3 tablespoons Gold Medal™ all-purpose flour
3 tablespoons sugar
1/2 teaspoon ground cinnamon
1 tablespoon butter, cut into pieces
4 very ripe bananas, mashed
6 tablespoons butter, melted, cooled to room temperature
1 cup sugar
1 egg
1 teaspoon vanilla
1/4 cup milk
1 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
1/2 teaspoon ground cinnamon

Steps:

  • Heat oven to 350°F. Lightly spray 9x5-inch loaf pan with cooking spray.
  • In small bowl, stir together Streusel ingredients except butter. Pinch pieces of butter into flour mixture until crumbly and looks like wet sand. Refrigerate.
  • In large bowl, mix mashed bananas, melted and cooled butter, 1 cup sugar, the egg, milk and vanilla to combine. In another small bowl, stir together 1 1/2 cups flour, the baking powder, salt and 1/2 teaspoon cinnamon. Fold banana mixture into flour mixture just until combined, taking care not to over mix. Spread batter in loaf pan, smoothing top. Sprinkle streusel evenly over top.
  • Bake in center of oven about 1 hour or until toothpick inserted in center comes out clean. Cool in pan on cooling rack 5 minutes. Remove from pan; cool at least 15 minutes before slicing.

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1 cup mashed banana (3 small overripe ones)
2 eggs
1/3 cup sugar
1/16 cup butter, melted
1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1/16 cup butter, softened
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon

Steps:

  • Heat oven to 350°F; grease three (3) 5 3/4 X 3 1/4 x 2 inch disposable mini-loaf pans (2 8 1/2 X 4 1/2 loaf pans can be used as well).
  • Mix together flour, baking powder, baking soda, salt, nutmeg, and cinnamon in a bowl.
  • Beat bananas, eggs, sugar and butter in a large bowl until smooth.
  • On low speed, gradually beat in flour mixture.
  • Divide among the prepared pans.
  • Streusel: Mix flour, sugar, butter, nutmeg and cinnamon in bowl with a fork until crumbly.
  • Sprinkle evenly over batter.
  • Bake in 350°F oven 30 minutes or until a wooden toothpick inserted in the middle comes out clean.
  • If streusel is browning too quickly, cover loosely with foil.
  • Cool cakes in pan on wire rack for 10 minutes.
  • Remove cakes from pans to racks to cool completely.

½ cup all-purpose flour
¼ cup packed brown sugar

½ cup quick cooking oats
1 ¼ cups white sugar

½ cup buttermilk
1 teaspoon vanilla extract

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease 2 loaf pans, 8 1/2 x 4 1/2 inches.
  • To make the streusel topping, mix 1/4 cup of cut-up butter, 1/2 cup flour, brown sugar, 1 teaspoon cinnamon, and oats in a bowl until crumbly. Set aside.
  • Cream the sugar and butter together in a bowl, and stir in the eggs. Add the bananas, buttermilk, and vanilla extract, and stir until the mixture is well blended. Beat in the flour, pumpkin pie spice, baking powder, cinnamon, and nuts.
  • Scoop the batter into the prepared loaf pans. Sprinkle the top of each loaf with half the streusel topping.
  • Bake in the preheated oven for 1 hour and 15 minutes, until the loaves have risen and the topping is browned. Let the banana bread cool in the pans for 5 minutes before turning out onto a wire rack to finish cooling.

I have made this many times for neighborhood gifts. Seems to be very well appreciated. I got this recipe from the Southern Living Christmas book. It also goes over very well at a breakfast get together. This is the most awesome banana bread I have ever tried because of the topping.....

1/2 cup firmly packed light brown sugar
7 tablespoons uncooked Quaker Oats
1/3 cup flour
1/3 cup cold butter or 1/3 cup margarine, cut into pieces
2 small ripe bananas, mashed (1 cup)
2 large eggs
1/2 cup sugar
1/3 cup butter or 1/3 cup margarine, melted
1 1/2 cups flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 cup chopped pecans, toasted (I use any nuts and don't toast them)
1 teaspoon vanilla

Steps:

  • Combine first three ingredients for streusel topping.
  • Cut in butter with a pastry blender until crumbly.
  • Chill streusel.
  • Beat banana and next 3 ingredients in a large mixing bowl just until smooth.
  • Don't overmix.
  • Combine dry ingredients.
  • Add to banana mixture
  • Stir just until moistened.
  • Stir in pecans and vanilla.
  • Spoon batter into (3) (5-3/4 x 3-1/4 inch) greased disposable mini loaf pans or Can use regular size loaf pans but will only make 2.
  • Sprinkle each loaf evenly with streusel topping.
  • Bake at 350 for 35 min or until knife comes out fairly clean.
  • Cool in pans on wire rack 5 minute Remove and continue to cool on wire rack.
  • You can put back in pans for gift giving.
  • (I omit the step of taking out of pans and it has worked out fine).

