BANANA ORANGE MUFFINS
Got it from the Quaker Oatmeal website and wanted to try it. It is described as a kid favorite, low sodium, lower fat, and less than 30 minutes.

Steps:
- Heat oven to 400°F Line twelve medium muffin cups with paper baking cups or lightly spray bottoms only with cooking spray.
- In large bowl, combine oats, flour, brown sugar, baking powder, baking soda, cinnamon, salt and dates; mix well. In medium bowl, combine yogurt, banana, egg whites, oil and orange peel; blend well. Add to dry ingredients all at once; stir just until dry ingredients are moistened. (Do not overmix.).
- Fill muffin cups almost full.
- Bake 20 to 22 minutes or until golden brown. Cool muffins in pan on wire rack 5 minutes; remove from pan.

- In a large bowl, beat together bananas, butter, egg, vanilla and orange rind.
- In a medium bowl, stif together flour, sugar, baking powder, baking soda and salt. Pour the dry ingredients in the banana mixture and mix until combined. Add chopped pecans & stir again.
- Spoon batter into 12 greased or paper-lined muffin cups.
- Bake muffins in 350 degrees F oven for 15 to 20 minutes of until risen and firm to the touch. Let cool on wire racks.
- Store in airtight containers for up to 3 days of freeze for up to 3 months.

- Preheat oven to 180°C Brush 12 medium (80ml/1/3-cup) non-stick muffin pans with the melted butter to lightly grease.
- Sift the flours and allspice into a medium bowl. Return the husks to the bowl. Add the oatbran and sugar, and mix well.
- Whisk the orange rind, orange juice, oil and eggs together in a large jug until well combined. Add to the flour mixture with the banana and use a wooden spoon to mix until just combined.
- Spoon mixture evenly into muffin pans. Bake in preheated oven for 24 minutes or until a skewer inserted into centre of muffins comes out clean.
- Set aside for 5 minutes before turning onto a wire rack to cool slightly. Serve warm or at room temperature, dusted lightly with icing sugar and accompanied by ricotta.

- Preheat oven to 400 degrees.
- Spray 12-cup muffin tin with nonstick cooking spray and set aside.
- In large bowl, whisk together mashed bananas, orange juice concentrate, egg and oil.
- Stir in bran flakes, let sit about 15 minutes to soften cereal.
- In separate bowl, combine flour with baking powder, baking soda, cinnamon and salt.
- Add to cereal mixture and stir just until combined.
- Gently fold in raisins and pecans. Spoon batter evenly into muffin tins.
- Bake 20 to 25 minutes or until done.
- Cool 5 minutes in tin.

- 1. In mixing bowl, combine sugar and oil. Add bananas, marmalade and eggs; blend well. In separate bowl, mix flours, bran, baking soda and salt together. Stir flour mixture into banana mixture. Stir in pecans and coconut. Pour into 2 greased loaf pans. Bake at 375 degrees for 40-50 min., or until done. If making muffins, cook for 20-25 min., or until done.

- Mix all ingredients together except the instant oatmeal, mix with electric mixer till mixed good. Pour into paper lined muffin pan. SUGAR FREE BANANA ORANGE MUFFINS
These are in the oven right now, so I am not sure how they are going to turn out, but I wanted to save the recipe while I still have it fresh in my mind in case they turn out to be a hit! I adapted a recipe I found on enkivillage.com, since I had some apples, oranges and bananas I needed to repurpose before they went bad (I have a toddler that likes to get into the fruit bowl and take a bite out of each piece of fruit). There is no added sugar (just a spoonful that went into the applesauce when I made it), and the applesauce replaces the butter/oil you would usually put into your baked goods so it is low in fat as well. You can add cranberries instead of raisins, walnuts instead of pecans, whatever you happen to have on hand! This recipe was meant to help clean out the pantry. UPDATE: The crumb turned out very well, but overall the muffins were a little on the sense side. They are not very sweet at all, which is how our family likes it. I actually drizzled a little honey on mine.

- Preheat oven to 375 degrees.
- Trim the woody ends from the bananas, cut into chunks and add to food processor or blender along with the applesauce and orange juice.
- Blend thoroughly. You want the banana peels to get well blended.
- Add the eggs to the processor and blend well.
- In a separate large bowl, mix together the flour, baking soda, baking powder and cinnamon.
- Add wet ingredients from the food processor to the flour mixture and mix until the flour is almost fully incorporated.
- Add oats, raisins and nuts and stir until just combined.
- Oil or butter your muffin tin and spoon the batter into it.
- Bake muffins for 25 minutes or until a toothpick inserted into the center of one of the muffins comes out clean.
