1 tablespoon olive oil
1 brown onion, finely chopped
2 tablespoons crunchy peanut butter
1 tablespoon sweet chili sauce
1 tablespoon ketjap manis
270 ml light coconut milk
8 lamb chops, chops trimmed
2 (350 g) packets egg noodles, cooked (optional)
2 bunches baby bok choy, steamed (optional)

Steps:

  • Preheat oven to 200°C.
  • Heat a non-stick frying pan over medium heat and add oil.
  • Add onion and cook, stirring, for 3 minutes or until soft.
  • Add peanut butter, sweet chilli, ketjap manis and coconut milk. Stir until well combined and bring to the boil.
  • Arrange chops in a single layer in a casserole dish.
  • Pour over sauce and coat the chops well. Bake, uncovered, for 35 minutes or until cooked through.

1 Tbsp peanut oil
12 lamb loin chops trimmed
2 small brown onions sliced thinly
1/2 c peanut butter, crunchy
1/4 c sweet chile sauce
2 Tbsp lemon juice
2/3 c coconut milk, unsweetened
3/4 c water
2 Tbsp fresh coriander (cilantro)
cooked rice

Steps:

  • 1. Heat oil in large frying pan; cook lamb until browned and cooked as desired.
  • 2. Remove lamb from pan; drain excess fat from pan. Add onion to pan; cook stirring until browned.
  • 3. Add peanut butter, chile sauce, lemon juice, and combined coconut milk and water, cook, stirring, until sauce thickens slightly. Return lamb to pan, coat with sauce. Serve sprinkled with coriander.
