BANANA OATMEAL BREAD - BREAD MACHINE

This is a somewhat sweet bread that rises nice and high and has a moist texture. It makes great fluffernutter sandwiches (marshmallow fluff and peanut butter). Note: This recipe tends to be too wet, so add extra flour as necessary until the dough is no longer sticking to the sides of the machine.

2 teaspoons yeast
1 teaspoon salt
3 tablespoons dry buttermilk
3/4 cup oats
1 1/2 cups bread flour
2 tablespoons brown sugar
1/4 cup steel cut oats
1/4 cup water
1 large egg
1 1/2 tablespoons vegetable oil
2/3 cup mashed very ripe banana

Steps:

  • Soak steel cut oats in 1/4 cup boiling water until the water has come to room temperature. Drain any excess water.
  • Add ingredients to the bread machine as directed by the manufacturer.
  • Bake at basic one pound loaf setting.
  • When done, remove bread from pan and cool on a wire rack.

1/2 cup water
2 tablespoons olive oil
4 -5 mashed bananas
2 tablespoons honey
3 cups rolled oats
2 1/2 cups all-purpose flour
1 teaspoon salt
2 teaspoons active dry yeast

Steps:

  • Follow bread machine instructions for order of ingredients, only MAKE SURE you add the mashed bananas as a LIQUID (with the water, honey, and oil).
  • Set bread machine on SWEET setting, light crust.

1/3 cup steel cut oats, soaked in 1/3 cup boiling water until the mixture is at room temperature
1/4 cup water
1 extra-large egg
2 tablespoons vegetable oil
1 cup banana, very ripe, mashed
1 tablespoon yeast

Steps:

  • Place all ingredients in the bread machine in the order suggested by the manufacturer.
  • Program the machine using its basic bread setting.

½ cup shortening
1 cup white sugar
2 eggs, beaten
½ teaspoon vanilla extract
1 cup all-purpose flour
1 cup quick cooking oats
1 teaspoon baking soda
½ teaspoon salt
¼ cup milk
½ teaspoon ground cinnamon
1 ½ cups mashed bananas
½ cup chopped raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan and set aside.
  • Cream together the shortening and sugar. Add eggs and vanilla; beat until fluffy.
  • Sift together the flour, oatmeal, baking soda, salt and cinnamon. Add dry ingredients alternately with bananas and milk. Mix until blended.
  • Fold in raisins and pour into prepared pan. Bake for 50 to 60 minutes; remove from oven and cover for 5 minutes.