  • 1. Preheat oven to 350. In a small bowl, gently mix blueberries with 1 tbsp of flour.
  • 2. In another bowl, blend remaining 2 cups of flour, sugar, baking powder, baking soda, salt, and cinnamon.
  • 3. In a large bowl, whisk mashed bananas, buttermilk, butter, and egg to blend.
  • 4. Stir flour mixture into banana mixture just until evenly moistened, the batter will be stiff.

1/2 c margarine, softened
1 pkg 8 oz. cream cheese, softened
1 1/4 c white sugar
2 eggs
1 c mashed bananas, (about 3 bananas)
1 tsp vanilla extract
2 1/4 c all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
ICING
1/4 c hot water
2 c confectioners' sugar
1/4 c butter, softened
1 tsp vanilla extract
STREUSEL
1 c all purpose flour
2 tsp cinnamon
1 c brown sugar, lightly packed
8 Tbsp unsalted butter, softened, cut into 1/2

Steps:

  • 1. Cream the butter or margarine and cream cheese together. Gradually add the white sugar, and continue beating until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the mashed bananas and vanilla. Add flour, baking powder, and soda; mix until batter is just moist.
  • 2. For the center and topping, in a medium bowl, stir together the flour, cinnamon, and brown sugar. Add the butter pieces and combine the mixture with a fork until the topping resembles coarse crumbs. Set aside.
  • 3. Divide 1/2 batter into two greased and floured 8x4 inch loaf pans. Sprinkle 1/2 struesel mixture over batter in pans, and top with remaining batter.
  • 4. Bake at 350 degrees F (175 degrees C) for 45 minutes, or until an inserted toothpick comes out clean.
  • 5. After bread has cooled somewhat, invert onto the dish of your choice.
  • 6. In a medium sized bowl, combine the vanilla and sugar. Slowly blend in the butter and mix until well blended. Add water to the sugar mixture slowly. The best way is to add a tablespoon at a time, mixing it together after each tablespoon of water. Only use enough water to create a slightly runny consistency. It should be thin enough to spread but not too thin where it runs off the bread and does not cling to it. Sometimes you will need to use more than 1/4 cup and sometimes you won't need as much. Never use more than ½ cup of water. Drizzle over the bread when it is still warm (not hot).
  • 7. Take remaining struesel and sprinkle lightly over the top of the glaze to your desire. Enjoy!

3 bananas
1/2 c butter, softened (1 stick)
1 c sugar
1/2 tsp salt (preferably nature's first)
2 eggs
2 c flour
1 tsp baking soda
2 c walnuts, chopped
TOPPING
6 Tbsp unsalted butter, cold
3/4 c flour
6 Tbsp packed brown sugar
1 tsp cinnamon

Steps:

  • 1. Preheat oven to 325.
  • 2. In large mixing bowl mash bananas with a potato masher (or a fork if you don't have a masher). Add in the butter, sugar, salt and eggs; fully incorporate after each ingredient addition.
  • 3. In small bowl blend the flour and baking soda. Add to the wet mixture and beat until just about blended, still a little dry parts showing.
  • 4. Add walnuts and finish mixing. Divide batter into 2 8 inch loaf pans and set aside.
  • 5. Wipe out the bowl used for the flour mixture...Place all topping ingredients and mix well. You can use two knives, a fork or a pastry blender. I prefer to use my hands to fully mix everything up.
  • 6. Dived topping and crumble the topping over the batter and pat down slightly, cover whole loaf.
  • 7. Bake for 1 hour. Do not over bake. Check for done-ness with a toothpick at center at 1 hour.

What is not to love about a banana bread with Werther's chewy caramels in the recipe....going to try this soon. YUM... As of 1/3/2012 I added my own pictures and a few changes to a *second loaf. ~~When making this today I made two loaves...one using all the ingredients as shown in directions. The second loaf (also shown in pictures above) I used Kraft Caramel bits...and they are delicious in this recipe, in fact, I think I prefer them more. Please see my note in the directions Section # 5, it will explain more in what I did with the second loaf.

