BANANA PUDDING WITH GRAHAM CRACKERS
I made this recipe when I was craving banana pudding but out of the traditional Nilla® wafers. When I realized the graham crackers would make nice even layers a snap, the idea to make it in an 8x8-inch pan came quickly. It tastes amazing, and the crackers soften quicker than the wafers do. The addition of the Dream Whip® topping mix makes this very creamy and the even layering means you taste all three elements in every bite!

Steps:
- Pour milk, pudding mix, and whipped topping mix into a large bowl; mix with an electric whisk or hand whisk until ingredients are combined and a thick pudding forms.
- Break graham cracker sheets in half to form squares.
- Cover the bottom of an 8-inch square baking pan with 9 graham cracker squares. Layer 1/2 of the banana slices on top in even rows and cover with 1/2 of the pudding mixture, using a spatula to spread it evenly. Repeat layers once more. Sprinkle the top with graham cracker crumbs, if desired.
- Cover and refrigerate until fully chilled, 4 hours or longer. Cut into 9 squares to serve.

DEHYDRATOR CHOCOLATE, PEANUT BUTTER AND BANANA GRAHAM CRACKERS
These are a really different use for your dehydrator. These crackers come out softer and more like cookies. Very tastey sort of reminded me of a protein bar. If you use regular graham crackers they could be shared with your favorite pooch as well. Makes 50 cracker/cookies.

- 1. In a large bowl, mash bananas; cream in peanut butter. Add graham cracker crumbs, peanuts and cinnamon, mixing until well blended. Form dough into a ball. Place on a large sheet of waxed paper and shape into a long rectangle. Wrap waxed paper tightly around the dough and chill 4 to 6 hours or overnight. With a serrated knife, slice dough into 1/4" slices. Place on regular sheets; dry at 145º for 4 to 6 hours or until firm (these will be softer than other crackers, more like cookies). Makes approximately 50 crackers.

BANANA GRAHAM CRACKERS
This is adapted from a honey graham cracker recipe. The thought of banana graham crackers with peanut butter just sounded so good I just had to try to create this recipe.

- Combine dry ingredients in a large bowl. Set aside.
- In a medium bowl, mix melted butter, banana, honey, and molasses; stir to mix. Add vanilla extract.
- Pour banana mixture all at once into flour mixture. Using a fork, stir until mixture is combined with all flour mixture. Knead dough in bowl until all flour is incorporated. Dough will be crumbly. Divide dough into smaller pieces; roll each piece between 2 pieces of waxed paper(or parchment paper) to 1/8" thickness.
- Cut with a 2 1/2" round cookie cutter and transfer to an ungreased baking sheet. Bake in a 325*F. oven for 15-17 minutes or until golden brown.
- Makes about 40 crackers.

- Combine the pudding mix, cold milk, and sweetened condensed milk; whisk til smooth but thickened. Set aside. Whip cream beginning on low speed gradually moving to medium high; whip till fluffy and holds shape.
- Fold whipped cream into pudding. Chill in refrigerator for at least two hours.
- In saucepan over low heat, melt butter. Add sugar and graham cracker crumbs. Continue to heat while stirring constantly for about five minutes until crumbs begin to lump together and harden. Allow to cool thoroughly. The crumbs will become crunchy as they cool.
- Place some graham cracker crumbs on a dessert plate or in a bowl. Add desired amount of banana slices. Top with two scoops of pudding {using an ice cream scoop makes this easy}. Drizzle with chocolate syrup {caramel syrup would be wonderful, too}.
