Top banana crisp with whipped cream for a tempting baked dessert.

3 cups sliced bananas (4 medium)
1/3 cup packed brown sugar
2 tablespoons butter, melted
1 tablespoon cornstarch
1 tablespoon dark rum
3/4 cup Gold Medal™ all-purpose flour
1/2 cup packed brown sugar
1/8 teaspoon salt
1/3 cup butter, softened
1/3 cup chopped pecans
Sweetened whipped cream, if desired
Fresh mint leaves, if desired

Steps:

  • Heat oven to 400°F. Spray 4 (8- to 10-oz) individual baking dishes (ramekins) or custard cups with cooking spray.
  • In medium bowl, mix bananas, 1/3 cup brown sugar, the melted butter, cornstarch and rum. Divide mixture evenly among baking dishes. Place dishes on cookie sheet.
  • In small bowl, mix flour, 1/2 cup brown sugar and the salt. Stir in softened butter, using fork or fingers, until mixture is crumbly. Stir in pecans. Sprinkle evenly over banana mixture.
  • Bake 23 to 25 minutes or until filling is bubbly and topping is golden brown. Let stand 10 minutes. Serve warm with whipped cream. Garnish with mint.

3/4 cup(s) packed dark brown sugar, divided
6 tablespoon(s) butter, divided
3 tablespoon(s) dark rum
1/2 teaspoon(s) ground cinnamon
1/4 teaspoon(s) grated nutmeg
8 medium bananas (firm, yellow, no spots), cut into 1/2 inch slices (about 6 cups)
1/2 cup(s) all purpose flour
1/2 cup(s) chopped pecans
1/4 teaspoon(s) salt
- vanilla ice cream (optional)

Steps:

  • Place oven rack in lower-middle position. Preheat oven to 375F. Spray 8 inch round or square baking dish with nonstick cooking spray.
  • Combine 1/2 cup brown sugar and 2 tablespoons butter in small saucepan; cook and stir over medium heat about 3 minutes or until butter has melted and sugar has dissolved. Add rum, cinnamon, and nutmeg; cook 1 minute, stirring constantly. Pour mixture into large bowl. Add bananas; toss to coat. Spoon into prepared baking dish.
  • Combine flour, pecans, remaining 1/4 cup brown sugar, and salt in medium bowl; mix well. Cut remaining 4 tablespoons butter into small pieces. Add to flour mixture; mix with fingertips until mixture forms coarse crumbs. Sprinkle over banana mixture.
  • Bake 40 minutes or until filling is bubbly and topping is golden brown. Let stand 1 hour before serving. Serve warm with ice cream, if desired.
