When we were first married, my husband was in the Navy. Stationed in Puerto Rico, we had banana trees growing in our yard, so I found ways to use dozens of ripe bananas at a time. I made these banana squares often. They freeze well and make a great snack to have on hand when friends drop in for coffee. -Susan Miller, Raleigh, North Carolina

2 large eggs, separated
2/3 cup shortening
1-1/2 cups sugar
1 cup mashed ripe bananas (2 to 3 medium)
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 cup buttermilk
1/2 teaspoon vanilla extract
1/2 cup chopped walnuts, optional
Whipped cream and sliced bananas, optional

Steps:

  • In a small bowl, beat egg whites until soft peaks form; set aside. In a large bowl, cream shortening and sugar. Beat in egg yolks; mix well. Add bananas. Combine flour and baking soda; add to creamed mixture alternately with buttermilk, beating well after each addition. Add vanilla. Fold in egg whites. Fold in nuts if desired., Pour into a greased 13-in. x 9-in. baking dish. Bake at 350° for 45-50 minutes. Cool on a wire rack. , If desired, garnish with whipped cream and a few banana slices.

1 cup brown sugar, packed
1 (10 ounce) jar apricot preserves
2 eggs, beaten
1 teaspoon vanilla
1 3/4 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed ripe banana
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees.
  • Cream the margarine and brown sugar.
  • Blend in the preserves, eggs and vanilla.
  • Sift together the flour, baking powder, soda and salt.
  • Add alternately with the bananas, mixing well after each addition.
  • Stir in nuts.
  • Pour into a greased 13 x 9 inch baking pan.
  • Bake 35 to 40 minutes.

3 eggs
1/3 cup vegetable oil
1/4 cup water
3 medium bananas
1 1/4 cups milk (cold)
3 ounces vanilla instant pudding mix
8 ounces Cool Whip, thawed
9 strawberries
1 ounce semisweet chocolate

Steps:

  • Preheat oven to 350°. Prepare brownie mix according to package directions; stir in 1/2 cup of peanuts. Pour into 9" square baking pan. Bake according to package directions. Cool completely.
  • Slice 2 of the bananas; place in single layer over brownie.
  • Whisk pudding mix into milk just until it begins to thicken. Gently fold in 2 1/2 cups of the Cool Whip. Quickly spread mixture over the bananas. Refrigerate 30 minutes.
  • Sprinkle remaining peanuts over pudding mixture. Top with remaining Cool Whip. Grate chocolate evenly over dessert.
  • Slice remaining banana and strawberries. Slice into 9 squares. Garnish each square with banana and strawberry slices.

35 Nilla wafers, crushed
1/4 c margarine, melted (1/2 stick)
1 pkg Philadelphia cream cheese, softened (8 oz.)
1/2 c powdered sugar
1 pkg Cool Whip, thawed, divided (16 oz)
3 bananas
3 c milk, cold
2 pkg Jell-o vanilla flavor instant pudding (4-serving size each)
1/2 square of Baker's semi-sweet baking chocolate, grated

Steps:

  • 1. Combine wafer crumbs and margarine.
  • 2. Press firmly onto the bottom of the 9×13-inch dish. Refrigerate while preparing the filling. **If you want a thicker crust, double the crust ingredients to get it to easily cover the bottom of a 9X13 pan.
  • 3. Mix cream cheese and sugar in a medium bowl until well blended.
  • 4. Stir in 1-1/2 cups of the whipped topping. Spread carefully onto crust. Set aside.
  • 5. Pour milk into a large bowl.
  • 6. Add dry pudding mixes. Beat with wire whisk 2 min.
  • 7. Slice bananas and arrange over cream cheese mixture.
  • 8. Spoon pudding over bananas.
  • 9. Spread with remaining whipped topping;
  • 10. Sprinkle with chocolate. You can also skip the chocolate and put a layer of Nilla wafers on top or just leave the Cool Whip as the topping.
  • 11. Refrigerate at least 3 hours before serving. When ready to serve cut into squares. Store leftovers in the refrigerator.

