Sweet potato and red lentil soup is a delicious and easy recipe. This healthy vegan and gluten free soup is a perfect filler that never fails to please.

1 tbsp olive oil
1 onion diced
1 kg sweet potatoes (peeled and diced)
1.5 L vegetable stock
210 g red split lentils
1 tsp ground turmeric
1/2 tsp mild chilli powder
Freshly ground salt and pepper
1 tbsp coriander chopped

Steps:

  • Gently heat the oil in a large soup pot and add the diced onion to soften it, stirring occasionally for about 4 - 5 minutes. Then add the diced potatoes and continue to stir for a further 3 - 4 minutes.
  • Add the vegetable stock, lentils, ground turmeric and mild chilli powder.
  • Stir well, bring to the boil and turn down to simmer gently for 20 -25 minutes until all the mixture is completely softened. Remove from the heat.
  • When the soup has cooled a little, blitz it in a blender / food processor and return to the pan, season to taste, garnish with the chopped coriander and then serve.

2 tablespoons olive oil
1 onion, chopped
2 large sweet potatoes, peeled and chopped
3 carrots, chopped
4 large cloves garlic, minced
1 tablespoon garam masala
¼ teaspoon seasoned salt
⅛ teaspoon cayenne pepper
salt and ground black pepper to taste
2 (16 ounce) cans chicken broth
3 cups water
4 cups chopped fresh spinach
1 ½ cups red lentils

Steps:

  • Heat olive oil in a pot over medium-low heat. Add onion and cook until translucent, about 5 minutes. Add sweet potatoes, carrots, garlic, garam masala, seasoned salt, cayenne pepper, salt, and pepper. Cook for 5 minutes. Add broth and water. Bring to a boil and cook until flavors start to blend, about 10 minutes.
  • Add spinach and lentils; bring to a boil. Reduce heat to low and simmer until lentils are soft, 15 to 20 minutes.

¼ cup butter
2 large sweet potatoes, peeled and chopped
3 large carrots, peeled and chopped
1 apple, peeled, cored and chopped
1 onion, chopped
½ cup red lentils
½ teaspoon minced fresh ginger
½ teaspoon ground black pepper
1 teaspoon salt
½ teaspoon ground cumin
½ teaspoon chili powder
½ teaspoon paprika
4 cups vegetable broth
plain yogurt

Steps:

  • Melt the butter in a large, heavy bottomed pot over medium-high heat. Place the chopped sweet potatoes, carrots, apple, and onion in the pot. Stir and cook the apples and vegetables until the onions are translucent, about 10 minutes.
  • Stir the lentils, ginger, ground black pepper, salt, cumin, chili powder, paprika, and vegetable broth into the pot with the apple and vegetable mixture. Bring the soup to a boil over high heat, then reduce the heat to medium-low, cover, and simmer until the lentils and vegetables are soft, about 30 minutes.
  • Working in batches, pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot.
  • Return the pureed soup to the cooking pot. Bring back to a simmer over medium-high heat, about 10 minutes. Add water as needed to thin the soup to your preferred consistency. Serve with yogurt for garnish.

This is one of my favourite soup recipes. Perfect in winter. It is thick, filling and a little spicy. It is also inexpensive and freezes well. It can be spiced up using chilli , cummin/corriander, or what ever spices you like. with Serve with lebanese bread.

1 kg sweet potato, peeled and chopped into small pieces
2 tablespoons olive oil
1 onion, finely chopped
4 garlic cloves, crushed
2 cups dried red lentils
8 cups stock or 8 cups water
1 teaspoon salt
fresh ground pepper, I use a fair bit

Steps:

  • Heat olive oil in a soup pot over medium heat and add onion and garlic.
  • Cook 8-10 minutes, stirring frequently, until onions are soft and slightly caramelized.
  • Add stock, sweet potato, 1 teaspoon salt and bring to a boil. Simmer the soup for about 30-40 minutes, until the lentils and sweet potatoes are tender.
  • Puree the soup, I usually just use a potato masher. But you could use one of those 'stick' blenders.
  • If it seems too thick after blending, add another cup of stock or water and stir well.

2 tablespoons coconut or extra-virgin olive oil
1 teaspoon ground cumin
1 teaspoon ground turmeric
1 tablespoon curry powder
1 diced large onion
Coarse salt and freshly ground black pepper
4 minced cloves garlic
2 tablespoons minced fresh ginger
2 peeled and diced sweet potatoes
1 diced (stemmed, seeded) red bell pepper
1 1/2 cups rinsed red lentils
6 cups Cleansing Broth
Chopped fresh cilantro

Steps:

  • Heat oil in a large pot over medium heat. Cook cumin, turmeric and curry powder until fragrant, about 1 to 2 minutes. Add onion with a few pinches salt, and cook, stirring, until tender, about 6 minutes. Add garlic and ginger and cook, stirring, until tender, about 2 minutes. Add sweet potatoes and bell pepper and cook 1 minute.
  • Add lentils and cleansing broth. Bring to a boil, then reduce heat and simmer until lentils are tender, 20 to 25 minutes. Season with salt and pepper. Top with cilantro before serving.

Satisfying and simple to make, homemade soup is a great supper or take-to-work lunch.

2 tsp medium curry powder
3 tbsp olive oil
2 onions, grated
1 eating apple, peeled, cored and grated
3 garlic cloves, crushed
20g pack coriander, stalks chopped
thumb-size piece fresh root ginger, grated
800g sweet potatoes
1.2l low-sodium vegetable stock
100g red lentils
300ml milk
juice 1 lime

Steps:

  • Put the curry powder into a large saucepan, then toast over a medium heat for 2 mins. Add the olive oil, stirring as the spice sizzles in the pan. Tip in the onions, apple, garlic, coriander stalks and ginger, season, then gently cook for 5 mins, stirring every so often.
  • Meanwhile, peel, then grate the sweet potatoes. Tip into the pan with the stock, lentils, milk and seasoning, then simmer, covered, for 20 mins. Blend until smooth using a stick blender. Stir in the lime juice, check the seasoning and serve, topped with roughly-chopped coriander leaves.
