It is just too hot to bake up a banana bread, so when you have bananas that are starting to turn brown whip up a batch of these Banana & Strawberry Popsicles. This is a classic fruit combination and one of my kids favorites. And, because this is a 100% fruit recipe with no added sugar I don't feel bad about letting my kids have a popsicle for breakfast! Yes, I let my kids eat these popsicles first thing in the morning. Score mommy points!

2 ripe bananas, sliced
2 cups fresh strawberries, sliced

Steps:

  • Place sliced bananas and strawberries into the jar of a blender.
  • Puree fruit mixtures.
  • Pour mixture into popsicle molds and freeze until solid.
  • Unmold and lick until you get a brain freeze!

Steps:

  • Place the coconut milk, strawberries, banana, and honey in a blender and blend until the mixture is smooth.

  • Freeze the popsicles for at least 4 hours.
  • Unmold the popsicles.

Number Of Ingredients 10

1 package (3 ounces) strawberry gelatin
1/2 cup boiling water
1 package (10 ounces) frozen sweetened sliced strawberries, thawed
1 can (8 ounces) crushed pineapple, undrained
1/2 cup mashed ripe banana
1/4 to 1/2 cup chopped walnuts
1 cup sour cream
1 teaspoon sugar
1/4 teaspoon vanilla extract
12 Popsicle molds or plastic cups (3 ounces) and Popsicle sticks

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Stir in the strawberries, pineapple, banana and nuts. Pour 2 cups into a 13-in. x 9-in. dish coated with cooking spray. Refrigerate until set, about 1 hour. Set remaining gelatin mixture aside., In a small bowl, combine the sour cream, sugar and vanilla. Spread over gelatin. Top with reserved gelatin mixture. Chill for 1 hour. Spoon 1/3 cup into each mold. Freeze until firm, about 5 hours.

Everyone loves them in our family and the only thing better than this is the sour cherry version. Easy and fast to put together .Freeze it to get a popsicle or when it's half frozen, drink it with a straw. I'm not sure how many it makes, it depends on the size or the popsicle moulds. The amount of sugar and lime can be increased or decreased.
