3 cups uncooked bow tie pasta
4 cups cubed cooked chicken breast
2 cups chopped tomatoes
1/2 cup chopped red onion
4 bacon strips, cooked and crumbled
1/4 cup crumbled Gorgonzola cheese
1/2 cup olive oil
1/4 cup minced fresh basil
1/4 cup balsamic vinegar
2 tablespoons brown sugar
1 teaspoon minced garlic
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup grated Parmesan cheese

Steps:

  • Cook pasta according to package directions. Drain and rinse in cold water; transfer to a large bowl. Add the chicken, tomatoes, onion, bacon and Gorgonzola cheese., In a small bowl, whisk the oil, basil, vinegar, brown sugar, garlic, salt and pepper. Drizzle over salad and toss to coat; sprinkle with Parmesan cheese.

1 pound cooked ditalini pasta
1/2 cup diced roasted red peppers (from water-packed jar)

1/2 cup white balsamic or white vinegar
2 tablespoons McCormick® Perfect Pinch® Basil & Garlic
seasoning
3/4 teaspoon salt
1 pound boneless skinless chicken breast, halves
8 ounces penne pasta, cooked and drained
1/4 cup toasted pine nuts
1/4 cup McCormick® Bac'n Pieces™ Bacon Flavored Bits
1/2 cup broccoli florets
1/2 cup bell pepper, strips
1/2 cup cherry tomatoes
1/2 cup red onion, slices

Steps:

  • Mix oil, vinegar, Seasoning and salt in medium bowl with wire whisk until well blended. Place chicken in large resealable plastic bag or glass dish. Add 1/2 cup of the vinaigrette; turn to coat well. Reserve remaining vinaigrette for the salad. Refrigerate 30 minutes or longer for extra flavor. Remove chicken from marinade. Discard any remaining marinade. Grill chicken over medium heat 6 to 7 minutes per side or until cooked through, turning frequently. Cut chicken into thin slices. Toss pasta, vegetables and chicken in large bowl with reserved vinaigrette. Sprinkle with pine nuts and Bac'n Pieces. Serve immediately or refrigerate until ready to serve.

1 pound fresh asparagus, trimmed
1 (16 ounce) package bow-tie pasta (farfalle)
¼ cup extra-virgin olive oil
¼ cup balsamic vinegar
1 pound grape tomatoes, halved
1 cup crumbled feta cheese
2 tablespoons chopped fresh basil, or more to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Arrange tofu on a baking sheet.
  • Cook tofu in the preheated oven until cooked through and lightly browned, about 20 minutes.
  • Bring a large pot of lightly salted water to a boil. Add asparagus and cook uncovered until tender yet firm to the bite, 3 to 5 minutes. Drain.

1 cup mayonnaise
1/2 cup fresh basil, chopped
2 tablespoons balsamic vinegar
2 roasted peppers, skinned and chopped
1 lb pasta, cooked al dente, drained and cooled, tossed with
1 tablespoon oil, to prevent sticking
1 cup plain yogurt
1/4 cup parsley, chopped
fresh oregano, to taste
1 tablespoon sugar
1 red onion, chopped
1 cup celery, chopped

Steps:

  • Break tuna into small pieces and place into a large mixing bowl with yogurt, mayonnaise, parsley, basil and oregano.

1 lb cavatappi dry pasta
1 (16 fluid ounce) bottle balsamic vinaigrette
1 lb fresh mozzarella cheese
2 ounces fresh basil, chopped into thin strips
1/2 cup red bell pepper, sliced
5 ounces cherry tomatoes
1/2 cup green onion, chopped
1/4 cup fresh parmigiano, grated
1 avocado
1 English cucumber, chopped in large chunks
fresh ground black pepper
kosher salt

Steps:

  • Boil the pasta until al dente. Strain and rinse with cold water immediately to stop from continued cooking.
  • Once pasta is fulled cooled (as in cold), pour pasta into a large mixing bowl. Add the entire bottle of dressing, the mozzarella chopped into about 1/2 inch cubes, basil, red bell pepper, cherry tomatoes and green onions. Mix together and taste. Add ground black pepper and kosher salt to taste. You'll probably only need very little if any salt. It depends on the brand of dressing you buy.
  • Let sit in the fridge at least 2 hours. Fold in parmigiano cheese, cucumber and chopped avocado right before you serve.

I have been working on this most of the summer. I am using a balsamic vinaigrette called Cheltam House. Most definitely a sweeter vinaigrette than most! I have never liked "dry" pasta salad--I prefer most pasta salads mayo-based, but I love this salad dressing and wanted to try it on something other than a lettuce salad. I also prefer more veggies than pasta, so adjust the pasta to your style. I also hate soggy cheese and tomatoes in any salad, so I only make enough to eat in one sitting.

1 (16 ounce) box pipettes pasta or 1 (16 ounce) box bow tie pasta
1 (8 ounce) bottle balsamic vinaigrette
2 cups chopped ham
2 large tomatoes, chopped and seeded
2 cups lightly steamed asparagus
1 cup chopped black olives
1/2 chopped yellow pepper
1 large carrot, shredded
2 cups shredded smoked gouda cheese

Steps:

  • Clean and chop all veggies.
  • Boil pasta till al dente.
  • Add any veggies that you prefer lightly cooked to boiling pasta in the last 3 minutes of boiling (mine would be asparagus and carrots).
  • Drain pasta/veggies and rinse in cold water to stop cooking.
  • Add all veggies to pasta and mix.
  • Add ham.
  • Pour balsamic vinaigrette onto the pasta and mix--you can use less than the whole bottle but I prefer mine "soupy".
  • Serve immediately with the Gouda sprinkled over the top.

1 tbsp caper , drained
15 peppadew peppers from a jar, chopped
1 celery heart, sliced
140g yellow, red or a mixture of cherry tomato , halved
75ml balsamic vinegar
3 tbsp extra-virgin olive oil
100g bag rocket leaves
good handful basil leaves

Steps:

  • Cook the pasta following pack instructions, then drain and rinse in cold water. After draining again, transfer to a large bowl. Add the remaining ingredients except the basil, season well, and toss to combine. Scatter with basil and serve.
