2 hearts romaine lettuce
2 small plum tomatoes, diced
1 Kirby cucumber or 1/4 European seedless cucumber, diced
1 small yellow onion or 1/2 red onion, chopped
1 carrot, peeled and shredded
1/4 cup (a couple of glugs) extra-virgin olive oil
2 to 3 tablespoons (a couple of splashes) red wine vinegar
1 teaspoon sugar
Coarse salt and black pepper

Steps:

  • Place salad greens in a salad bowl and top with tomatoes, cucumbers, onion, and carrot. Place oil, vinegar and sugar in a small plastic container. Put the lid on the container and shake dressing until sugar dissolves, about 1 minute. Pour dressing over salad. Season salad with salt and pepper, to taste, and toss to combine.

I'm tired of spending so much money on bagged salads. I like the convenience and all, but it doesn't take THAT long to put salad together ahead of time. I like this mix because it's basic, and I can add other vegetables later.

2 heads romaine lettuce
1 head red leaf lettuce
1 head radicchio
3/4 cup carrot, grated (optional)

Steps:

  • Remove any brown or heavily wilted outer leaves from all three kinds of head of lettuce.
  • Fill a clean sink almost to the top with cold water. Add your red leaf and romaine lettuce.
  • With your radicchio lettuce you'll want to simply peel the leaves off one by one and add to the cold sink.
  • Let sit for 5 minutes. Then gently shake the lettuce under the water to move the water through the leaves and losen debris.
  • Let sit for another 5-10 minutes so all of the dirt/sand/stuff settles to the bottom of the sink.
  • Remove lettuce(s) and rinse once more with fresh cold water from the tap before laying on paper towel.
  • Now simply break off pieces into decent bite size pieces and place in a large bowl.
  • Doing one batch at a time (I don't know how big your salad spinner is) use your salad spinner (I like to use a med size model with the hand pump at the top)to remove excess water.
  • Once dried in spinner, toss in carrots and store in large gallon size plastic bags. Store in the bottom crisper drawer in your fridge.
