Heat up your waffle iron for Alton Brown's Basic Waffle recipe from Good Eats, made extra scrumptious with buttermilk and a drizzle of maple syrup.

Yield approximately 6 (8-inch round) waffles

Number Of Ingredients 10

4 3/4 ounces all-purpose flour, approximately 1 cup
4 3/4 ounces whole-wheat flour, approximately 1 cup
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
3 tablespoons sugar
3 whole eggs, beaten
2 ounces unsalted butter, melted
16 ounces buttermilk, room temperature
Vegetable spray, for waffle iron

Steps:

  • Preheat waffle iron according to manufacturer's directions.
  • In a medium bowl whisk together the flours, soda, baking powder, salt, and sugar. In another bowl beat together eggs and melted butter, and then add the buttermilk. Add the wet ingredients to the dry and stir until combined. Allow to rest for 5 minutes.
  • Ladle the recommended amount of waffle batter onto the iron according to the manufacturer's recommendations. Close iron top and cook until the waffle is golden on both sides and is easily removed from iron. Serve immediately or keep warm in a 200 degree F oven until ready to serve.

2 cups waffle mix
1 ⅓ cups milk
1 large egg
2 tablespoons vegetable oil
2 cups all-purpose flour
2 tablespoons granulated sugar
½ teaspoon baking powder
½ teaspoon baking soda
1 teaspoon kosher salt
2 large eggs
8 tablespoons unsalted butter, melted
2 cups buttermilk
4 tablespoons maple syrup
8 tablespoons whipped cream
1 cup mixed berries
8 tablespoons toasted walnuts, chopped

Steps:

  • Preheat a waffle iron to medium-high heat. Grease with nonstick spray.
  • OPTION 1: If using prepared mix, in a medium bowl, whisk together the waffle mix, milk, egg, and vegetable oil until fully incorporated.
  • OPTION 2: If making the waffle batter from scratch, in a medium bowl, sift together the flour, sugar, baking powder, baking soda, and salt. In a small bowl, whisk together the eggs, melted butter, and buttermilk. Whisk the wet ingredients into the dry ingredients until fully combined.
  • Add 1 cup (130 g) of waffle batter to the center of the waffle iron. Cook until the waffle is golden brown and cooked through, 4-6 minutes. Repeat with the remaining batter.
  • Top each waffle with 1 tablespoon maple syrup and 2 tablespoons whipped cream. Garnish with ¼ cup (45 g) mixed berries and 2 tablespoons walnuts.

After making these waffles, my sister said I had to post this recipe. We have tried many waffle recipes and this is our favorite. These waffles are light and crispy. I obtained the original from the manual of my first waffle iron many years ago. When my kids were little, it wasn't unusual for me to make a batch a couple times a week.

1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar
3 eggs, separated
1 1/2 cups milk
7 tablespoons vegetable oil

Steps:

  • Sift Dry ingredients.
  • Beat egg whites until stiff.
  • Add egg yolks, milk and oil to the dry ingredients. Mix thoroughly.
  • Gently fold egg whites into batter.
  • Pour into preheated waffle iron and bake.
