HEALTHY BANANA DROP COOKIES

This is a recipe I got out of my husband's collection, so I am unsure of its origin. I have made them a few times now and they are so delicious! They remind me of banana muffins somewhat and they are super simple to make! They make a great breakfast or snack.

Number Of Ingredients 9

1 1/2 cups rolled oats
1/2 cup flour
1/2 cup wheat germ
1/4 cup sugar
1/4 cup brown sugar
1/4 teaspoon cinnamon
5 tablespoons margarine, softened
1 cup mashed banana (about 1 1/2 large bananas)
1/4 cup orange juice

Steps:

  • Grease and flour baking sheets.
  • Process oats in blender or food processor at medium speed til finely ground. (about 1 minute).
  • Combine oats, flour, wheat germ, sugar, brown sugar, and cinnamon in large bowl.
  • Use knives or pastry blender to cut in margarine until mixture forms coarse crumbs.
  • Add bananas and orange juice to bowl and stir.
  • Cover and chill dough for 20 minutes in the freezer.
  • Preheat oven to 375°F.
  • Drop dough by teaspoonfulls 1 1/2 inches apart on prepared baking sheets.
  • Bake until golden brown, about 10 minutes.
  • Let sit a couple of minutes to cool and set, then move them to racks to finish cooling completely.

I don't know where I found this recipe for these cookies but my kids LOVED them while growing up. I would make a glaze to put on them sometimes which made them even more delish! So if you have a powdered sugar glaze you want to put on them, go for it!!

2 1/8 c flour
1 1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp baking soda
1/4 tsp salt
1/4 tsp cloves
1/2 c butter, room temperature
2 eggs
1/2 tsp vanilla extract
1 c mashed banana
1 c sugar

Steps:

  • 1. Oven preheated to 375 degrees.
  • 2. Stir together flour, baking powder, cinnamon, baking soda, salt and cloves. Set aside.
  • 3. Beat the 1/2 cup butter. Add the sugar, beat til fluffy.
  • 4. Add the eggs and vanilla; beat well.
  • 5. Add the dry ingredients & 1 cup mashed banana, alternately.
  • 6. Drop from spoonful on well greased pan and bake 10-12 minutes. Once cooled, eat as is or put a glaze on them!

If you like banana bread you will love this cookie. Be sure to use very ripe bananas- because that is where the best flavor comes from. You can all nut or peanut butter to the batter if desired even a few mini chocolate chips. Do your own thing. 3/4 cup(s) real butter,softened
3/4 cup(s) brown sugar, firmly packed
2 medium over ripe bananas, mashed with a fork
1 large egg
2 teaspoon(s) freshly grated orange zest
1/2 teaspoon(s) vanilla
2 cup(s) all purpose flour
1/2 teaspoon(s) each of baking powder and soda
1/4 teaspoon(s) salt
ICING:
2 tablespoon(s) real butter
3 tablespoon(s) brown sugar, firmly packed
2 tablespoon(s) cream or milk
1 1/4 cup(s) powdered sugar
1/2 teaspoon(s) vanilla
- orange zest grated for garnish
ADD IN'S IF DESIRED:1/4 CUP OF ANY OF THE FOLLOWING
- miini chocolate chips, coconut, nuts, or 2 tablespoons peanut butter

Steps:

  • Heat oven to 350^. Combine butter, and brown sugar in a large bowl. Beat at medium speed, until creamy. Add bananas, egg, orange zest and vanilla, continue beating until well mixed.
  • Reduce speed to low; add flour, baking powder, soda and slat. Beat until well mixed. Mix in any add in's if desired. Blend well. Chill dough in refrigerator for 30 minutes.
  • Drop dough by rounded teaspoonfuls, 2 inches apart, onto ungreased cookie sheets. Bake for 8-to 12 minutes or until edges are lightly browned. Cool completely before icing them.
  • Icing: Melt butter in a 1 quart saucepan over medium heat . Add the brown sugar and cream. Cook and stir until mixture comes to a boil. Remove from heat. Add powdered sugar and vanilla; beat until well mixed; cool slightly. Frost cooled cookies and garnish with grated orange zest. Let frosting set.

1/4 teaspoon baking soda
3/4 teaspoon salt
2/3 cup butter or 2/3 cup shortening
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1 cup mashed ripe banana (2-3 bananas)
1 (14 -24 ounce) bag chocolate chips (optional)

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Sift flour, baking powder, baking soda, and salt together in a small, separate bowl.
  • Beat shortening in larger bowl until creamed, adding sugar. Stir in vanilla.
  • Beat in eggs.
  • Add flour mixture alternately with mashed bananas, beating after each addition until smooth.
  • Fold in chocolate chips with a large spoon, if desired.
  • Drop by spoonfuls onto ungreased cookie sheets.

1 c mashed ripe bananas(about 2)
1 large egg
