One Pot BBQ Chicken Chili Mac: 30 Minute Thursday image

This One Pot BBQ Chicken Chili Mac is the perfect meal in one! It's loaded with protein, fiber, veggies and made in one skillet in 30 minutes! An easy, healthy weeknight meal.

1 teaspoon canola oil
3 small boneless skinless chicken breasts (cut into 1/2" pieces)
1/2 teaspoon seasoning salt
1 red pepper (diced)
1/2 small onion (diced)
1 cup finely chopped fresh spinach
540 ml can black or kidney beans, drained and rinsed (19oz )
1 teaspoon minced garlic
1 tbsp chili powder
28 oz canned diced tomatoes with juice
1/2 cup barbecue sauce
2 cups chicken broth
1/2 teaspoon salt
2 1/2 cups dry macaroni (I used high fiber white)
2 cups shredded cheddar cheese

Steps:

  • In a large skillet over high heat, cook chicken breasts in canola oil until browned, about 2-3 minutes. Sprinkle with seasoning salt.
  • Meanwhile, chop your red pepper, onion and spinach and add to the pan. Cook over high heat, stirring often, until softened, about 3-4 minutes.
  • Add beans, garlic and chili powder and cook 1 minute.
  • Add tomatoes, barbecue sauce, broth, salt and macaroni and bring to a boil over high heat. Reduce heat to medium and cook until pasta is al dente and liquid is mostly absorbed, about 9-10 minutes, stirring often. Stir in cheese (will continue to thicken as it sits and the cheese melts). Serve.

1 pound ground beef or turkey
1 medium onion, chopped
1 green bell pepper, chopped
1 (14.5 ounce) can Mexican or chili-style stewed tomatoes, undrained
½ cup water
1 (1.25 ounce) package taco seasoning mix
2 cups elbow macaroni or small shells, cooked and drained
2 cups Sargento ® Shredded Reduced Fat 4 Cheese Mexican Cheese, divided

Steps:

  • Cook ground beef, onion and green pepper in large skillet over medium heat 5 minutes or until beef is no longer pink; pour off drippings. Add tomatoes, water and taco seasoning; simmer 5 minutes, stirring occasionally.
  • Toss pasta with meat mixture. Spoon 3 cups of mixture into an 11x7-inch baking dish. Sprinkle with 1 cup cheese; top with remaining meat mixture. Cover with foil; bake in preheated 375 degrees F oven 30 minutes. Uncover; sprinkle with remaining cheese. Return to oven 5 minutes or until cheese is melted.

This is warmth and comfort on a cold day. My boys and I settle in with a good movie and a bowl of this chili mac, dicussing the finer points of "The Lorax" or a good belching competition... hey you were a kid once too remember??

Number Of Ingredients 12

- kosher salt and fresh black pepper
1 pound(s) corkscrew pasta, cooked and drained
1 tablespoon(s) olive oil
4 slice(s) bacon, cooked ,drained, and diced
1&1/2 pound(s) lean ground beef
3 tablespoon(s) tomato paste
1&1/2 cup(s) sweet & tangy barbeque sauce, i use famous daves'
1 can(s) 14 oz. crushed tomatoes
1 can(s) 28oz. diced tomatos, including juice
1 can(s) 15 oz pinto beans
1 package(s) ranch dressing mix
- green onions, sour cream, & heddar cheese to garnish

Steps:

  • Gather ingredients. Cook pasta according to the package directions. Drain pasta and toss with olive oil.
  • Cook bacon in large Dutch oven over medium heat until it is just lightly crisp and the fat is rendering. toss in onion, jalapeno, and garlic and sauté until tender. Add the beef to the veggies to brown breaking up with a wooden spoon. Throw in the tomato paste and stir to blend.
  • Stir in barbeque sauce, crushed and diced tomatos and beans, plus ranch seasoning and simmer for 20 minutes, allowing the flavors to blend. Taste and adjust seasoning as desired. add salt and pepper if needed. Add pasta to meat mixture and stir. Serve hot with condiments.
  • all my prep times are based on what I do by hand, if you have a food processor, it'll be quicker. enjoy!!
