3/4 cup milk
1 tablespoon dry active yeast
7 extra-large eggs
1 3/4 cups plus 4 1/3 cups unbleached all-purpose flour
3/4 cup granulated sugar
1 ounce honey
2 tablespoons coarse salt
1 cup (2 sticks) unsalted butter, softened, plus melted butter for baking dishes
Nonstick cooking spray, for bowl
Moloko Butterscotch
3 ripe bananas, pureed until smooth
Smoked Almond Toffee Brittle, chopped, plus 6 larger pieces for garnish
1 cup granulated cane sugar
1 tablespoon ground cinnamon
Confectioners' sugar, for dusting

Steps:

  • In a small saucepan, heat milk until just warmed through. Transfer to a large bowl and add yeast; stir to combine. Let stand 1 minute until yeast is dissolved. Add 2 eggs and whisk to combine. Add 3/4 cups flour and mix until well combined. Sprinkle remaining 1 cup flour over top of mixture; cover with plastic wrap and let dough stand in a warm place until doubled in volume, about 1 hour.
  • Transfer dough to the bowl of an electric mixer fitted with the dough hook attachment. Add remaining 5 eggs, granulated sugar, remaining 4 1/3 cups flour, and honey. With the mixer on low, add salt. Mix until dough forms a ball, adding more flour if necessary. Increase speed to medium and mix for about 5 minutes. Reduce speed to low and add butter; mix until fully incorporated.
  • Lightly coat a large bowl with nonstick cooking spray and transfer dough to prepared bowl. Cover with plastic wrap and let stand in a warm place until doubled in volume, 1 to 2 hours. Punch dough down and cover again with plastic wrap. Transfer to refrigerator until ready to use, up to 1 week.
  • In a large bowl, mix together 2 cups butterscotch and pureed bananas. Lightly coat twelve 1-cup ovenproof dishes or ramekins with melted butter; set dishes on a large rimmed baking sheet. Place one tablespoon butterscotch in the bottom of each baking dish. Sprinkle some of the toffee over the butterscotch; set aside.
  • Divide dough into 12 equal pieces (about 5-ounces each). Working with 1 piece at a time, roll into a 6-inch-long rope using your hands. Cut rope into 8 equal pieces; add to bowl with butterscotch mixture and toss to coat. Transfer dough pieces to a prepared baking dish; repeat process with remaining pieces of dough. Sprinkle each baking dish filled with dough with more toffee. Cover baking dishes with plastic wrap and let stand in a warm place until spongy, about 1 hour.
  • Preheat oven to 350 degrees.
  • In a small bowl, mix together granulated cane sugar and cinnamon. Brush tops of dough with butterscotch mixture and sprinkle with cinnamon-sugar; top with remaining chopped toffee. Transfer to oven and bake, rotating halfway through baking, until golden and firm to the touch, about 30 minutes. Dust with confectioners' sugar and garnish with large toffee pieces. Serve immediately with remaining butterscotch, for dipping.

3 bananas, 1 cut into coins, 2 cut into half-coins
1 cup dark chocolate chip
3 cans biscuit dough
1 cup sugar
3 teaspoons cinnamon
2 sticks butter
½ cup brown sugar
1 banana, cut into coins
dark chocolate chip

Steps:

  • Cut two bananas into half coins.
  • Cut one banana into coins and line the bottom of a greased bundt pan.
  • In a bowl mix sugar and cinnamon, set aside.
  • Preheat oven to 350˚F (180˚C).
  • Cut each biscuit round in half and flatten into rounds.
  • Stuff each round with one piece of the halved banana coins and chocolate chips. Close the round together by pinching at the seam and roll into a ball in your hands.
  • Place the balls in the cinnamon sugar mix and gently toss to coat. Place half the balls in the pan.
  • In a saucepan over medium heat melt the butter and brown sugar until one, stirring occasionally. Set aside to cool.
  • Pour half of the glaze on top.
  • Sprinkle a handful of chocolate chips over top. Then place rest of the balls on top followed by the rest of the glaze.
  • Bake for 40-50 minutes until the crust is a deep dark brown on top. (If the top is browning too much you can cover it with aluminum foil.)
  • Remove from oven and allow it to cool or about 15-30 minutes before turning it over onto a plate.

1 tablespoon plus 1/2 cup packed brown sugar, divided
1 cup warm 2% milk (110° to 115°)
1 cup mashed ripe bananas (about 2 large)
1 large egg, room temperature
2 tablespoons butter, melted
1 teaspoon salt
1 teaspoon ground cinnamon
5-1/4 to 5-3/4 cups all-purpose flour
2 teaspoons banana extract, optional
GLAZE:
2/3 cup packed brown sugar
1/2 cup half-and-half cream
6 tablespoons butter, cubed
COATING:
3/4 cup chopped pecans, toasted
6 tablespoons butter, melted
1-1/4 cups sugar
2-1/2 teaspoons ground cinnamon

1 ripe banana, mashed
½ cup semisweet chocolate chips
1 cup confectioners' sugar
2 tablespoons butter, melted
2 teaspoons heavy whipping cream

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9-inch cake pan with cooking spray.

1/2 c shortening
1 c sugar
2 eggs
1/2 c milk
2-3 ripe bananas, mashed
2 c all purpose flour (or for whole wheat, use whole wheat white flour)
1 tsp baking soda
1/2 tsp salt
2/3 c dark chocolate chips
2/3 c chopped walnuts

Steps:

  • 1. Cream shortening; gradually add sugar, beating at medium speed of electric mixer until light and fluffy.
  • 2. Add eggs, one at a time, beating well after each addition.
  • 3. Stir in mashed bananas, milk and vanilla.
  • 4. Combine flour, soda and salt; add to creamed mixture, mixing well.
  • 5. Stir in chocolate chips and walnuts.
  • 6. Spoon batter into a greased and floured 9 inch loaf pan. Bake at 350 for 55-60 minutes.

• 3 cups (375g) self-rising flour (or 360g AP flour + 1 tablespoon baking powder + 1 1/2 teaspoons salt)

• 1 very ripe banana, chopped
• 1 very delicious chocolate bar (I chose bittersweet), chopped
• Handful of walnuts, chopped

  • Preheat oven to 350F (180C) Grease and flour bread pan, or line with parchment paper. Mix melted ice cream and flour until well combined. Add optional mix-ins. Pour into prepared bread pan. Bake for 1-1.5 hrs. This seems like a lot, but we've essentially made a double loaf in a single pan. If the top starts to brown too much, cover it with aluminum foil and continue to bake. Bread is done when a skewer inserted into the middle comes out clean.
