JACQUES PEPIN'S BASIC ROAST CHICKEN

Jacques Pepin's Basic Roast Chicken image

Changing a meal's status requires more than a change of name, but not much more. Roast chicken is still roast chicken whether you label it haute cuisine, bourgeois cuisine or country cooking; even calling it "poulet roti" will not transmogrify this simple bird. Move, however, from the kitchen to the dining room and from everyday dishes to fine china, then add an appetizer and dessert, and a family meal becomes a festive dinner for guests.

Time 55m

Yield 4 servings

Number Of Ingredients 2

1 3 1/2-pound chicken
Salt and ground pepper to taste

Steps:

  • Preheat the oven to 425 degrees. Sprinkle the chicken inside and out with the salt and pepper and fold the wings akimbo to position them closer to the body. Place the chicken on its side in an oven-safe skillet, preferably cast-iron.
  • Place the chicken in the skillet in the oven and cook for 20 minutes, then turn the chicken over and cook another 20 minutes. (By cooking the chicken on its sides, the juices stay in the breast and, since only the back is exposed, the chicken does not need constant basting.) Finally, turn the chicken onto its back, baste it with the cooking juices and continue to cook 10 minutes. It should be golden in color.
  • When the chicken is cooked, cut it into pieces and serve, with the drippings on the side.

MARK BITTMAN'S BASIC ROAST CHICKEN PARTS WITH VARIATIONS

Mark Bittman's Basic Roast Chicken Parts With Variations image

The simplest chicken recipe there is and perhaps the easiest as well. Add the herb here if you like or see the flavoring ideas that follow. This is the kind of dish you'll never get tired of, because you can change the flavoring every time you make it. From Mark Bittman's cookbook," How to Cook Everything" (10th Edition).

Time 55m

Yield 6 serving(s)

Number Of Ingredients 4

1/4 cup extra virgin olive oil or 1/4 cup butter
1 whole chickens, 3 to 4 pounds, trimmed of excess fat and cut into 8 pieces or 1 any combination chicken parts
salt & freshly ground black pepper
1/4 cup sage (optional) or 1/4 cup a combination herbs (optional)

Steps:

  • Heat the oven to 450°F Put the oil or butter in a roasting pan and put it in the oven for a couple of minutes, until the oil is hot or the butter melts. Add the chicken and turn it a couple of times in the fat, leaving it skin side up. Sprinkle with salt and pepper and return the pan to the oven.
  • After the chicken has cooked for 15 minutes, toss about one-quarter of the herb, if you're using any, over it and turn the pieces. Sprinkle on another quarter of the herb and roast for another 10 minutes.
  • Turn the chicken over (now skin side up again), add another quarter of the herb, and cook until the chicken is done (you'll see clear juices if you make a small cut in the meat near the bone), a total of 30 to 40 minutes at most. Garnish with the remaining herb and skim excess fat from the pan juices if necessary; serve, with some of the juices spooned over it.
  • ROAST CHICKEN PARTS WITH BLACK BEANS VARIATION: First, soak 2 tablespoons fermented black beans in water, sherry, or wine to cover. In place of the butter or olive oil, use peanut oil or a neutral oil, like grapeseed or corn. Mix together 1 tablespoon minced garlic, 2 minced scallions, 1 teaspoon minced fresh ginger, 2 tablespoons soy sauce, and 1 teaspoon sugar or honey. Drain the black beans and add them to this mixture; thin it to a paste, if necessary, with a little more soy sauce. In Step 1, spread a little of this mixture all over the raw chicken and put the chicken in the roasting pan; return the pan to the oven. Proceed with Steps 2 and 3, using the soy-based mixture for basting in place of the herb mixture.
  • MORE VARIATIONS: You can combine these ideas at will; it's hard to go wrong here. Add with the chicken at the beginning of cooking unless otherwise specified. (1) Add a few sprigs of a stronger herb like thyme, sage, oregano, or rosemary. (2) Add several (or many!) cloves of garlic. (3) Add a cup or so of chopped onion, shallot, or leek. (4) Add a cup or so of sliced fresh mushrooms, after the first 15 minutes of roasting. (5) Add a lot of hot dried chiles, a couple of roasted, soaked, and chopped milder chiles, or both. (6) Add 2 or 3 lemons (oranges and limes are good too), cut in half; when the chicken is done, squeeze the hot lemon juice over it. (7) Use peanut oil instead of olive oil and add several slices of ginger and garlic after turning the chicken skin side up again. When chicken is done, drizzle with soy sauce and dark sesame oil, then garnish with scallions and/or cilantro. (8) Use Compound Butter, Flavored Oil, or Vinaigrette from the beginning of the cooking or as a basting sauce during cooking. (9) Rub the chicken with 1/2 cup or so of Pesto or any other herb paste from the beginning of the cooking. (10) Stir in a dollop of grainy French-style mustard when the chicken is done. (11) Add a couple handfuls of cherry tomatoes and some black olives after turning the chicken skin side up again. (12) Stir in a cup of any salsa in the last 10 minutes of cooking or spoon on top of the cooked chicken before serving. (13) Stir a couple tablespoons of any curry powder into a cup of yogurt or coconut milk and spoon or brush it on as a basting sauce during cooking.

