4 large eggs, separated
1 large egg white
2 tablespoons butter
1 cup mashed ripe bananas
1/3 cup sugar
1 tablespoon cornstarch
1 tablespoon lemon juice
1 tablespoon rum
1/4 teaspoon grated lemon zest

Steps:

  • Let egg whites stand at room temperature for 30 minutes. Coat a 1-1/2-qt. souffle dish with cooking spray; set aside., In a small saucepan over medium heat, melt butter. Stir in the bananas, sugar and cornstarch until blended. Bring to a boil, stirring constantly. Cook and stir 1-2 minutes longer or until thickened. Transfer to a large bowl; stir in lemon juice, rum and lemon zest., Stir a small amount of hot mixture into egg yolks; return all to the bowl, stirring constantly. Allow to cool slightly., In a large bowl with clean beaters, beat egg whites until stiff peaks form. With a spatula, stir a fourth of the egg whites into banana mixture until no white streaks remain. Fold in remaining egg whites until combined. Transfer to prepared dish., Bake at 350° for 25-30 minutes or until the top is puffed and center appears set. Serve immediately.

I got this recipe from a friend, who got it at a Weight Watchers meeting. It's so delicious you won't believe you're eating low fat! It doubles perfectly (I never make just one loaf!) and if you don't have enough banana, just use applesauce for the balance. It works like a charm. Enjoy!!! 2 points per 1/16 of a loaf.

2 cups whole wheat flour
1/4 cup brown sugar
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon nutmeg
1 cup mashed ripe banana (approx 2 large)
1/3 cup honey
1/4 cup skim milk

Steps:

  • Preheat oven to 325°F.
  • Grease an 8 x 4 loaf pan with nonstick cooking spray.
  • Combine flour, brown sugar, baking powder, baking soda and nutmeg.
  • Stir to mix well.
  • In a separate bowl, combine banana, honey and milk. Mix well.
  • Add liquid ingredients to dry, stirring just till dry are moistened.
  • Spread mixture evenly in pan and bake 45 to 50 minutes, or until a wooden toothpick inserted in center of loaf comes out clean.
  • Remove bread from oven and let sit for 10 minutes.
  • Invert loaf onto wire rack, turn right side up, and cool before slicing and serving.

1 tablespoon unsalted butter, melted
2 teaspoons white sugar
2 egg whites
2 eggs, separated
1 pinch salt
2 ripe bananas, mashed
1 tablespoon honey, or more to taste
½ teaspoon vanilla extract
½ teaspoon grated fresh ginger root
1 tablespoon sweetened cocoa powder

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Brush 4 1-cup souffle dishes with melted butter; sprinkle the insides of the cups with sugar.
  • Set the egg yolks aside, and place the 4 egg whites into the work bowl of an electric mixer. Beat the egg whites and salt until the whites form soft peaks.
  • Place the 2 egg yolks, bananas, honey, vanilla extract, and ginger into a blender; pulse until smooth.
  • Scoop the banana mixture into a bowl; use a rubber spatula or wire whisk to gently fold 1/4 of the beaten egg whites into the banana mixture. Gently run the spatula through the center of the bowl, then around the sides of the bowl, repeating until fully incorporated. Fold in the remaining egg whites, being careful to keep as much air in the mixture as possible.
  • Spoon the souffle mixture into the prepared dishes; bake in the preheated oven until the souffles have puffed up above the baking dishes and the tops are browned, about 15 minutes. Sift a little sweetened cocoa powder over each souffle for garnish to serve.

1 lb extra lean ground beef
2 medium carrots, cut small
2 medium onions, cut small
3 stalks celery, cut small
3/4 cup water
2 beef bouillon cubes
1 cup water
1 1/2 tablespoons good gravy mix (eg Gravox extra tasty)
salt & pepper

Steps:

  • Put deep pan on stove top on medium high heat.
  • Add mince, break up and slightly brown, this is more for breaking up the meat, so don't overdo it.
  • Add onions, carrots, celery and 3/4 cup water with broken up stock cubes and turn down to medium low and let cook COVERED for about 30 minutes.
  • you might want to check on it once or twice during that time and stir.
  • mix the gravy mix with 1 cup water and, stir in and let thicken.
  • Adjust pepper& salt.
  • This goes well with cooked rice or over noodles.
