The rich pudding is made on the stovetop, poured over the bananas and wafers, topped with meringue, and then baked in the oven. Passed down from my grandmother, it is a unique take on a Southern favorite.

1 cup packed brown sugar
1 egg
2 egg yolks
1 tablespoon all-purpose flour
1 ½ cups milk
6 bananas, peeled and sliced
1 (16 ounce) package vanilla wafer cookies
2 egg whites
3 ½ tablespoons white sugar

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Line the bottom of a 1 1/2 quart casserole dish with vanilla wafer cookies. Top with a layer of banana slices. Repeat layers until you reach the top of the dish or run out of bananas. Set aside.
  • In a large saucepan, stir together the brown sugar and flour so there are no lumps. Mix in the egg and egg yolks. Gradually stir in the milk while warming over low heat, stirring constantly until the mixture becomes thick enough to coat the back of a metal spoon. Remove from the heat and allow to cool for about 1 minute. Then, pour the hot pudding evenly over the layers of banana and cookie in the casserole dish.
  • In a separate clean bowl, whip the egg whites with an electric mixer until they can hold a soft peak. Gradually sprinkle in the sugar while continuing to whip until they can hold a firm peak. Use a spatula to spread the meringue over the top of the casserole.
  • Bake in the preheated oven until the meringue has browned, 5 to 10 minutes. Serve warm or at room temperature.

I found this recipe in the October 2004 issue of O magazine. I love to cook the recipes of people I greatly admire--in a small way, to share something simple with them! I'm looking forward to trying Abraham Lincoln's favorite cake. This would be good as a banana pie in a zwieback [crushed zwiebacks and melted butter] crust, too, I suspect...

3/4 cup sugar
1 tablespoon sugar
1/3 cup cornstarch
1 pinch salt
3 cups milk
8 eggs, separated
3 tablespoons butter
1 tablespoon vanilla
3 cups vanilla wafers
4 ripe bananas, thinly sliced
1/2 teaspoon cream of tartar

Steps:

  • Preheat oven to 350°.
  • In a large saucepan, combine 1/2 cup sugar, cornstarch and salt; stir until blended.
  • Mix in milk.
  • Cook over medium heat, stirring constantly until thickened and boiling; boil 1 minute and remove from heat.
  • In a small bowl, whisk egg yolks. Then whisk in about 1/2 cup of the hot custard until blended. Pour yolk mixture back into the saucepan of custard; cook over medium heat, stirring, for 2 minutes.
  • Stir in butter and vanilla until blended.
  • Place vanilla wafers [these could be crushed in a large bag with a rolling pin] on the bottom of a shallow 2-quart casserole dish.
  • Top with layers of banana slices and custard.
  • Repeat layering, ending with custard.
  • In a large mixing bowl, beat egg whites that are at room temperature with 1/4 cup sugar at low speed until frothy. Add cream of tartar; increase speed to medium and gradually beat in remaining sugar. Beat until egg whites hold stiff peaks.
  • Spoon meringue over hot custard immediately, making sure the meringue touches the baking dish on all sides (this prevents shrinking).
  • Transfer to oven and bake until golden, about 20 minutes.
  • Remove pudding from oven and cool 1 hour.
  • Refrigerate at least 4 hours before serving.

Pudding:
4 large eggs
2/3 cup sugar
1/4 cup cornstarch
4 cups whole milk
2 tablespoons unsalted butter
2 teaspoons vanilla extract
Pinch of kosher salt
Assembly:
1 11-ounce box vanilla wafer cookies
3 ripe bananas, thinly sliced
4 large egg whites
1/2 cup sugar

Steps:

  • Pudding:
  • Lightly whisk eggs in a large bowl just to blend. Whisk sugar and cornstarch in a medium saucepan. Gradually whisk milk into sugar mixture and heat over medium heat, whisking often, until very warm to the touch. Gradually whisk half of hot milk mixture into eggs, then whisk egg mixture back into milk mixture in saucepan.
  • Cook, whisking constantly, until thickened and whisk leaves a trail in pudding (it should be the consistency of mayonnaise), about 4 minutes. Remove from heat, add butter, vanilla, and salt and whisk until butter is melted and mixture is smooth.
  • Strain pudding through a fine-mesh sieve into another large bowl. Cover pudding with plastic wrap, pressing directly onto the surface. Chill until cool, about 2 hours.
  • Assembly:
  • Spread one-third of pudding evenly in a 2-qt. baking dish. Top with half of cookies and half of bananas. Repeat layers one more time and top with remaining third of pudding. Cover and chill at least 4 hours.
  • Just before serving, heat broiler. Using an electric mixer on medium speed, beat egg whites until foamy. With motor running, gradually add sugar. Increase speed to medium-high and beat until stiff peaks form.
  • Spoon meringue over pudding and swirl decoratively. Broil until meringue is dark brown in spots, about 1 minute.
  • Do ahead: Pudding (without meringue) can be assembled 2 days ahead. Keep chilled

2 pkg. (3 oz. each) JELL-O Vanilla Flavor Cook & Serve Pudding
4-1/2 cups milk
3 eggs, separated
42 vanilla wafers (1/2 of 12-oz. pkg.)
2 large bananas, sliced
dash cream of tartar
1/3 cup sugar

Steps:

  • Heat oven to 350°F.
  • Beat pudding mixes and milk in medium saucepan with whisk until blended. Beat egg yolks in small bowl until blended. Gradually stir into milk mixture. Bring to full rolling boil on medium heat, stirring constantly. Remove from heat.
  • Arrange layer of wafers on bottom and up side of 2-qt. baking dish. Top with layers of 1/3 of the pudding and half the banana slices. Repeat layers; cover with remaining pudding.
  • Beat egg whites and cream of tartar in medium bowl with mixer on high speed until foamy. Gradually beat in sugar until stiff peaks form. Spread over pudding, sealing to edge of dish.
  • Bake 15 min. or until meringue is browned. Cool.

48 Keebler® golden vanilla wafers, divided
4 cups milk
2 (3 1/2-ounce) boxes cook & serve non-instant vanilla pudding & pie filling (4-serving size)
3 eggs, separated
2 medium bananas, sliced
1/2 teaspoon vanilla extract
1/4 teaspoon cream of tartar
6 tablespoons sugar

Steps:

  • 1. Line bottom and sides of 8 x 8 x 2-inch square or 2-quart baking dish with half of vanilla wafers2. In medium saucepan combine milk and pudding mix. In small bowl beat egg yolks until combined. Stir into pudding mixture in saucepan. Cook and stir over medium heat until boiling. Remove from heat. Stir in banana.3. Spread half of pudding mixture over wafers in dish. Top with remaining wafers, then with remainig pudding mixture. Cover to keep warm.4. In small mixing bowl beat egg whites, vanilla and cream of tartar on high speed of electric mixer until foamy. Gradually add sugar, beating until stiff peaks form. Spread over warm banana mixture. Bake at 350°F for 15 minutes. Cool on wire rack for 1 hour. Refrigerate at least 1 hour or until set. Garnish as desired. Store in refrigerator.
