BASIL PASTA WITH LEMON GARLIC BUTTER SAUCE



Basil Pasta with Lemon Garlic Butter Sauce image

This delicious recipe features all the classic ingredients that you would expect in a Basil Pasta - lots of fresh basil leaves, Parmesan cheese, pine nuts, butter, garlic, and fresh lemon. It's an easy and quick recipe that requires only 7 ingredients and 30 minutes of your time!

6 tablespoons salted butter (divided)
5 cloves garlic (fresh, minced)
1/2 lemon ((preferably Meyer lemon) thinly sliced)
8 oz pasta ((I used farfalle or bow-tie pasta))
1 cup Parmesan cheese (freshly grated)
4 oz fresh basil
1/2 cup pine nuts (lightly toasted)
salt and pepper (to taste (use black cracked pepper))

Steps:

  • Heat a large cast-iron skillet over medium-high heat. Add 2 tablespoons butter, thinly sliced lemon, and minced fresh garlic. Cook for about 5 minutes, stirring a couple of times, until lemon slices brown and release juices and minced garlic is browned but not burned. Remove from heat and add 2 more tablespoons of butter. Stir until it melts. Remove lemon slices from the skillet.
  • Bring a large pot of water to boil. Add pasta and cook al dente according to package instructions. Drain pasta.
  • Add hot, drained, and cooked pasta to the cast-iron skillet with butter and garlic. Stir everything well.
  • Add 2 more tablespoons of butter and grated Parmesan cheese. Stir on low-medium heat for a couple of minutes to spread out the cheese among the pasta and melt it a bit. Remove from heat. Taste and season with salt.
  • Add half of the fresh chopped basil to hot pasta and mix everything well.
  • When ready to serve, top with the remaining half of fresh chopped basil, toasted pine nuts, and cracked black pepper.

5 tablespoons butter
1 tablespoon finely chopped shallots
8 leaves fresh basil, coarsely chopped
1/4 cup white-wine vinegar
1/4 cup heavy cream
Salt to taste if desired
Freshly ground pepper to taste

Steps:

  • Heat 1 tablespoon butter in a small saucepan, and add shallots. Cook briefly, and add basil and vinegar. Bring to a boil, and cook until reduced to 2 tablespoons.
  • Add cream, and bring to a rapid boil. Cook this until reduced to 1/3 cup. Remove the sauce from the heat, and immediately add the remaining 4 tablepoons of butter, salt and pepper, stirring rapidly with a wire whisk.

I threw this together one night when I had a craving for something salty and creamy. This is just the recipe for the basic sauce, but you can use it over anything from pasta, veggies, meat, or a combination of them all! This recipe makes alot, but it'll keep in the fridge for a week or so. I always finish all of it up within a week and I'm only one person! I hope you enjoy it as much as I do! *Note: Make sure you use Dried Basil only or it wont tast right at all!

3/4 cup sweet unsalted butter (make sure it's unsalted)
1 (24 ounce) carton sour cream (I use full fat because I think fat free tastes funny, but that's my own personal opinion)
1 (16 ounce) carton half-and-half (You can use Whipping Cream if you would like the sauce to be richer)
6 -8 tablespoons instant chicken bouillon granules (Depending on the desired saltiness)
2 tablespoons chopped garlic (I used the jarred kind because its eaiser than chopping my own)
1/4 cup dried basil, only crushed (I've tried it with fresh Basil and it doesn't even come close to taste!)

Steps:

  • Using medium heat melt butter in a sauce pan, being careful not to let it burn.
  • Once melted lower heat if needed and add in Garlic and Instant Chicken Bullion.
  • Next stir in sourcream until smooth.
  • Finally stir in your dried Basil that you've crumbled finely in your hands and the Half N Half and heat until warm.

Broiled grouper fillets are livened up with creamy lemon-basil sauce. It will have your family asking for seconds.

4 grouper fillets (or other firm white fish)
1 teaspoon sea salt
1 teaspoon freshly cracked black pepper
1/4 cup Land O Lakes® Butter with Olive Oil & Sea Salt
2 cloves garlic, grated
1/2 teaspoon freshly cracked black pepper
1/2 cup dry white wine
3 tablespoons freshly squeezed lemon juice
1/4 cup heavy cream
3 tablespoons chopped fresh basil

Steps:

  • Set oven control to broil. Spray cookie sheet with cooking spray. Place fish fillets on cookie sheet. Sprinkle both sides of fillets evenly with salt and 1 teaspoon of the pepper.
  • Broil about 10 to 15 minutes until fish flakes easily with fork.
  • Meanwhile, in large skillet, melt butter over low heat. Add garlic and remaining 1/2 teaspoon pepper. Cook and stir until garlic is fragrant. Add wine; heat to boiling over medium-low heat. Boil until sauce is reduced by half. Stir in whipping cream and basil. Simmer until thickened.
  • To serve, place broiled grouper on individual plates. Top with cream sauce.

After a mad search on the net for a recipe for this sauce I had to create my own. This can be reheated in the microwave without the usual cream sauce defects. I just love the light green color and how well it displays over tri color or regular pasta, salmon and grilled chicken. I have been putting this on everything.

2 cups fresh basil leaves
4 cloves garlic, minced
¼ cup olive oil
2 ounces pine nuts
½ cup grated Parmesan cheese
salt and pepper to taste
1 pint light cream

Steps:

  • In a food processor, combine basil and garlic. Begin processing, and pour in olive oil in a thin stream. Process for about 40 seconds, or until mixture begins to emulsify. Add pine nuts and Parmesan, then blend for 1 minute.
  • Heat cream in a saucepan over low heat until simmering. Pour 1/2 of the hot cream into the processor with basil pesto, and pulse for 20 seconds to incorporate. Pour mixture back into cream, and simmer for 5 minutes, or until thickened.
