ONE-POT BBQ CHICKEN AND RICE



One-Pot BBQ Chicken and Rice image

Weeknights are now made easier with this one-pot bbq chicken and rice dish that has loads of flavor and comes together super easily!

Number Of Ingredients 12

1 cup your favorite BBQ sauce ((see notes below))
1 tablespoon olive oil
6 boneless, skinless chicken thighs
1 medium onion (diced)
2 cloves garlic (minced)
2/3 cups frozen corn (thawed)
15 ounce can black beans (drained and rinsed)
3/4 cup short-grain white rice (NOT quick/minute rice)
3 cups chicken stock
1 cup freshly shredded colby jack cheese
Salt and pepper (to taste)
Avocado, diced tomatoes, and parsley or cilantro, for topping

Steps:

  • In a large deep skillet or pot, add olive oil and place over medium-high heat. Season chicken thighs with salt and pepper then brown chicken on both sides. Using a pastry brush, brush a generous amount of BBQ sauce onto the chicken on both sides while it is browning. Remove chicken from skillet once halfway cooked through, about 3-4 minutes. Set aside on a plate.
  • In the same skillet, add onion and garlic. Cook until softened then add corn and black beans. Toss to incorporate. Add the rice to the skillet and gently "toast" it for a couple minutes.
  • Carefully pour the chicken stock in the skillet and add the remaining BBQ sauce into the skillet. Stir to incorporate completely. Season with salt and pepper.
  • Bring to a boil and then reduce to a medium-low heat. Place chicken back into skillet and nestled into the rice and liquid. Cook covered for 30 minutes, or until rice is completely cooked through.
  • Add cheese on top and cover skillet to melt. Once cheese has melted, remove skillet from heat and top with avocado, diced tomato, and parsley or cilantro, if desired.

12 skinless chicken thighs
4 tablespoons barbecue sauce
2 tablespoons clear honey
2 tablespoons oyster sauce
2 tablespoons olive oil
4 garlic cloves, finely chopped
8 ounces long-grain white rice
salt & freshly ground black pepper
2 tablespoons peanut oil
3 1/2 ounces frozen peas, cooked and drained
4 eggs

Steps:

  • Mix together the chicken thighs, barbecue sauce, honey, oyster sauce, olive oil and 2 cloves chopped garlic. Cover and marinate in the fridge for 2-4 hours.
  • Preheat the oven to 375°F Transfer the marinated chicken to a roasting tin.
  • Roast in the oven for 40 minutes, turning now and then, until the chicken is cooked through.
  • Meanwhile, rinse the rice to wash out excess starch. Place in a medium-sized heavy saucepan. Add 1 1/4 cups water and season with salt.
  • Bring to the boil, reduce heat, cover tightly and simmer over a very low heat for 15 minutes until the water has been absorbed and the rice is tender.
  • Spread the rice out on a large plate to cool.
  • Heat a wok until very hot. Add the oil and heat through. Add the garlic and stir-fry for one minute.
  • Add the cooled rice and mix thoroughly with the garlic.
  • Crack the eggs into the rice and add the cooked peas. Stir-fry until the eggs are cooked. Season with salt and pepper.
  • Serve the barbecue chicken with the fried rice.

4 eggs
1/2 cup water
3/4 cup milk
3 tablespoons garlic salt
3 tablespoons black pepper
5 cups all-purpose flour
1 tablespoon onion powder
1 tablespoon mesquite seasoning
2-3 cups oil for frying, or as needed
1 4-pound chicken, cut into pieces
Nonstick cooking spray
1 cup (8 ounces) favorite barbecue sauce
1 can (22 ounces) BUSH'S® Bourbon and Brown Sugar Grillin' Beans

Steps:

  • An American classic with a little twist from below the South, this crisp and smoky chicken is sure to become a barbecue favorite.
  • In a large bowl, whisk together the eggs, water, milk, 2 tablespoons of garlic salt and 2 tablespoons of pepper until smooth.
  • In a large flat pan stir together the flour, remaining tablespoons of garlic salt, pepper, onion powder and mesquite seasoning.
  • Fill a large heavy skillet or wok halfway full with oil and heat over medium-high heat to 365 degrees Fahrenheit on the barbecue grill or side burner. Use tongs to dip each chicken piece into the egg mixture, then into the flour mixture, back into the egg mixture and back into the flour mixture again. Set on a platter until all pieces are coated.
  • Cook the chicken in batches, do not overcrowd the skillet. Brown on each side.
  • Coat a large baking dish generously with nonstick cooking spray then arrange the fried chicken pieces in the pan. Pour the barbecue sauce over the chicken.
  • Bake in the oven at 365 degrees Fahrenheit for 10-15 minutes in the barbecue sauce, until the sauce has bubbled and caramelized and a meat thermometer inserted into the thickest part of the chicken breast has reached an internal temperature of 165 degrees Fahrenheit.
  • Serve with one can (22 ounces) BUSH'S® Bourbon and Brown Sugar Grillin' Beans.