1 box (3.4 oz) instant banana pudding mix
3 medium ripe bananas, sliced

Steps:

  • Heat oven to 375°F. Spray 13x9-inch baking dish with cooking spray.
  • In medium bowl, cut butter into cookie mix using pastry blender or fork, until mixture is crumbly. Reserve 3/4 cup mixture for topping. Mix egg in remaining mixture until incorporated. Press crumbs evenly in bottom of dish. Bake 13 to 15 minutes or until light golden brown around the edges. Cool completely.
  • In 15x10x1 inch pan, place the reserved topping crumbs in a thin layer. Bake 8 to 10 minutes, stirring occasionally or until light golden brown. Cool completely. Crumble into small pieces. Set aside.

This is a delicious and unusual dessert using two of my favourite ingredients! The original recipe calls for 250ml sugar but I find that is too sweet for my tastes. Feel free to change the quantity back if you prefer something sweeter.

250 g butter
200 ml sugar
2 eggs
500 ml flour
1 pinch salt
10 ml baking powder
4 bananas
250 g dates
15 ml melted butter
5 ml cinnamon
30 ml sugar

Steps:

  • Preheat oven to 180°C.
  • Cream butter and sugar together until light and fluffy.
  • Beat the eggs in one at a time.
  • Add the flour, salt and baking powder and mix well.
  • Place half the mixture onto a greased 9 x 13 baking dish.
  • Cover the dough with banana slices and chopped date pieces.
  • Place the remaining dough over as a topping.
  • Bake for 30-35 minutes until golden brown.
  • Remove from oven.
  • Brush the melted butter over the top while still hot.
  • Mix cinnamon and sugar and sprinkle over the top.
  • Cut into squares and cool on wire rack.

3/4 c peanuts, dry roasted, chopped and divided
1 pkg (15 oz.) brownie mix of your choice
3 medium bananas
1 1/4 c cold milk
1 pkg (5.1 oz.) instant vanilla pudding mix
1 pkg (8 oz.) frozen whipped topping, thawed and divided
9 large whole strawberries
1 oz unsweetened baking chocolate

Steps:

  • 1. Prepare brownie mix according to package directions. Stir in 1/2 cup chopped peanuts. Pour into a buttered 9" square baking pan. Bake in a preheated 350-degree oven for 24-27 minutes. Cool completely.
  • 2. Slice 2 of the bananas and layer over the brownies. In a large mixing bowl, whisk pudding mix into the milk; beat until mixture just begins to thicken. Fold in 2-1/2 cups of the whipped topping. Quickly spread pudding mixture over the sliced bananas. Refrigerate for 30 minutes. Sprinkle remaining 1/4 cup peanuts over pudding mixture.
  • 3. Using a decorating bag and an open star tip, fill with remaining whipped topping. Cut the brownies into squares and pipe each square with whipped topping. Grate the chocolate over each square. Slice the remaining banana and top each square with banana slice and strawberry. Serve immediately.

2 eggs
1 1/2 cups chopped nuts (or to taste)

2 large ripe mashed bananas

Steps:

  • Set oven to 350 degrees.
  • Grease a 11 x 7-inch baking pan.
  • In a large bowl, combine cake mix, butter, eggs; beat until combined (about 2 minutes).
  • Add/mix in nuts.
  • Press half of the cake mixture into bottom of prepared baking pan with hands or back of a slightly wet spoon (the mixture will be thick and fairly sticky, so the best way is to keep your hands slightly wet); reserve the remaining mixture for topping.
  • To make filling: in a double boiler or microwave, melt the marshmallows, stirring constantly until smooth.
  • Add in the dry pudding mix and mashed bananas to the melted marshmallows; mix to combine.

1/2 c butter, softened
1 1/2 c sugar
2 eggs, room temperature
1 c sour cream
1 tsp vanilla extract
2 c cake flour
1 tsp baking soda
1/4 tsp salt
2 medium ripe bananas, mashed (about 1 cup)
CREAM CHEESE FROSTING
8 oz cream cheese, room temperature
1/2 c butter, softened
2 tsp vanilla extract
3 3/4 - 4 c powdered sugar

Steps:

  • 1. In a bowl, cream butter and sugar. Add the eggs, sour cream and vanilla one at a time. Combine the flour, baking soda and salt; gradually add to the creamed mixture. Stir in bananas.
  • 2. Spread into a parchment lined 13 x 10 x 1 inch baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool.

