My sister gave me this recipe, which is always in demand with family, friends and co-workers. It's amazing how fast these tempting bars vanish when I serve them! The cream cheese frosting is heavenly.

1 cup butter, cubed
1/2 cup water
1-1/2 cups sugar
1/2 cup packed brown sugar
1 cup mashed ripe bananas (about 2 medium)
1/2 cup buttermilk
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 cup chopped pecans or walnuts
FROSTING:
1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
1 teaspoon vanilla extract
3-1/2 cups confectioners' sugar

Steps:

  • In a small saucepan, bring butter and water to a boil. Remove from the heat; set aside. In a large bowl, beat the sugars, bananas, buttermilk, eggs and vanilla until blended. Combine flour and baking soda; gradually add to sugar mixture. Beat in butter mixture until blended. Stir in nuts., Pour into a greased 15x10x1-in. baking pan. Bake at 350° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. , For frosting, in a large bowl, beat cream cheese and butter until light and fluffy. Beat in vanilla. Gradually add confectioners' sugar until smooth. Spread over bars. Store in the refrigerator.

9 large pitted Medjool dates
½ cup mashed banana
1 teaspoon vanilla extract
1 cup old-fashioned rolled oats, divided
½ cup walnuts
½ cup almonds
2 tablespoons ground flax seed
¼ teaspoon ground cinnamon
¼ teaspoon salt
½ cup vanilla protein powder (such as MCT Lean®)
¼ cup chocolate chips

Steps:

  • Line an 8x8-inch pan with parchment paper or plastic wrap.
  • Combine dates, banana, and vanilla extract in a large food processor until smooth, about 1 minute. Add 3/4 cup oats, walnuts, almonds, flax seed, cinnamon, and salt; blend.
  • Scrape sides down and add remaining 1/4 cup oats and protein powder; process until mixture is well combined and thick, about 1 minute. Stir in chocolate chips.
  • Spoon mixture into prepared pan; press into pan using wet hands until even.
  • Freeze until solid, at least 2 to 3 hours. Slice into 10 bars.

1 cup butter or 1 cup margarine, cubed
1/2 cup water

1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
1/2 cup plus 2 tablespoons butter or margarine, softened
1 egg
3/4 cup mashed very ripe bananas
1/2 cup chopped walnuts
1 1/4 cups semisweet chocolate chips

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 9-inch square pan with cooking spray. In large bowl, stir cookie mix, 1/2 cup butter and egg until soft dough forms. Reserve 1 cup of the dough. To the remaining dough, add mashed banana and walnuts; mix well. Spread in bottom of pan.
  • In medium microwaveable bowl, microwave 3/4 cup of the chocolate chips with the remaining 2 tablespoons butter on High about 1 minute, stirring after 30 seconds, until melted and smooth. Add reserved cookie dough; stir until well blended. Drop chocolate dough by spoonfuls evenly over top of banana mixture; spread gently to almost cover. Swirl chocolate mixture into banana mixture with knife for marbled design.
  • Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes.
  • In small microwavable bowl, microwave remaining 1/2 cup chocolate chips on High about 1 minute, stirring after 30 seconds, until melted and smooth. Drizzle over bars. Cool completely, about 2 hours. For bars, cut into 5 rows by 4 rows. Store covered at room temperature.

1 cup sweetened dried cranberries
1/3 cup slivered almonds, toasted
1/3 cup roasted unsalted sunflower nuts
1/2 cup light corn syrup
1/4 cup packed brown sugar
1/4 cup creamy peanut butter
1 teaspoon vanilla

Steps:

  • Spray 9-inch square pan with cooking spray. In large bowl, mix cereal, cranberries, almonds and sunflower nuts.
  • In 2-quart saucepan, heat corn syrup, brown sugar and peanut butter to boiling over medium-high heat, stirring constantly. Boil and stir 1 minute. Remove from heat; stir in vanilla.
  • Pour syrup mixture over cereal mixture; toss to coat. Press firmly in pan. Cool completely, about 30 minutes. For bars, cut into 6 rows by 4 rows.

3 c all purpose flour
2 c sugar
1 tsp baking soda
1/2 tsp cinnamon ( the origional recipe calls for 1 tsp but i find that was to much for my liking)
1/2 tsp salt
3 eggs, beaten
3/4 c vegetable oil
4 large ripe banana, mashed
1 c chopped pecans
1 1/2 tsp vanilla
CREAM CHEESE FROSTING
8 oz package cream cheese, softened
1/2 c butter, softened
3 1/2 c powdered sugar
1/2 c chopped pecans

Steps:

  • 1. preheat oven to 350 degrees. Butter and flour desired pan or pans. I use a bar pan. or you can use a 9x13 if you want a cake, or round pans or cupcake pan.
  • 2. Stir together flour, sugar, soda, cinnamon and salt. Add the eggs and oil. Stir just until the dry ingredents are moistened.Do not beat Stir in bananas, vanilla and pecans
  • 3. pour into prepared pan or pans Bake for 25 to 30 minutes or until toothpic comes out clean. If using round pans, let cool for 10 minutes before turning out onto wire cooling rack. Cool completely before frosting To make frosting, beat butter, cream cheese, powdered sugar and vanilla. Fold in pecans

Combine bananas and milk. Add the dry ingredients to creamed mixture alternately with banana mixture. Stir in nuts. , Pour into a greased 15x10x1-in. baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. , For glaze, in a small bowl, cream butter and sugar until light and fluffy. 1 c mashed ripe banana..... i used my frozen bananas i stored in the freez.er

  • 1. Grease & flour a 13x9 inch baking pan. Pre-heat the oven to 350 F. Assemble all your ingredients.
  • 2. Mash your cooked carrots. Try not to use store bought carrots in a can. Frozen carrots are O.K. But cooked. You can even use baby food carrots... in a pinch. Add to bowl.
  • 3. Mash 2 ripe or frozen bananas... if you have them... The taste is the same. Add to bowl.
  • 4. Chop your nuts ... if you use them. I use walnuts. Add to bowl.
  • 5. Now the easy part! A one bowl wonder!.. Put all! that's every ingredient together into a large bowl and mix well. Put in oven. Bake for 30-35 minutes. Check center of cake, to be sure it is done. Did you know you can use a stick of spaghetti for a tester?? Cake is done when nothing sticks to the spaghetti! Thank my Grandma Walker, for this trick. You can even use a wooden chop stick.
  • 6. I like to use powdered sugar, sprinkled on top of cake. And a scoop of vanilla ice cream... goes good with this cake. YUM! *****Or a cream cheese frosting will do. This is your choice.   • Combine bananas and milk; add the dry mixture to the creamed mixture alternately with the banana mixture, mixing well.

  • Do not spread the glaze over the bars if they are still warm or it will seperate; the bars must be room temperature.

1 bag (10.5 oz) miniature marshmallows (5 1/2 cups)
6 cups Banana Nut Cheerios™ cereal
1/3 cup roasted sunflower nuts
1/4 cup semisweet chocolate chips
1 teaspoon canola oil

Steps:

  • Spray 13x9-inch pan with cooking spray. In large microwavable bowl, microwave margarine uncovered on High 30 to 45 seconds or until melted. Add marshmallows; toss until coated. Microwave uncovered on High 1 minute 15 seconds to 1 minute 45 seconds, stirring every 30 seconds, until mixture can be stirred smooth.
  • Stir in cereal and sunflower nuts until well blended. Press evenly in pan.
  • In small microwavable bowl, microwave chocolate chips and oil uncovered on High 45 to 60 seconds, stirring very 15 seconds, until melted and smooth. Drizzle over bars.
