"My mother would make a batch of sauce on Saturday, buy the ham, and after church on Sunday, our hungry family would be able to have a fast meal," she writes.

1 cup plus 2 tablespoons chili sauce
3/4 cup packed brown sugar
1/2 cup plus 1 tablespoon water
3/4 teaspoon prepared mustard
1/4 to 1/2 teaspoon chili powder
1/8 teaspoon ground cloves
1-1/2 pounds shaved fully cooked ham
6 hamburger buns, split and toasted

Steps:

  • In a large saucepan, combine the first six ingredients. Cook, uncovered, over low heat for 15 minutes. Stir in ham; heat through. Using a slotted spoon, serve on buns.

1 cup cubed cooked ham
1 medium onion, diced
1/2 cup catsup
1 tablespoon Worcestershire sauce

1 dash hot sauce

Steps:

  • Heat beans, salt, and water to boiling; Cover; simmer 1 hour.
  • Drain; reserve liquid.

1 cup unsweetened pineapple juice
1/4 cup brown sugar
2 tablespoons lemon juice
1 teaspoon onion salt
2 teaspoons soy sauce
2 slices smoked ham
1 (8 ounce) can pineapple slices

Steps:

  • Combine first 6 ingredients in a medium saucepan, stirring well and bring to a boil.
  • Reduce heat, and simmer, uncovered, 5 minutes; stir frequently.
  • Remove sauce from heat, and set aside.
  • Trim excess fat from ham slices.
  • Grill over medium coals 20 to 25 minutes or until desired degree of doneness.
  • Turn ham slices and baste every 5 minutes with reserved sauce.
  • Grill pineapple slices over medium coals 1 minute on each side.
  • Garnish ham with pineapple, and serve with remaining sauce.
  • Variation Use orange juice and lime juice instead of pineapple juice and lemon juice.

1 bone-in smoked ham.
2 large handfuls pecan or apple wood chips, soaked in water for at least 30 minutes.
Glaze
3/4 cup fresh orange juice
1/2 cup chili sauce
1/3 cup cider vinegar
2 tablespoons brown sugar
1 tablespoon dijon mustard
1 tablespoon soy sauce
1/2 teaspoon freshly ground black pepper

Steps:

  • Ham at room temp. 1 hour. Use charcoal grill or gas grill. Preheat gas grill to 500 the use indirect heat at 300 - 350. Wood chips in smoker box. Ham goes flat side down in 13x9 pan. Put on grill, add 1 cup water to pan. Cook for about 1 hour. Combine glaze ingredients and simmer 5 - 10 minutes, until about 1 cup remains. After 1 hour, begin brushing top surface of ham. Add water if needed. Continue cooking and glazing until the internal temp is 135. Total cooking time is 1-1/4 to 2 hours (about 10 minutes per pound). If ham gets too dark, cover with tin foil and stop glazing. Remove ham and allow to rest for 15 - 20 minutes.

2 3/4 lb slice fully cooked ham (about 1 inch thick)
1/2 c ginger ale
1/2 c orange juice
1/4 c firmly packed brown sugar
3 Tbsp white wine vinegar
1 tsp dry mustard
1 tsp vegetable oil
1/4 tsp ground ginger
1/8 tsp ground cloves

Steps:

  • 1. Score the fat on the ham slice. Place the ham slice in a large shallow dish.
  • 2. Combine the ginger ale and remaining ingredients; stir well. Pour the marinade mixture over the ham slice. Cover and marinate in the refrigerator for 8 hours, turning once.
  • 3. Remove the ham slice from the marinade, reserving the marinade.
  • 4. Grill, covered, over medium coals for 8 to 10 minutes on each side. Make sure your coals are not too hot!. Baste the ham slice frequently with the reserved marinade.