2 - large ripe bananas, mashed
2 - large eggs, lightly beaten
1/2 cup(s) unsalted butter, melted and cooled
1/3 cup(s) coffee flavored yogurt ... or *** vanilla yogurt
1 teaspoon(s) pure vanilla extract

Steps:

  • Preheat oven to 350 degrees F and place rack in the center of the oven. Butter (or spray with a non stick veg. spray) the bottom and sides of 9X5X3 inch pan. Set Aside. *If using a dark colored bread pan adjust the time and oven temp (I usually bake at 5 degrees lower than recipe calls for)...dark coated pans have a tendency to cook and brown the edges faster, so watch carefully when using them. I prefer glass or metal.
  • In a large bowl combine the flour, sugar, baking powder, baking soda, and salt..along with 2/3 cup of the pecans, and half of the chopped caramel candies. *Regarding chopping Werther's caramels. It is much work to chop them, I used my kitchen scissors and snipped away, worked better than a knife. See picture.
  • In a medium sized bowl combine the mashed bananas, eggs, melted butter, yogurt, and vanilla. With a rubber spatula, lightly fold the wet ingredients (banana mixture) into the dry ingredients until just combined and the batter is thick and chunky. DO NOT over mix the batter. Over mixing can cause bread to be tough and rubbery. Scrape the batter into the prepared pan and sprinkle remaining 1/3 cup of pecans and chopped caramels over the top of the batter. Bake until bread is golden brown and toothpick inserted in the center comes out clean, 50-60 minutes. Place on a rack to cool slightly, and then remove the bread from the pan. Serve warm or at room temperature.
  • Makes one - 9 inch loaf.
  • * As I noted above I decided to make a 2nd loaf, since I had the Caramel bits from Kraft I wanted to try them instead of chopping up a second bag of Werther's caramels. The werther's bread is very good..delicious, BUT..so is the second loaf I made with the Kraft Caramel bits. If you want to use the caramel bits by kraft then I suggest you use the items I have listed above with the Aesteriks by them. *Instead of 1 cups of chopped pecans, I used 1/2 cup in the second loaf, and only put it on the top of the bread, NOT in the bread itself. **Instead of using the Werther's caramel I used 3/4 cup kraft caramel bits, I did NOT cut them, I left them just as they come out of the package. You will add about 1/2 to the batter, and 1/4 cup to the topping along with the pecans. ***Instead of using the coffee yogurt, I used vanilla...and this made a difference with the caramel flavor that comes through with using the kraft bits. The bread itself is lighter in color and you can taste the banana flavor more when using vanilla. See the picture on here of #5. Those are the only changes I made to the second loaf. Both loaves are delicious, like I said, but, I think I prefer the second loaf more. Use your judgment... I hope I explained this well enough, please ask questions if not sure about what I have shared. :)

1 packet The Bread
1/2 cup butter or margarine
1/2 cup sugar
1/4 cup brown sugar
2 piece eggs
6 piece soft bananas, all squished up in a plastic bag
1 teaspoon vanilla
1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 piece The Streusel
1/4 cup sugar
1/4 cup brown sugar
1/2 cup flour
3/4 teaspoon cinnamon
1/4 cup butter or margarine melted

Steps:

  • Preheat oven to 350.
  • Mix together the butter and sugar until smooth, and then add the eggs, smashed up bananas and vanilla. Blend until mixed together really well. Next, in a separate bowl combine the dry ingredients. While the mixer is still on, slowly add the flour mixture and mix until smooth.
  • Spray a loaf pan to prevent sticking. Recipe makes one loaf.
  • Pour banana bread batter into the loaf pan and set aside. The Streusel (makes enough for 2 loaves of bread)- 1/4 cup sugar 1/4 cup brown sugar 1/2 cup flour 3/4 teaspoon cinnamon 1/4 cup butter or margarine melted.
  • Mix the ingredients together.
  • Drop spoonfuls over the banana bread batter.
  • Bake for an hour at 350 degrees.

  • Preheat oven to 350 degrees F (180 degrees C) and place the rack in the center of the oven. Butter (or spray with a non stick vegetable spray) the bottom and sides of an 8-cup loaf pan (9 x 5 x 3 inch) (23 x 13 x 8 cm). Set aside.
  • In a large bowl combine the flour, sugar, baking powder, baking soda, salt, 2/3 cup of pecans, and half of the chopped caramels.
  • In a medium-sized bowl combine the mashed bananas, eggs, melted butter, yogurt, and vanilla.
