GRILLED SPARE RIBS WITH BARBECUE SAUCE

Wrapped in foil, the spiced ribs oven-cook in intense heat; the foil locks in their moisture for supremely tender results. On with the sauce and over to the grill, and they're ready.

2 slabs pork spare ribs (2 1/2 pounds each)
2 tablespoons chili powder
Coarse salt and ground pepper
1 tablespoon butter
1/2 small onion, grated
2 garlic cloves, minced
1 1/2 cups ketchup
1/3 cup cider vinegar
2 tablespoons Worcestershire sauce
1/4 teaspoon cayenne pepper
Oil, for grates

Steps:

  • Preheat oven to 400 degrees. Season ribs with chili powder, salt, and pepper. Stack slabs on a double layer of aluminum foil; wrap tightly. Place on a rimmed baking sheet. Cook until meat is fork-tender, 1 1/2 to 2 hours.
  • Meanwhile, make barbecue sauce: In a medium saucepan, melt butter over medium heat. Add onion and garlic; season with salt and pepper. Cook until soft, 2 to 3 minutes. Add ketchup, vinegar, Worcestershire, cayenne, and desired variation (see below). Bring to a simmer. Cook, stirring occasionally, until slightly thick, about 5 minutes. Set aside.
  • Heat grill to medium-high; lightly oil grates. Carefully remove ribs from foil, pouring off any accumulated liquid. Brush ribs generously with sauce; grill until charred, 2 to 3 minutes per side. Serve with extra sauce, if desired.

KOREAN BBQ SHORT RIBS (GAL-BI)

This is a easy way to make Korean BBQ. You can also substitute chicken breast or sliced rib-eye for the short ribs. If you use chicken or rib-eye, you must add thinly sliced green onion tops. This can also be broiled in the oven for the same amount of time.

¾ cup water
3 tablespoons white vinegar
¼ cup dark brown sugar
2 tablespoons white sugar

3 pounds Korean-style short ribs (beef chuck flanken, cut 1/3 to 1/2 inch thick across bones)

Steps:

  • Pour soy sauce, water, and vinegar into a large, non-metallic bowl. Whisk in brown sugar, white sugar, pepper, sesame oil, garlic, and onion until the sugars have dissolved. Submerge the ribs in this marinade, and cover with plastic wrap. Refrigerate 7 to 12 hours; the longer, the better.
  • Preheat an outdoor grill for medium-high heat.
  • Remove ribs from the marinade, shake off excess, and discard the marinade. Cook on preheated grill until the meat is no longer pink, 5 to 7 minutes per side.

12 cups barbecue sauce, plus more for basting and serving
9 racks baby-back ribs (each 7 ribs), cut into 3- and 4-rib sections
3 whole chickens (4 pounds each), each cut into 6 pieces

Steps:

  • Heat ovens to 325 degrees and 350 degrees. Coat the bottoms of two large roasting pans with enough sauce to cover. Add chicken to one pan and ribs to the other. Coat chicken and ribs with remaining sauce.
  • Bake ribs at 325 degrees until cooked through, about 1 hour. Bake chicken at 350 degrees until cooked through, 1 1/4 to 1 1/2 hours.
  • Prepare a charcoal or gas grill. Place chicken and ribs on grill, discarding remaining sauce in roasting pans. Grill chicken and ribs, turning and basting frequently with more sauce until well browned and heated through, 10 to 15 minutes.
  • In a small saucepan heat sauce to serve with chicken and sauce.

BARBECUE SAUCE FOR CHOPS, WINGS, SPARERIBS

Another favorite 1960 recipe from one of my old recipe cards. A great basic barbecue sauce for pork chops, chicken wings, or spareribs using ingredients readily available in most pantries. No precooking of the sauce is required but you can simmer it for 10 to 15 minutes if you like. Or, just mix the sauce ingredients together, pour over the meat, and bake. Adjust seasonings to taste. You can add garlic powder or minced garlic if you like. A good make ahead for next day barbecue.

pork chop, chicken wings, spareribs
1/2 cup brown sugar
1/2 cup ketchup
1/4 cup vinegar
1 tablespoon Worcestershire sauce
1/2 teaspoon chili powder (to taste)
1 dash celery salt
garlic powder (optional) or garlic clove, minced (optional)
1 small onion, chopped
1 cup cold water
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Trim excess fat from pork chops, remove tips from chicken wings, cut spareribs into serving pieces.
  • There should be enough meat to cover the bottom of 9"x13" pan in a single layer.
  • Even though precooking of the meat is not required, I usually parboil spareribs to get rid of excess fat, and brown pork chops, drain the fat, and deglaze the browning pan with some of the sauce.
  • Combine all the sauce ingredients.
  • Simmer for 10 to 15 minutes (optional).
  • Pour sauce over chops, wings, or ribs.
  • Bake at 350 degrees Fahrenheit for 75 to 90 minutes or until meat is tender and thoroughly cooked.
  • Baking time will depend on quantity, type of meat, and thickness.
  • Baste occasionally and turn over at least once.
  • Place meat on a serving dish.
  • Pour balance of sauce into a bowl.
  • Skim off any excess grease, or chill the sauce to allow the fat to solidify on top so it will be easier to remove.

1 medium onion, quartered
2 teaspoons salt
1/4 teaspoon pepper
SAUCE:
1/2 cup packed brown sugar
1/2 cup cider vinegar
1/2 cup ketchup
1/4 cup Worcestershire sauce
1/4 cup chili sauce
2 tablespoons chopped onion
1 tablespoon lemon juice
1/2 teaspoon ground mustard
1 garlic clove, minced
Dash cayenne pepper

Steps:

  • In a Dutch oven, place ribs and onion; sprinkle with salt and pepper. Add enough water to cover ribs; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours or until meat is tender; drain. , Meanwhile, in a small saucepan, combine sauce ingredients. Simmer, uncovered, for 1 hour or until slightly thickened, stirring occasionally. , Arrange ribs on a rack in a broiler pan. Brush with sauce. Broil 5 in. from the heat for 5 minutes on each side, brushing frequently with sauce.

1/2 medium onion, chopped
2 garlic cloves, pressed or minced
1/2 cup beef broth or 1/2 cup chicken broth
1 tablespoon garlic red wine vinegar
1 tablespoon Worcestershire sauce
1 cup chili sauce (your favorite)
1/2 cup molasses
1/4 cup lemon juice
6 tablespoons brown sugar
1/2 teaspoon sweet paprika or 1/2 teaspoon hot Hungarian paprika
salt & fresh ground pepper, to taste
4 -6 chicken breasts, skinned, boned and cut into thirds or fourths
8 medium country-style pork ribs

Steps:

  • In a medium-size Dutch oven-type pan, heat the oil over a medium heat, then add the onion and garlic and saute until onion is transparent.
  • Add all of the remaining ingredients, except the chicken and ribs.
  • Reduce the heat to low, cover lightly and let the mixture simmer about 30 minutes, stirring occasionally.
  • Arrange the chicken and ribs in a shallow baking dish (9 X 13 inch), then pour the cooked sauce over all.
