown sugar, soy sauce, lime zest, coconut milk, basil, vegetable oil, salt and pepper. Add the shrimp and marinate for at least 30 minutes and up to 4 hours, refridgerated.
  • Heat a nonstick skillet over high heat. Use tongs or a fork to remove the shrimp from the marinade and place in an even layer in the pan, reserving the marinade.
  • Cook the shrimp until well browned on each side, turning once, about 3 to 4 minutes total. Transfer cooked shrimp to a serving plate.
  • Add reserved marinade to pan, bring to a boil and cook until slightly thickened, about 5 minutes.
  • Pour over the cooked shrimp and serve with Lime Jasmine Rice and Mango Salsa.
  • Put the rice, coconut milk, water, and salt in a saucepan and bring to a simmer. Cover and gently simmer until liquid is absorbed, about 12 to 15 minutes. Fluff with a fork and stir in the lime zest. Serve immediately.

3 cloves garlic, lightly crushed with the side of a knife blade and quartered
1-ounce peeled fresh ginger root (1 to 1 1/2-inch piece) and cut into 1/4-inch cubes
1/2 cup rice vinegar
1/4 cup soy sauce
6 scallions, sliced on the bias
2 pounds cleaned swordfish, skin removed and cut into blocks
1/4 cup olive oil
Salt and freshly ground black pepper
16 fiddleheads (new shoots of ostrich ferns), swirled in cold water and rubbed with your fingers to remove fuzzy covering
2 tablespoons rice wine vinegar
1 garlic clove, lightly crushed with the side of a knife blade and quartered
1/2 teaspoon Dijon mustard
1/2 cup extra-virgin olive oil
Salt and freshly ground black pepper
2 teaspoons soy sauce
1 tablespoon balsamic vinegar
1/4 cup extra-virgin olive oil
1/2 cup packed fresh basil leaves
2 large ripe tomatoes, seeds removed and diced into 1/4-inch pieces
2 shallot cloves, diced small
3 to 5 scallions, white and tender green parts only, sliced on the diagonal into 1/2-inch pieces
Salt (if needed) and freshly ground black pepper

Steps:

  • To marinate the fish: Microwave the limes in a small bowl to release the essential oils. Set limes aside until just cool enough to handle. Through the feed opening of a running blender, add 1 at a time, garlic, ginger, vinegar, soy sauce, and scallions. Then, leaving the blender running, squeeze in the juice from the microwaved limes. Place the swordfish in a nonreactive container and pour the marinade over. Cover and refrigerate for 6 to 8 hours.
  • To marinate the fiddleheads: Place the fiddleheads in a nonreactive bowl. Make the vinaigrette, by adding, 1 at a time, through the feed opening of a running blender the vinegar, garlic, and Dijon mustard. Then, leaving the blender running, add the olive oil in a slow thin stream. Season with salt and pepper, to taste, and pour over the ferns. Cover and let sit in the refrigerator for about 6 hours. (Marinating them this way is an alternative to cooking them.)
  • Make the salsa while you are heating the grill for the fish. Whisk together the soy sauce and balsamic vinegar in a bowl and add the olive oil in a slow thin stream while continuing to whisk. Chop the basil leaves and add to the bowl along with the tomatoes, shallots, and scallions. Season, to taste, with salt and pepper. (Be sure to taste before seasoning, because the soy is likely to lend saltiness.)
  • Brush the marinated fish with oil and season with salt and pepper. Grill the fish, leaving each side undisturbed for the first few minutes to prevent tearing of the flesh. Let rest, then transfer to a cutting board and carve into slices.
  • Place some salsa in the middle of a serving dish, top with sliced fish and garnish with marinated fiddleheads.

2 jalapeno chiles
24 scallions
3 cups blueberries (about 1 pound), picked over and rinsed
1/2 small red onion, finely chopped

1/2 teaspoon coarse salt
1/2 cup loosely packed basil leaves, very thinly sliced, plus whole leaves for garnish

Steps:

  • Heat grill to medium-high; lightly oil it. Grill jalapenos until slightly charred and blistered, turning frequently, about 15 minutes. Using a paper towel, pull off stems and remove skins from chiles. Roughly chop flesh and seeds; set aside. Meanwhile, grill scallions, turning often, until soft and charred in spots, 3 to 4 minutes; set aside.
  • Place 2 cups blueberries in a food processor; pulse until coarsely chopped, about five times. Transfer to a medium bowl, and add onion, jalapenos, lime juice, and 1/4 teaspoon salt; stir to combine.Add basil, cilantro, remaining cup blueberries, and oil; stir to combine.
  • Sprinkle chicken with the remaining 1/4 teaspoon salt and the cayenne. Grill chicken until cooked through, 3 to 4 minutes per side. Place 4 grilled scallions on each plate, and top with chicken. Serve immediately, topped with a generous spoonful of blueberry salsa. Garnish with basil and cilantro leaves.

1 1/2 cups dry red wine
1/4 cup sugar
1 tablespoon fine sea salt, to taste
fresh ground black pepper, to taste
6 -8 leaves fresh basil

Steps:

  • If using fresh tomatoes, core them, cut them into coarse chunks, and puree them in a food processor, blender, or food mill until smooth. Strain the flesh of canned tomatoes through a fine sieve, to remove skins and seeds. Set aside.
  • Heat the olive oil in a large pot, and cook the onion over a medium heat, stirring, until soft.
  • Add the garlic and cook, stirring occasionally, until it becomes soft. Do not let the garlic brown, or an acid taste will be imparted in the sauce.

