This is a wonderful, moist banana cake. This can also be made in mini loaf cake pans also, they freeze very well. This cake is even better the next day.

Number Of Ingredients 12

1/2 cup butter or 1/2 cup margarine
1 2/3 cups sugar (or more or less to suit taste)
2 eggs, slightly beaten
1 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon baking soda
1/3 cup sour cream
1 cup mashed banana (about 3 medium)
2 cups cake flour
2 teaspoons vanilla
2 cups miniature semisweet chocolate chips
1/2-1 cup chopped walnuts (optional)

Steps:

  • Set oven to 350 degrees F.
  • Grease a 9 x 5-inch loaf pan OR 3 mini loaf pans.
  • In a bowl, cream together the butter or margarine and the sugar, until light and fluffy.
  • Add in the eggs and the salt; beat until well mixed.
  • In a small bowl, dissolve the baking powder and the baking soda in the sour cream, and add to the creamed mixture; mix well until blended.
  • With a wooden spoon, stir in the banana pulp.
  • Gradually, add in the flour mixture, vanilla; mix well with a wooden spoon, until well combined.
  • Add in the chocolate chips, and the chopped nuts (if using).
  • Transfer the batter into a prepared baking pan.
  • Bake for 1-1/2 hours (for 9x5" baking pan), or until cake test done.
  • For the mini loaf pans, bake for 45-50 minutes, or until they test done.

4 ripe bananas, peeled
250g caster sugar
2 eggs
140g softened butter
250g plain flour
2 tsp baking powder
100g walnut piece
100g chocolate chip

Steps:

  • Heat oven to 190C/170C fan/gas 5. Line a 900g/2lb loaf tin with baking parchment. In a large bowl, mash together the bananas and the sugar with the back of a fork. Add the eggs and mix well with an electric hand whisk until fully incorporated, then add the butter and mix for a couple mins more to blend everything together. Sieve in the flour and baking powder and fold together with a spatula, then add the walnuts and chocolate chips. Give everything one final mix before tipping into the lined loaf tin.
  • Bake for 1 hr 5 mins or until a skewer inserted into the middle comes out clean. Leave to cool slightly in the tin, then turn out and serve cut into thick slices, either warm or at room temperature. Any uneaten cake will keep in an airtight container for up to 3 days.

Number Of Ingredients 12

2 c all purpose flour
2 tsp baking powder
3/4 tsp salt
1/4 tsp baking soda
1/2 c shortening
1/2 c sugar
2 eggs
1 c mashed banana (about 3 medium bananas)
2 Tbsp milk
1/2 c chopped nuts (walnuts or pecans)
1/2 c crasins (or any dried fruit you prefer)
1/2 c chocolate chips

Steps:

  • 1. In a separate bowl, combine thoroughly the first 4 ingredients, set aside.
  • 2. Cream shortening & sugar till light & fluffy.
  • 3. Add eggs & beat well.
  • 4. Combine banana & milk; add to creamed mixture alternately w/flour mixture,(gently beating with mixer or incorporated by hand) just until smooth after each addition.
  • 5. Fold in nuts, dried fruit and chocolate chips.
  • 6. Turn into a greased and lightly floured 9x5x3 inch loaf pan.
  • 7. Bake @ 350 degrees for 45 to 50 minutes. Check the center of the loaf with a toothpick, if it comes out clean, the loaf is done.
  • 8. Cool for 1 hour before cutting. Serve plain or buttered. Enjoy!

4 ounces butter, softened
1 1/4 cups flour
1 teaspoon baking soda
1 pinch salt
1 teaspoon cinnamon
1 cup sugar
2 large ripe bananas, mashed
2 eggs, beaten
5 tablespoons boiling water
1 cup semi-sweet chocolate chips

Steps:

  • Heat oven to 325°F Sift dry ingredients (not sugar) in medium bowl and set aside. Beat butter and sugar in separate larger bowl until they are light and fluffy. Beat in bananas then eggs. *I usually beat the bananas in a bowl until I need them, rinse it out, then beat the eggs in the same bowl so I have less dishes to wash.* Stir in flour mixture alternately with boiling water until just combined. Stir in chocolate chips. Bake for 1 hr 10 min or until risen and firm to touch. *Most of the times I've made it, it doesn't take the full hour to cook.* Let cool and turn out.

