Hearty Slow Cooker Cowboy Beans loaded with beef, kielbasa, bacon, and beans slow-cooked in a bbq and molasses sauce. It can be served as a side dish or main course. Perfect for BBQs or Pot Lucks. This is our most requested crockpot recipes we make.

1 lbs ground beef
1 medium size onion (diced)
1/2 lb bacon (diced)
2 pack beef kielbasa (sliced into coins)
1/3 cup brown sugar
1/2 cup white sugar
1/4 cup molasses
2 tbsp yellow mustard
1/4 cup ketchup
1/4 cup barbeque sauce (use your favorite tomato-based bbq sauce. We use Sweet Baby Ray's Original.)
1/2 tsp salt
1/2 tsp pepper
3 lbs Pork & Beans (do not drain)
15.5 oz kidney beans (drained and rinsed)
15.25 oz lima beans

Steps:

  • Cook ground beef and onion in a skillet and drain. Place in slow cooker.
  • In the same skillet cook the bacon; drain and add to your slow cooker.
  • In the same skillet cook the kielbasa until the edges are browned. Do not drain. Add to your slow cooker.
  • Add the remaining ingredients; stir until mixed through.
  • Set your slow cooker to High and cook for 4 to 5 hours.

This is definitely one for those nights when you don't have much time to prepare dinner. It needs to bake for one hour but it's so fast to put together, that you could get it ready in the morning, and refrigerate until you get home, then just pop it in the oven. Very delicious and amazingly easy, what more could you ask for? From Heirloom Recipes, submitted my M.R. She suggests 2 pounds of kielbasa for 6 servings. I cut it down to one pound for us, but followed the rest of the recipe to have a fair amount of beans for a side dish. She also says you can make this in a slow cooker.

2 lbs kielbasa, cut into 1/2 inch slices
2 (15 ounce) cans great northern beans, drained and rinsed
1 (28 ounce) can crushed tomatoes
1/2 large Spanish onion, chopped
1/2 cup molasses
1/2 cup brown sugar
3 -4 garlic cloves, minced

Steps:

  • Heat oven to 350°.
  • Grease a 3 quart casserole dish.
  • Mix all ingredients in a large bowl.
  • Pour into prepared pan, cover and bake for 1 hour.

1 tablespoon butter
2 teaspoons vegetable oil
1 pound smoked kielbasa or Polish sausage, cut into 1/8-inch slices

Steps:

3 cups low-sodium chicken broth
1/3 cup tomato paste
1/3 cup packed light brown sugar
3 tablespoons molasses
3 tablespoons honey mustard
2 tablespoons barbecue seasoning blend
4 cloves garlic, chopped
1 pound dry navy beans, rinsed and picked over
2 cloves
1 small onion, halved
1 1/2 pounds chicken-apple sausages, each halved lengthwise
2 tablespoons cider vinegar
1 tablespoon Worcestershire sauce
Pickled peppers, sliced scallions and/or sour cream, for garnish (optional)

Steps:

  • Whisk the broth, 3 cups water, tomato paste, brown sugar, molasses, mustard, barbecue seasoning and garlic in a slow cooker. Add the beans. Push a clove into each onion half; tuck the onions and sausages into the beans in the slow cooker. Cover and cook on high until the beans are tender, about 6 hours.
  • Discard the onion halves. Stir in the vinegar and Worcestershire sauce, then let the mixture sit, uncovered, about 15 minutes. (The longer the beans sit, the more flavorful they will be.) Garnish with pickled peppers, scallions and/or sour cream, if desired.

I received the basic recipe from a co-worker and then tweaked it by adding my favorite ingredients. The end result quickly became a family favorite.

2 can(s) (28 oz each) bush's baked beans - drained
1 lb kielbasa - cut into bite sized pieces
1 small onion - finely diced
1 small green bell pepper - finely diced
1 Tbsp honey
1/2 Tbsp prepared mustard
1/2 Tbsp worcestershire sauce
1/4 tsp liquid smoke
1/4 - 1/2 c brown sugar - packed
1 bottle bbq sauce

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Add the onions & bell pepper to a small sauté pan with a small amount of vegetable oil. Heat until the onions are almost transparent. Transfer to a large mixing bowl.
  • 3. Add the remaining ingredients to the bowl, except the kielbasa, and adjust the amounts to your taste. Add the kielbasa and stir to combine.
  • 4. Pour the mixture into a baking dish. Bake for an hour, or until heated through and the sauce is thick. VARIATION: Substitute 1 pound of ground beef for the kielbasa. Cook the onions & peppers with the ground beef. Drain before adding to the bean mixture.
