Lower in fat than French fries, these red potato wedges are yummy with any meal!

4 medium red potatoes (2 1/2 to 3 inch), each cut in 8 wedges
2 teaspoons olive or vegetable oil
1 teaspoon dried basil leaves
1 teaspoon garlic salt

Steps:

  • Heat oven to 500°F. Spray 15x10x1-inch pan with cooking spray. In medium bowl, toss potatoes with oil to coat. Sprinkle with basil and garlic salt. Arrange in single layer in baking pan.
  • Bake uncovered 15 to 18 minutes, stirring once, until potatoes are tender but crisp on outside.

1 tablespoon olive oil
1 tablespoon dried basil
1/4 teaspoon garlic powder
4 medium red potatoes

Steps:

  • In a large resealable plastic bag, combine the Parmesan cheese, oil, basil and garlic powder. Cut potatoes into 1/4-in. sticks. Add to bag, a few pieces at a time, and shake to coat., Place in a 15x10x1-in. baking pan coated with cooking spray. Bake at 425° for 15-20 minutes on each side or until crisp and tender.

4 large unpeeled russet potatoes, cut into 1/4-inch strips
¼ cup olive oil
3 cloves garlic, minced
½ teaspoon ground dried thyme
¼ teaspoon seasoned salt
½ cup grated Parmesan cheese, divided
¼ cup chopped fresh parsley
¼ cup grated Parmesan cheese
¼ teaspoon seasoned salt

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the potatoes in a mixing bowl and drizzle with olive oil. Season with garlic, thyme, and 1/4 teaspoon seasoned salt. Toss until evenly coated. Lift the fries out of the bowl and spread onto a nonstick baking sheet in a single layer. Save the remaining oil in the bowl.
  • Bake in the preheated oven 30 minutes, flipping the fries halfway through baking. Return the fries to the bowl with the olive oil, sprinkle with 1/2 cup Parmesan cheese and parsley. Toss to coat, then spread again onto the baking sheet. Return to the oven, and bake until the Parmesan cheese melts, about 10 minutes. Sprinkle the fries with the remaining 1/4 cup Parmesan cheese and 1/4 teaspoon seasoned salt to serve.

Sweet Potato Fries with Basil Salt and Garlic Mayonnaise image

5 sweet potatoes, cut into about 1 by 5-inch "fries"
3 tablespoons olive oil
2 tablespoons chopped fresh basil leaves
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
3/4 cup mayonnaise
1 clove garlic, minced
1 tablespoon lemon juice

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the sweet potato "fries" on a foil-lined baking sheet and toss with the olive oil. Bake until golden, about 45 minutes.
  • Meanwhile combine the basil, salt, and pepper in a small bowl. In another small bowl combine the mayonnaise, garlic, and lemon juice, and stir to combine.

2 lb yukon gold potatoes (sliced into wedges)
1 tbsp olive oil
1/2 tsp sea or kosher salt
1/2 tsp cracked black pepper
2 tbsp butter
2 cloves garlic (minced)
1/4 c minced fresh basil
2 tbsp finely grated parmesan cheese

Steps:

  • Position two racks in the lower third of the oven. Heat oven to 450*. Line two baking sheets with parchment paper and set aside.
  • Place the potato wedges in a large bowl. Add the olive oil, salt, and pepper, then toss until evenly coated.
  • Place the potato wedges on the parchment lined baking sheets, leaving space between each wedge.
  • Roast 20 minutes. Remove the trays from the oven, flip each wedge, then return the baking sheets to the oven, taking care to switch the positions of the baking sheets to ensure even baking.
  • While the potatoes finish roasting, prepare the basil butter sauce. Heat a small saucepan over medium high heat. Add the butter and heat until it melts, then foams. Once the foam subsides, add the garlic and sautee, stirring continuously, until fragrant and lightly golden brown, approximately 1 minute. Stir in the basil and remove from heat.
  • Brush the basil sauce oven the oven fries, then dust with parmesan cheese. Serve immediately. Leftovers can be stored in the fridge for up to three days. Reheat in a skillet over medium heat until re-crisped and dust with fresh basil if available.