4 cups whole wheat flour
2 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 cup flax seed meal
2 cups ripe bananas, mashed
1 cup dark brown sugar
1 cup Egg Beaters egg substitute
2/3 cup low-fat buttermilk (1.5 %)
1/4 cup unsweetened applesauce
1/4 cup vegetable oil
1 (8 ounce) bag dark chocolate chips

Steps:

  • Preheat oven to 350F.spray 2 loaf pans (8 1/2''X 4 1/2'') with Pam.
  • Combine all dry ingredients mix with a whisk and set aside.
  • In a larger mixing bowl with electric mixer beat bananas and sugar.
  • Then beat in egg substitute.
  • Add buttermilk, oil & applesauce.
  • Stir in dry ingredients and gently mix with a spatula just until combined.
  • Stir in chocolate chips.
  • Pour half the batter iinto each loaf pan.
  • Bake for 55-65 minutes until a toothpick inserted in the center comes out clean.
  • (other than the melted chocolate of course -- check closely for BATTER on the toothpick) when done turn out of the pans onton rack.
  • Cool and slice.
  • (warm banana bread is awesome but if you try and slice it too soon you will squish the loaf a bit).
  • You can change the flavor of "chips". I used Butterscotch and they are great. BUT, I only added 1 cup for the whole recipe, so as not to increase the sweetness/fat/caloric value too much. 1 Cup was just fine!

1 cup granulated sugar
1/2 cup (1 stick) unsalted butter, softened
2 eggs
4 tblsp. sour cream
2 ripe bananas, mashed
1 tsp. vanilla extract
2 cups all-purpose flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
6-12 oz. chocolate chips (as desired)

Steps:

  • Preheat oven to 350. Butter and flour two small loaf pans. (approx. 8"x4") Cream together the sugar and butter. Add the eggs and beat well. Mix in the sour cream, bananas and vanilla. In a separate bowl, combine the flour, baking powder, baking soda and salt. Add the dry mixture to the wet mixture and mix well. Mix in the chocolate chips. Divide the batter between the pans and bake for about 50 minutes or until a toothpick comes out clean. Let the loaves cool in the pans for about 15 minutes and then turn them out onto a rack to cool completely.

Speckled with chocolate morsels, the real trick to this cake was the sour cream. A little sour cream goes a long way when it comes to baking certain cakes I find, and this banana cake is a shining example. It held together nicely. It was moist with just the right amount of density. It didn't even have a strong banana flavor. The spices blended perfectly with the batter.

- 1 teaspoon baking powder
- dash of cinnamon
- dash of nutmeg
- ½ cup white sugar
- ½ cup brown sugar
- 1 teaspoon vanilla
- 2 eggs
- ½ cup canola oil
- 3 ripe bananas
- ¼ cup whole milk
- ¼ cup sour cream
- ½ cup chocolate chips
- brown sugar topping
- 3 tablespoons butter
- 3 tablespoons oats
- 1 tablespoon flour
- 3 tablespoons brown sugar

Steps:

  • Preheat oven to 350 degrees F. Grease a loaf pan and set the pan on a baking sheet. In a large bowl, sift together flour, baking powder, cinnamon and nutmeg. Set aside. In the bowl of your stand mixer, cream sugars, vanilla eggs and oil. Add bananas, milk, and sour cream. Gradually add the dry ingredients on low speed until a smooth batter forms. Stir in chocolate chips and pour batter into the prepared loaf pan. In a bullet blender, or in a small bowl combine all ingredients for the topping and blend together with a fork. Sprinkle over the banana loaf. Bake for about 40-45 minutes or until cake tester comes out clean. Transfer to a wire rack and allow to cool completely or until warm, depending on how you wish to serve it. Best enjoyed with coffee or tea.
