This is a super simple recipe I copied from the Whole Foods Market website. The grilled kielbasa have such a wonderful flavor. You can even use turkey kielbasa to save on calories and fat. I use more apple just because my kids like the way they taste off the grill. It's okay to let the ingredients sit in the lemon juice mixture for a few minutes. I was concerned about that at first, but it does not overpower or alter the flavor of the dish. I also don't use the skewers. I use a grilling basket - it's much faster!! I serve with couscous.

10 -12 skewers
1 lb kielbasa
1 large onion
1 red apples, such as Braeburn or 1 gala apples, cored
1 tart green apple, such as Granny Smith, cored
1/4 cup lemon juice
1/4 cup olive oil
2 teaspoons fresh ground black pepper
1 teaspoon salt

Steps:

  • If using bamboo skewers, soak them in water for 30 minutes before grilling.
  • Cut kielbasa, onion and apples into 2-inch pieces.
  • Combine in a bowl with lemon juice, olive oil, black pepper and salt.
  • Toss to coat.
  • Preheat grill to medium high.
  • Thread pieces of sausage, onion and apple pieces on skewers, alternating them.
  • Grill 3 to 5 minutes each side, until apples and onions are slightly blackened on edges, yet still crisp inside, and sausage is very hot.
  • Serve immediately.

1 pound smoked kielbasa or Polish sausage, cut into 1/4-inch slices
1 cup ketchup
1/3 to 1/2 cup packed brown sugar
2 tablespoons Worcestershire sauce
Hot cooked rice, optional

Steps:

  • In a large skillet, saute onion in butter until tender. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 3 minutes or until sauce is slightly thickened, stirring occasionally. If desired, serve over rice.

1/2 cup apricot jam
2 tablespoons cider vinegar
1 tablespoon tomato paste
2 tablespoons olive oil, plus more for grill
Coarse salt and ground pepper
1 1/2 pounds (about 1 1/2 inches each) pork tenderloin, halved lengthwise and cut into 16 cubes
1 medium red onion, cut into 8 wedges
1 Granny Smith apple, peeled and cut into 8 wedges

Steps:

  • Heat grill to medium-high. Make the sauce: In a large bowl, combine jam, vinegar, tomato paste, and 1 tablespoon oil. Season with salt and pepper. Set aside.
  • Assemble 4 long skewers, alternating 4 pork cubes with 2 onion wedges and 2 apple wedges on each (begin with pork and end with apple). Roll skewers in remaining tablespoon oil. Season with salt and pepper.
  • Lightly oil grates. Place skewers on grill; cover grill, and cook, turning occasionally, until grill marks are visible, 6 to 8 minutes.

1 tablespoon cornstarch
2/3 cup apple juice
1/4 cup cider vinegar
1 teaspoon orange zest

1 cup pineapple chunk

Steps:

I like to serve this with rice and steamed broccoli.

1 lb kielbasa, cut into 24-30 pieces
18 whole mushrooms
1 large green bell pepper, cubed large
1 large zucchini, halved lengthwise and cut into 1-inch pieces
1 (16 ounce) can pineapple chunks (or fresh)
6 tablespoons olive oil or 6 tablespoons canola oil
3 1/2 teaspoons Dijon mustard or 3 1/2 teaspoons spicy brown mustard
1 teaspoon lemon juice

  • Preheat grill or broiler to high.

1 Tbsp cider vinegar
1 Tbsp tomato paste
1 tsp olive oil
1/4 tsp montreal seasoned salt with garlic
KABOBS:
6 oz polska kielbasa, cut into 1-inch cubes
1/2 small red onion, peeled, quartered (wedges)
1/2 large golden delicious apple, cored, quartered (wedges)

Steps:

  • 1. Heat grill to medium-high. Make sauce: combine the jam, vinegar, tomato paste, oil and seasoned salt in a pyrex measure (or bowl with handle).
  • 2. Assemble long metal skewers, each with apple wedge; sausage (thru skin), onion wedge; sausage; onion; sausage; apple.
  • 3. Lightly oil grates on the grill. Place skewers on grill; cover grill, and cook, turning every 2 minutes, until grill marks are visible, about 8 minutes (or less).
