1 lb lean (at least 80%) ground beef, cooked, drained
¾ cup barbecue sauce
1 can (10.2 oz) Pillsbury™ Grands!™ Flaky Layers refrigerated biscuits
¾ cup shredded Cheddar cheese (3 oz)

Steps:

  • 1. In 10-inch nonstick skillet, mix cooked beef and barbecue sauce. Heat over medium-high heat, stirring constantly, until hot. 2. Pull each biscuit apart into 2 layers; press each into 4-inch round. Place 1 round in each of 8 greased regular-size muffin cups. Firmly press in bottom and up side, forming ¼-inch rim. Fill with beef mixture; sprinkle with cheese. 3. Bake at 375°F 13 to 15 minutes or until edges of biscuits are golden brown. Cool 1 minute; remove from pan.

¾ pound lean ground beef
½ cup barbeque sauce
1 tablespoon dried minced onion
1 (12 ounce) package refrigerated biscuit dough
⅓ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease the cups of a muffin pan.
  • In a large heavy skillet over medium heat, cook beef until evenly brown. Drain excess fat. Stir in barbeque sauce and dried onion. Simmer for a few minutes over low heat.
  • Flatten each biscuit, and press into cups of the prepared muffin pan. Make sure the dough comes to the top of the pan. Spoon a portion of the meat mixture into each dough cup.
  • Bake in preheated oven for 12 minutes. Sprinkle with cheese, and bake for 3 more minutes.

A versatile barbecue sauce - sweet and spicy. Kind of like magic -- anything I prepare with this sauce disappears! It's a hit with all ages. I've started preparing it with Xylitol, also known as birch sugar, instead of sugar, and it works just great, plus it's easier on blood sugar levels.

Yield 3/4 cup sauce (approximately)

1/2 cup Heinz ketchup
1/8 cup water (more or less for desired thickness)
1 garlic clove, minced (or more ( I mean, why not?)
1/2 teaspoon Worcestershire sauce
1 teaspoon chili powder
1/4 cup sugar or 1/4 cup honey
1 teaspoon prepared yellow mustard

Steps:

  • Combine ingredients, bring to a boil and simmer over low heat for 5 minutes.
  • Use this as a basting sauce for barbecue, or combine with chopped or shredded beef, chicken or pork, and simmer until heated throughout and flavor is well through the meat.
  • If you want to make up a batch of this to keep in the freezer, leave out the water, and it will not freeze solid. You can take out the container and just scoop out however much you need. I sometimes make it up by the gallon just to have it on hand for easy meals.

1/2 cup barbecue sauce
1 tablespoon onion, minced
1 1/2 tablespoons brown sugar
1 (8 ounce) can refrigerated buttermilk biscuits
3/4 cup cheddar cheese, shredded

Steps:

  • Brown ground beef in skillet, stirring until crumbly; drain.
  • Add barbecue sauce, onion and brown sugar, mixing well.
  • Flatten biscuits with a rolling pin and press them into greased muffin cups.
  • Spoon in ground beef mixture.
  • Sprinkle with cheese.
  • Bake at 400 degrees for 10 to 12 minutes or until golden brown.

2 Tbsp chopped onion
1/2 cup barbeque sauce
1 Tbsp brown sugar
1 pkg (8 oz.) refrigerated biscuits
1 cup grated cheddar cheese

Steps:

  • In skillet brown ground beef and onions; drain. Add barbeque sauce and brown sugar.
  • Separate biscuits. Place in ungreased muffin pans. Push dough up along the sides. Spoon meat filling into cups.
  • Bake at 400°F for 15 minutes. Sprinkle cheese on top then bake an extra 2 minutes longer.

1/4 cup finely chopped onion
1 cup hickory smoke-flavored barbecue sauce
2 1/4 cups Original Bisquick™ mix
1 cup shredded Cheddar cheese (4 oz)
2/3 cup milk

Steps:

  • Heat oven to 450°F. Spray 12 regular-size muffin cups with cooking spray.
  • In 10-inch nonstick skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in barbecue sauce; cook until mixture just begins to bubble.
  • In medium bowl, stir Bisquick mix, 1/2 cup of the cheese and the milk until soft dough forms. Spoon about 2 tablespoons dough into each muffin cup. Press dough in bottom and up sides of each cup. Spoon 2 tablespoons beef mixture into each cup.
  • Bake 8 to 10 minutes or until top edges of cups are golden brown. Sprinkle each with remaining cheese. Let stand 5 minutes; remove from pan.