1 cup low sodium soy sauce
1 tablespoon of grated gingerroot

1 cup diced pineapple, in plastic boxes
1 jalapeno, seeded and halved
1/4 small onion

  • Position 2 racks in the upper and lower thirds of the oven and preheat to 400 degrees F.
  • Combine the tomatoes, capers, 3 tablespoons of the olive oil, lemon zest and juice, shallot, basil, 1/2 teaspoon salt, and a few grinds of black pepper in a medium bowl. Set aside to let the flavors develop.
  • Cut four 16-inch long sheets of parchment paper. Fold each sheet in half and open it like a book. Divide the pieces of parchment between 2 baking sheets (2 pieces per sheet).
  • Toss the corn and green beans with the remaining tablespoon of olive oil, 1/2 teaspoon salt, and a few grinds of black pepper in a bowl. Divide between the 4 parchment sheets, mounding the mixture on one side of the fold. Sprinkle each cod fillet with 1/4 teaspoon salt and place on top of a vegetable mound. Dot with butter and drizzle with wine.
  • Fold over the top half of the parchment, crimping and overlapping small folds along the open edge to seal tightly. 2 1/2 ears fresh corn, cooked
4 cups tightly packed sliced romaine lettuce
1 cup tightly packed trimmed watercress
3/4 lb cooked lobster meat, cut into bite-size pieces

Steps:

  • In food processor bowl, add 1/2 cup tomato and next 4 ingredients.
  • Process until smooth.
  • Pour mixture into a medium bowl; stir in 1 1/2 cups tomato and next 5 ingredients; set aside.
  • Cut whole kernels from ears or corn to measure 2 cups.
  • Combine corn, lettuce and watercress in a large bowl; toss well.
  • Add tomato mixture, and toss gently to coat.
  • Divide evenly among 4 serving plates; top each with lobster.

Simple salsa without the dreaded weed, Cilantro. Raw onions are a migraine trigger for me so I "sweat" the onions to convert to a product I can enjoy (what makes you cry gives me a heck of a headache). I've also roasted the tomatoes with the peppers and garlic for a different flavor. The addition of ripe mango can make a very refreshing version of this recipe. I have also pureed the peels and added them in for the extra nutritional kick.

2 poblano peppers, seeded and diced

1 tablespoon olive oil

2 tablespoons olive oil

3 red bell peppers
2 cloves garlic, peeled,finely chopped
10 basil leaves, torn or cut into a chiffonade
1 tablespoon red wine vinegar

  • Preheat broiler or prepare grill to high heat.
  • Roast peppers under broiler or on grill, turning frequently until charred on all sides.
  • Remove and place peppers in bowl, then cover them for 15 minutes or until cool enough to handle.

1 cup pineapple, fresh finely diced
3 green onions, sliced
8 fresh basil leaves, thinly sliced
1 jalapeno pepper, seeded and finely chopped
1 garlic clove, minced
1 lime, juice of
1/2 teaspoon salt
1/4 teaspoon pepper
1 lb medium raw shrimp, peeled, de-veined and dried
1/3 cup cornstarch
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
3 egg whites
1 cup flaked unsweetened coconut
3/4 cup parmesan cheese, freshly grated

Steps:

  • In a medium bowl combine all salsa ingredients, stir, cover and refrigerate until ready to use. Best if left to marinate over night.
  • Preheat oven to 400°F In medium shallow dish, combine cornstartch, salt ans cayanne pepper; set aside. In another medium dish, combine coconut and cheese. In small bown beat egg whites until frothy; about 2 minutes.
  • Coat a large baking sheet non stick with cooking spray. Working with one shrimp at at time: dredge in cornstartch mixture, dip in egg white, then in coconut/cheese, pressing lightly with fingers. Place on prepared baking sheet, repeat with remaining shrimp. Bake 20 minutes, turning after 10 minutes.
  • Remove from oven and serve with pineapple salsa.

1 mango,diced
3 scallions, sliced
5 basil leaves, julienned
1 lime, juiced
kosher salt and fresh ground pepper
Shrimp:
2 fresh jalapenos, sliced
3 cloves garlic, thinly sliced
1/2" ginger, grated
2 tbs dark brown sugar
2 tbs soy sauce
1/2 lime, zested
1/4 cup coconut milk
small handful basil leaves, torn
2 tbs vegatable oil
1/2 tsp salt
15 grinds pepper
1 lb peeled, deveined shrimp
Rice:
1 cup jasmine rice
3/4 cup coconut milk
3/4 cup water
salt
1/2 lime, zested

Steps:

  • Salsa: Combine all ingredients in mixing bowl. Make up to day in advance & refrigerate. Shrimp: In mixing bowl, combine jalpenos, garlic, ginger, brown sugar, soy sauce, basil, veg oil, salt & pepper. Add shrimp and marinate for at least 30 minutes and keep refrigerated. Heat nonstick skillet over high heat. Use tongs or fork to remove shrimp from marinade & place in even layer in pan, reserving marinade. Cook shrimp until well browned on each side, turning once, about 3-4 minutes total. Transfer to serving plate. Add reserved marinade to pan, bring to boil and cook until slightly thickened, about 5 minutes. Rice: Put rice, coconut milk, water and salt in saucepan and bring to simmer. Cover and gently simmer until water is absorbed, about 12-15 minutes. Fluff with fork and stir in lime zest. Serve immediately. Pour over the cooked shrimp and serve with Rice & Salsa
