Chicken sausage, potatoes, carrots and Brussels sprouts are tossed with a sweet and savory maple balsamic glaze, then roasted to perfection in this easy sheet pan meal.

12 ounces chicken and apple sausage, cut into 2-inch slices
1/2 pound Brussels sprouts, halved
1 1/2 cups baby carrots
2 small sweet potatoes, cubed
3-4 Yukon gold potatoes, cubed
1 small red onion, coarsely chopped
1/4 cup olive oil
1/4 cup balsamic vinegar
1/4 cup real maple syrup
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon oregano
Salt and pepper, to taste
Fresh parsley, for garnish

Steps:

  • Preheat oven to 425 degrees. Line a large baking sheet with foil, then spray the foil with non-stick cooking spray.
  • Add the sausage, Brussels sprouts, carrots, potatoes and onions to the baking sheet in an even layer.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, maple syrup, onion powder, garlic powder and oregano. Season with salt and pepper, to taste.
  • Drizzle the vinegar and syrup mixture over the sausage and vegetables, then toss to coat well.
  • Bake for 15 minutes, then stir and bake for another 10-15 minutes, or until vegetables are tender and golden and sausage is cooked through. Garnish with fresh parsley, if desired.

Lovely flavors of the Mediterranean combine in this main dish recipe to serve over mashed potatoes or pasta. Onion, mushrooms, garlic, fresh tomatoes, fresh spinach, cream, and a touch of balsamic vinegar really dress up boneless, skinless chicken thighs, in about an hour.

1 ½ pounds boneless, skinless chicken thighs
salt and ground black pepper to taste
1 teaspoon Italian seasoning, divided
2 tablespoons extra-virgin olive oil
1 cup chopped onion
2 cups chopped mushrooms
1 tablespoon minced garlic
¼ cup chicken broth
6 medium Roma tomatoes - peeled, seeded, and chopped
1 ½ cups roughly chopped fresh spinach
½ cup heavy cream, or to taste
1 tablespoon balsamic vinegar
2 tablespoons shaved Parmesan cheese, or to taste

Steps:

  • Spread chicken thighs on a clean work surface. Pat dry with paper towels and season both sides with salt and pepper. Sprinkle 1/2 of the Italian seasoning all over them.
  • Heat oil in a 12-inch nonstick skillet over medium-high heat. Add chicken thighs and brown for 3 minutes per side. Remove chicken to a plate and keep warm.
  • Add onions to the same skillet and stir up any browned bits from the bottom of the pan. Cook, stirring occasionally, until onions just start to become tender, 3 to 5 minutes. Add mushrooms and cook until they begin to soften, about 4 minutes. Stir in garlic and remaining Italian seasoning. Taste and adjust salt and pepper. Cook and stir for 1 minute.
  • Add chicken broth and return chicken thighs to the skillet. Reduce heat to low, cover, and cook until chicken juices run clear, about 15 minutes. An instant-read thermometer should read 165 degrees F (74 degrees C). Remove chicken to a cutting board and cut into bite-sized pieces.
  • Return chicken to the skillet and increase heat to medium. Add tomatoes and spinach. Cook and stir until tomatoes are heated through and spinach is tender, but still bright green, about 3 minutes.
  • Stir in 1/2 cup heavy cream and balsamic vinegar; bring to a gentle boil. Cook and stir for 3 minutes. If you prefer a creamier sauce, add more cream. Serve with shaved Parmesan cheese.

1 teaspoon garlic salt
ground black pepper to taste
2 tablespoons olive oil
1 onion, thinly sliced
1 (14.5 ounce) can diced tomatoes
½ cup balsamic vinegar
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried rosemary
½ teaspoon dried thyme

Steps:

  • Season both sides of chicken breasts with garlic salt and pepper.
  • Heat olive oil in a skillet over medium heat; cook seasoned chicken breasts until chicken is browned, 3 to 4 minutes per side. Add onion; cook and stir until onion is browned, 3 to 4 minutes.

Very easy and elegant entree. I saw Rachael Ray make this but I couldn't find the recipe so I did it from memory and it came out great. I didn't have enough sausage so I added a few chicken tenders to it. The measurements may not be exact because I just eyeballed everything.

4 -8 links chicken sausage (I used chicken apple sausage)
1 red onion, roughly chopped
2 cups low sodium chicken broth
2 tablespoons extra virgin olive oil
1/4 cup balsamic vinegar

Steps:

  • Put sausage and red onion in a large skillet. Add chicken broth, EVOO, and balsamic vinegar until it comes about half way up the sausages.
  • Cook over medium high heat until all of the liquid is evaporated. If you like balsamic vinegar you may want to add more to make more of a glaze.
  • I served with mashed sweet potatoes and put some of the extra glaze on the potatoes like a gravy!

3 red onions , cut into wedges
3 red peppers , deseeded and cut into quarters
2 tbsp olive oil
2 tbsp balsamic vinegar
8 sausages
250g cherry tomatoes
few thyme sprigs (optional)
1 tbsp clear honey

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the onions and peppers in a roasting tin, drizzle over the oil and vinegar and season well. Roast for 10 mins.
  • Nestle the sausages, tomatoes and thyme, if using, in and around the veg, drizzle over the honey and cook for 25 mins more or so, turning the sausages halfway, until the sausages are cooked and everything is golden and sticky. Serve with mustard mash or crusty bread.

6 chicken thighs
6 chicken drumsticks
3/4 teaspoon pepper
1/2 teaspoon salt
1 tablespoon vegetable oil
3 cloves garlic, chopped
1 (6 ounce) can tomato paste
1/2 cup chicken broth
2/3 cup balsamic vinegar
3 tablespoons honey
1/4 cup thinly sliced green onion

Steps:

  • Sprinkle chicken pieces evenly with pepper and salt.
  • Cook chicken in hot vegetable oil in a large skillet or Dutch oven over medium-high heat 10 minutes or until slightly brown on all sides, turning pieces often.
  • Remove chicken from skillet, and drain on paper towels.
  • Drain excess oil from skillet.
  • Add chopped garlic to skillet, and saute over medium heat 2 minutes.
  • Add tomato paste and 1/2 cup chicken broth, stirring to loosen particles from bottom of skillet.
  • Add 2/3 cup balsamic vinegar and 3 tablespoons honey; increase heat to medium-high, and bring glaze to a boil.
  • Add chicken, reduce heat to medium-low, and cook, uncovered, turning occasionally, 45 minutes to 1 hour or until chicken is done.
  • Spoon balsamic glaze mixture over chicken, and sprinkle evenly with green onion.