BASIC ROAST CHICKEN

Basic Roast Chicken image

Provided by Florence Fabricant

Categories     main course

Time 1h15m

Yield 4 servings

Number Of Ingredients 9

A 4- to 5-pound chicken
1 lemon
1 tablespoon olive oil, vegetable oil or soft butter
Salt and freshly ground black pepper
3 to 4 sprigs parsley
2 medium onions
Water
1/2 cup dry white wine or chicken stock (optional)
1 teaspoon cornstarch (optional)

Steps:

  • Remove the package of gizzards, heart, liver and neck from the cavity of the chicken. Except for the liver, these parts can be used to make stock. You may wish to freeze them until you have the innards of several chickens. Saute the liver and spread on toast or freeze it separately, adding to your supply of frozen livers as you buy whole chickens.
  • Preheat oven to 400 degrees.
  • Rinse the chicken with cold water and pat it dry on a paper towel. Pull off any excess fat from the back of the cavity near the tail. This fat can be sauteed slowly in a small skillet to use for frying or it can be frozen for future use. Pull out with tweezers or singe over an open flame any large pinfeathers on the wings. Sqeeze the juice of half the lemon into the cavity and rub it in.
  • Rub the outside of the chicken with the oil or butter. Season the chicken inside and out with salt and pepper. Tuck the lemon halves and the parsley into the cavity. Quarter one of the onions and tuck the quarters into the cavity.
  • The chicken will hold its shape better if is trussed. At the very least, tuck the wing tips behind the chicken and, using butcher's cord, tie the legs together. To truss the chicken completely, first loop cord around the tail and crisscross it around the legs, pulling the legs together tightly. Then run the length of cord along the sides of the chicken, just under the drumstick and through the wing joints, pulling the ends together across the back near the neck, securing the extra flap of neck skin under the cord. Tie the cord securely, making for a tight, plump-looking bird.
  • Slice the remaining onion and scatter it in the roasting pan. Position the chicken on a rack and place in the oven. Roast for 13 to 15 minutes a pound, until the juices run clear when the meaty flesh of the upper thigh is pricked with a sharp fork. If the onions in the pan appear to be browning too rapidly while the chicken is roasting, add a little water to the pan. The onions should become dark brown but should not be allowed to blacken.
  • Remove the chicken to a platter or cutting surface and allow it to rest 10 to 15 minutes before carving.
  • Skim any excess fat from the roasting pan. Add several tablespoons of water to the roasting pan, place it on top of the stove over medium heat and stir, scraping up any browned bits clinging to the pan. Strain the pan juices into a small saucepan. These juices can be seasoned with salt and pepper and used to moisten the portions of chicken or can be used to make a gravy. Add the wine or stock to the juices and bring to a simmer. Dissolve the cornstarch in one tablespoon cold water and stir into the gravy mixture. Simmer until thickened, then season.
  • Carve the chicken by cutting through the joints to remove the drumsticks and wings, then slicing the breast meat and thigh meat. Arrange the meat on a platter and serve either moistened with pan juices or with the gravy on the side.
