1/2 cup shortening
1/2 cup vegan margarine (Earth Balance)
3 1/2 cups powdered sugar
1 1/2 teaspoons vanilla extract
1/4 cup plain soymilk (or almond milk)

Steps:

  • Beat the shortening and margarine together until well combined (about 5 minutes).
  • Add the sugar, and beat for about 3 more minutes.
  • Add vanilla and soy milk.
  • Beat an additional 5-7 minutes until fluffy!
  • This is enough to frost your average 13x9 cake, or at least 12 cupcakes.

2 egg whites
1 1/2 cups granulated sugar
1/2 cup water
1 tablespoon white corn syrup
1/2 teaspoon salt
1 teaspoon vanilla

Steps:

  • In the top bowl of a double boiler off the heat, combine all the ingredients except the vanilla. Beat the mixture for about 1 minute to mix thoroughly. Rest the bowl over simmering water over medium heat and whisk constantly for 7 minutes, or until frosting shows stiff peaks and has tripled in volume. Lift the pan off the water and whisk vigorously until frosting has cooled and is thick and glossy.
  • NOTE:: Add ½ cup of smooth peanut butter to the finished frosting. This stays at its fluffiest if you first whisk together the peanut butter and about a cup of frosting. Then fold in the rest of the frosting gently with a rubber spatula.

1 box powdered sugar (1 lb) sifted
1 stick butter, softened, room temperature
1 pkg cream cheese, 8 oz. softened room temperature
1-2 tsp vanilla extract
1-2 Tbsp milk, optional if a more spreadable consistency is needed

Steps:

  • 1. In a medium size bowl, beat butter and cream cheese together till blended, then add sifted powdered sugar and beat again gradually increasing speed of beater as you go. Add vanilla extract and milk if needed. Beat till blended then proceed to frost cake.
  • 2. Note for a nutty flavor add toasted or chopped nuts to frosting. Or Melt 1 cup of semi sweet milk chocolate pieces and add to frosting then stir to blend and frost cake as desired. This is the recipe I use for my husband and daughters favorite carrot cake.

This is a diet buster, it's wickedly delicious and it is so easy and quick. It's from my all time favorite cookbook Fanny Farmer's, my copy was printed in 1965 and it's still the best basic cookbook I've come across.

3/4 cup sugar
2 tablespoons water
1/8 teaspoon cream of tartar
1 pinch salt (3-5 grains)
1 egg white
vanilla
lemon, juice and zest
orange, juiceand zest
coconut, freshly grated

Steps:

  • Mate a stainless steel mixing bowl and a large sauce pan. You're making a double boiler.
  • Put a few inches of water in the pan and bring to a boil without the mixing bowl on top.
  • In the bowl mix all of the ingredients except flavor options with a hand mixer.
  • Place the bowl on the boiling pan and mix 'til it's thick enough to stand, about 4 min.
  • Remove the bowl from the pan and mix 'til it's thick enough to spread.
  • Flavors in the order of my favorites; Vanilla; Mix 1/2 tsp into the finished frosting.
  • Lemon; Subtitute 2 TBS Lemon juice for water and mix 1/2 tsp Lemon Zest into the finished Frosting.
  • Orange; Same as lemon but use Orange.
  • Coconut; Mix 1/4 cup freshly grated coconut into the finished frosting, spread on the cake and sprinkle the top with a bit more coconut.

1 teaspoon vanilla, essences
165 g caster sugar
2 eggs
225 g self raising flour
125 ml milk
125 g soft butter
240 g icing sugar
2 tablespoons milk

Steps:

  • Preheat oven to moderate.
  • Grease & line pan(s).
  • Beat butter, vanilla and sugar in small bowl until light and fluffy; beat in eggs one at a time.
  • Stir in flour and milk (in 2 batches).
  • Spread into tin, and cook for approximately 25 - 35 minutes (until skewer comes away clean).
  • Let stand for 5 minutes, then turn onto wire rack.
  • Serves 6.
  • FROSTING.
  • Beat butter in small bowl until as white as possible, gradually beat in half the icing sugar, milk, then remaining icing sugar.
  • Add flavoring and coloring as required.

6 cups confectioners' sugar
1 teaspoon pure vanilla extract

Steps:

  • Beat butter on medium-high speed until pale and creamy, about 2 minutes. Reduce speed to medium and add sugar 1/2 cup at a time, beating after each addition, until combined, 1 to 2 minutes. Beat in vanilla. Use immediately, or store in an airtight container in refrigerator up to 3 days. Before using, bring to room temperature and beat on low speed until smooth.

Add water if needed to thin to spreading consistency. Brown Buttercream Frosting * In a small bowl, combine frosting and cocoa powder until well blended. Red Buttercream Frosting * In a small bowl, combine frosting with enough red food color to reach desired color. In a large mixer bowl at low speed, beat 5 cups of the powdered sugar, shortening, water, vanilla, almond extract and salt until well blended. Beat in enough of the remaining powdered sugar until of piping consistency. Tint with food color if desired.Use for piping flowers, leaves and shells.