3 pounds skinless, boneless chicken breast halves - cut into strips
3 eggs
1 cup water
½ cup milk
2 tablespoons salt
2 tablespoons black pepper
6 cups all-purpose flour
¼ cup salt
5 teaspoons black pepper
2 tablespoons minced garlic
2 tablespoons dry mesquite flavored seasoning mix
4 cups oil for frying, or as needed
1 teaspoon butter
1 (12 ounce) bottle barbecue sauce

Steps:

  • In a large bowl, whisk together the eggs, water, milk, 2 tablespoons salt, and 2 tablespoons pepper with a fork until smooth. In another large bowl, stir together the flour, 1/4 cup salt, 5 teaspoons pepper, garlic, and mesquite seasoning.
  • Fill a large heavy skillet or wok halfway full with oil. Heat to 365 degrees F (180 degrees C). Use a fork to pick up one chicken strip at a time, and dip it into the egg mixture, then into the flour mixture, back into the egg mixture, and into the flour mixture again. Place coated strips into the hot oil to fry. Do not over crowd, just cook in batches. Once chicken is browned on one side, flip over, and brown on the other side.
  • Preheat the oven to 300 degrees F (150 degrees C). Butter one 12x20 inch glass baking dish, or two 9x13 inch baking dishes. Pour enough barbeque sauce into the dish to coat the bottom. Arrange fried chicken strips in rows in the prepared dish. Pour remaining sauce over the top.
  • Bake for 10 to 15 minutes in the preheated oven, until the sauce is caramelized onto the chicken.

1 tablespoon butter
1 cup ketchup

½ onion, chopped
1 red bell pepper, chopped

2 cups water
1 tablespoon buttery spread
1 cup frozen corn kernels, thawed, or fresh corn kernels
1 green onion (green tops only), sliced

Steps:

  • Heat olive oil in a large skillet over medium high heat. When oil is hot, add the onions and red peppers and cook and stir until the onion becomes translucent, about 2 minutes. Season the chicken with salt and pepper and add to the skillet. Saute until it begins to brown, 2 to 4 minutes. Add the BBQ sauce and stir until combined. Transfer mixture to a bowl.

Chile Fried Rice With BBQ Chicken image

This is a great after work fast meal as I just buy a whole barbecued chicken on my way home from work and use quick cooking rice. So you end up with a tasty meal with fresh vegetables cooked up in no time at all. I have listed the vegetables I used in this dish, as this is what I had left in the fridge that needed using up, so you can change vegetables and quantities. I usually make this with broccolini but I had some broccoli florets to use up so I used them instead.

1 barbecued chicken, shredded
2 tablespoons peanut oil (divided use)
4 eggs, beaten lightly
1 onion, sliced thinly
3 garlic cloves, crushed
2 fresh red chilies, sliced thinly, add as many seeds as you like
7 broccoli florets, chopped
120 g shiitake mushrooms, sliced thinly
1 carrot, chopped finely (80g)
90 g snow peas, trimmed
3 green onions, sliced thinly
3 cups cooked rice, white long grain rice
2 tablespoons light soy sauce
3 tablespoons hoisin sauce (I use blue dragon brand.)
1 1/2 tablespoons ketjap manis (Sweet soy sauce)

Steps:

  • Heat 2 Teaspoon of peanut oil in a wok, add half the egg mixture, swirl to make a thin omelette. Remove omelette from wok, roll up then cut into thin strips. Repeat process using another 2 teaspoons of oil and remaining egg.
  • Heat the remaining oil in wok, stir fry onion, garlic and chili, until onion softens, add broccoli, mushrooms and carrot, stir fry 1 miunte.
  • Add sauces, snow peas, green onion, chicken and rice, stir-fry until vegetables are just tender and the dish is hot, add omelette, toss gently.
  • Serve immediately.