  • Let me tell you first, that I have used the NoEgg Orgran's egg replacer for a mounth now, and each time with having a terrible results. Even if there are the instructions on the box, everything was remining raw inside and wasn't rising at all. I left it in my closet, sure that one day I'll throw it away, as its horrible product. This time I had no choice. I couldn't use eggs. Egg whites doesn't work well ither with the gluten-free flours. So I had to give it one last chance.   • So, turn on the oven to 350°F Line a small square baking pan with baking paper.
  • In a large mixing bowl place the flour and add the vegetable margarine. Work with your fingers both ingredients until it's crumbly. Exactly as you do for the pie pastry. Make a well in the center.
  • In another bowl, pour the eggreplacer and add the water. whisk with a spoon until it's smooth without any lumps. Add the liquid sweetener and whisk again. Stir in the flour mixtur. Start to work dough very quickly with your hads. If it's too dry (as mine was) add 2-3 more tbsp warm water. Form dough with your hands, cut 1/4 from it and set aside. Place the remaining dough into the pan and flat it with your hands or the back of a glass. Bake in the preheated oven about 20 minutes.
  • Remove from the oven. Do not turn it off.
  • Spread the applesauce over the top of the baked base. Peel and slice quickly the banana. Arrange the fruit slices over the applesauce. In a small bowl combine the 1/4 dough with the ground almonds, the cinnamon, the lemon peel and raisins (if you use them). Stir with your hands until crumbly, then cover the banana slices. Bake about 25-30 more minutes, until it's golden brown and crispy.
  • Remove from the oven and allow to cool completely on a room temperature. Better if you do what I did. Make it the evening before and serve it sliced the next morning for breakfast. You can dast it with confectioners' sugar if you want just before serving. It's perfect for the coffee! It's crispy, sweet becouse of the banana, but not over sweet.

1/2 c butter
1( c self rising flour
1 c chopped pecans, divided
1 (8OZ_ pkg cream cheese, room temperature
1 c sugar
12 oz cool whip
4 ripened bananas
2 box (4 servings each) french vanilla pudding
3 c milk

Steps:

  • 1. Preheat the oven to 350°F. In a large bowl, cut the butter into the flour and mix with a fork until the mixture is crumbly. Add 1/2 cup pecans and mix well. Place the mixture in a 9" x 13" baking dish that has been coated with nonstick baking spray. Bake for 15 to 20 minutes, or until light golden. Remove from the oven and allow to cool. In a large bowl, with an electric beater on medium speed, beat the cream cheese and confectioners' sugar until well combined. Add half the whipped topping; mix well. Pour over the cooled crust. Cut the bananas into 1/4-inch slices and arrange in a single layer over the cream cheese layer. In a large bowl, with an electric beater on medium speed, beat the pudding mix and milk until creamy. Spoon over the bananas and top with the remaining whipped topping. Sprinkle with the remaining 1/2 cup chopped pecans. Cover and chill for at least 1 hour before serving.

2 pkg. (1 oz. each) JELL-O Vanilla Flavor Sugar Free Fat Free Instant Pudding
3 cups cold fat-free milk
1/2 oz. BAKER'S Semi-Sweet Chocolate, grated

Steps:

  • Combine wafer crumbs and margarine; press onto bottom of 13x9-inch dish. Refrigerate until ready to use.
  • Beat Neufchatel and sugar in medium bowl with whisk until blended. Stir in 1-1/2 cups COOL WHIP; spread over crust. Top with bananas.
  • Beat pudding mixes and milk with whisk 2 min.; spread over bananas. Top with remaining COOL WHIP and chocolate. Refrigerate 3 hours.

1 package (14 ounces) banana quick bread and muffin mix
1/2 cup chopped walnuts
1/3 cup butter, softened
1 egg
1 can (14 ounces) sweetened condensed milk
1 can (20 ounces) strawberry pie filling
1/2 cup sweetened shredded coconut

Steps:

  • In a small bowl, combine the bread mix, walnuts, butter and egg until crumbly. Press onto the bottom of a 13-in. x 9-in. baking dish coated with cooking spray. Bake at 350° for 8-10 minutes or until lightly browned. , Spread milk over crust; spoon pie filling over milk. Sprinkle with coconut. Bake 30-40 minutes longer or until golden brown. Cool on a wire rack. Cut into squares.
