Steps:
- Preheat oven to 350F (180C).
- To prepare the bread, combine egg, sugars, butter, sour cream and vanilla in a large mixing bowl. Whisk together. Add the bananas and mash together.
- Add flour, baking powder, baking soda and mix lightly to combine. Set aside.
- To prepare the cream cheese filling, mix egg, cream cheese, sugar, and flour in a small bowl.
- To assemble the muffins, spoon a layer of bread batter into a greased muffin tin. Then spoon a layer of cream cheese filling, then top off with another layer of bread batter.
- Bake for 20-25 minutes. Baking times may vary. Muffins are done when a tooth pick inserted in the center comes out clean.
- Allow muffins to cool for 15 mins.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan with cooking spray.
- Combine butter, brown sugar, 1 egg, sour cream, 1/4 cup white sugar, and vanilla extract in a large bowl; whisk until smooth. Mash in bananas using a fork. Whisk in 1 cup flour, baking soda, baking powder, and salt until just combined.

- Preheat oven to 350 and spray all inside surfaces of a 10 inch nonstick tube pan with nonstick cooking spray with flour or grease and flour the inside of pan. Set aside.
- Cinnamon Walnut Streusel: Add walnuts to your food processor and pulse 3 times. Add flour, brown sugar, and cinnamon and pulse a few times to combine. Sprinkle cold butter over top and pulse until the walnuts are chopped and the mixture resembles small pebbles. You may also combined in a bowl and cut butter by hand. Set aside in the refrigerator.
- Cake: In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
- Using a stand or hand mixer, beat butter and sugar until fluffy on medium high speed, about 3 minutes. Add eggs, one at a time, beating just until the yellow disappears after each egg. Mix in vanilla and bananas until just combined.
- Gradually add flour mixture to banana/butter mixture in thirds, alternately with sour cream in between each third. Beat until just combined. Measure out 1/4 c batter and set aside for cream cheese filling. Stir chocolate chips and walnuts in remaining batter until just combined.
- Measure out 1 cup batter to top cream cheese layer and spoon the rest of the batter into the prepared pan.
- To your now empty mixing bowl, add 1/4 c reserved batter, cream cheese, 1 tsp vanilla, and 1/4 c sugar. Beat on medium high speed until smooth and creamy, about 1 minute.
- Spoon cream cheese filling over batter and gently smooth, but do not touch the sides of the pan.
- Spread reserved 1 cup batter evenly over filling (it will be very thin).
- Tap pan on counter a few times to get rid of any air bubbles then sprinkle evenly with cinnamon walnut streusel.
- Bake for 55 to 60 minutes at 350 or until toothpick inserted comes out clean (without inserting in cream cheese). Let baked cake cool on wire rack 1 hour. Gently invert cake onto a baking sheet, remove pan, and invert back onto cooling rack streusel side up. Let cool to room temperature.
- When ready to serve, whisk vanilla glaze ingredients together in a medium bowl and drizzle over cake. Store in the refrigerator for up to 7 days.

SOUTHERN LIVING'S CREAM CHEESE BANANA BREAD
I get so many rave reviews for this banana bread, courtesy of Southern living. My father-in-law will request this every couple of weeks and I can happily oblige due to the over ripe bananas we have in our home. The cream cheese keeps the bread nice and moist and the pecans are a nice added texture. :) I hope you enjoy it as much as we do. One thing to point out I prefer to use Nucoa Margarine, it doesn't burn, it doesn't contain milk or whey either) In the end..it makes a prettier loaf of bread)

- Microwave the cream cheese mixture in 30 second intervals for a total of 5 minutes, stirring between each interval. This helps cook out the moisture so that the mixture doesn't create a large pocket of steam in the bread.
- Preheat oven to 350°F (180°C).
- In a bowl, mash the bananas with a fork.
- Add the eggs and mix until well combined and frothy.
- Add the Greek yogurt and honey, and mix until incorporated.
- Sprinkle in the whole wheat flour, baking soda, and baking powder, and fold the batter together with a spatula.

Yummy! The filling in this banana bread is a really neat surprise when you first cut into this loaf. We did put some nuts, sugar, and cinnamon on the top of the loaf before baking. We enjoyed it while it was still just a little warm and then again when it was entirely cool. Both were tasty, but we must say we liked it a little...

- 1. Mix 1 cup sugar, butter and 2 eggs.
- 2. Add bananas, salt, the baking soda dissolved in sour cream, and 2 cups flour. Mix well and add nuts.

- Bake at 350 degrees for 10-15 minutes or until toasted.
- Beat butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add sugar, beating until light and fluffy.
- Add eggs, 1 at a time beating just until blended after each addition.
- Combine flour and next 3 ingredients; gradually add to butter mixture, beating at low speed just until blended.
- Stir in bananas, pecans, and vanilla.
- Spoon batter into 2 greased and floured 8 by 4 inch loaf pans. Sprinkle remaining 1 cup of pecans evenly over batter in the pans.
- Bake at 350 degrees for 1 hour or until a long wooden pick inserted in the center comes out clean and sides pull away from the pan, shielding with aluminum foil during the last 15 minutes to prevent excessive browning, if necessary.
- Meanwhile, stir together powdered sugar, orange rind, and orange juice until blended.
- Cool bread in pans on wire racks for 10 minutes. Remove bread from pans to wire racks.
- Drizzle orange icing evenly over warm bread and cool for 30 minutes on wire racks.

BANANA CREAM CHEESE BREAD PUDDING
I love bread pudding. I made this recipe when I had some almost too ripe bananas. It is really good hot out of the oven with a scoop of butter pecan ice cream. It reminds me of the Mexican Capirutada my mom used to make.

- 1. Preheat oven to 375 degrees F. Butter a baking dish I use two pie plates because my kids like sprinkles on theirs. Slice bananas into rounds. Pull challah bread apart into bite size pieces.
- 2. In large mixing bowl crack eggs add sugar, salt, cinnamon, milk and vanilla and with a whisk mix until well combined. With your fingers add small chunks of cream cheese. Add bananas and bread in mix until well combined let sit for 10 minutes. Pour into baking dish making sure you get everything in.
- 3. When your oven is done preheating put dish in oven and bake for 55 minutes to an hour. Let cool down and serve with a scoop of ice cream or some whipped cream. M kinds love sprinkles on theirs. You can add nuts as well I don't on mine just on my kids dish. I like my bread pudding to melt in my mouth.
CREAM CHEESE BANANA NUT BREAD
This is my go-to-recipe Banana Nut Bread I have been using for years. I have a good friend whose husband won't eat any other, but she sometimes loses the recipe and has to ask me for it. I'm posting it here in JAP so she can find it easier.

- 1. Preheat oven to 350 degrees.
- 2. Grease and flour 9x5x3-inch loaf pan.
- 3. Beat cream cheese and sugar until smooth.
- 4. Beat in eggs and banana.
- 5. Stir in biscuit mix just until moistened.
- 6. Stir in nuts and/or chocolate pieces, if desired.
- 7. Pour batter into prepared pan.
- 8. Bake for 60-65 minutes or until inserted toothpick comes out clean. If necessary, loosely cover with foil the last 15 minutes of baking to prevent over browning.
- 9. Remove from pan and cool completely.
