BANANA OAT BREAKFAST BARS
A quick and delicious breakfast bar. I make these for my daughter and husband to get them fed and out the door quick in the morning. I have made these with a variety of combinations of dried fruits. You can also try diced carrots or parsnips in place of the cranberries for a nice change. Its an easy way to sneak veggies into a kid's diet!

BANANA OAT COOKIE BARS
I tried playing around with a few recipes, and this is the one that worked out the best for my family. It's a light cookie; I found that making it into bars worked better for me, since I only had one hand and could not spoon them onto a cookie sheet. I also used a food processor to mix the batter to make it quicker and easier to do while holding my daughter. :)

Steps:
- Heat the oven to 350°F and lightly grease a 9x9-inch square baking dish with olive oil or butter. Peel the bananas and mash their flesh in a medium mixing bowl. Mash very thoroughly until no large chunks remain; the bananas should be essentially liquid. (You will have between 1 cup and 1 1/4 cup.) Stir in the vanilla, if using. Add the oats and stir them in. Stir in the salt, dates, and nuts. Pat the thick mixture evenly into the baking pan. If desired, sprinkle the top lightly with nutmeg or cinnamon. Bake for 30 minutes or unti the edges just begin to crisp up. Place the baking pan on a rack to cool. When the pan is mostly cool, cut into bars and enjoy with a glass of milk or tea.
