2 cups whole milk
1/2 cup long grain rice (Uncle Ben's)
1/2 cup raisins, plump (soaked in hot water for 5 minutes)
1/4 cup butter or 1/4 cup margarine
3 eggs, beaten
1/2 cup granulated sugar
2 cups whole milk
1 teaspoon vanilla
1/2 teaspoon salt
ground nutmeg
ground cinnamon
light cream or heavy milk

Steps:

  • In a heavy medium sized saucepan, bring 2 cups milk, uncooked rice, and raisins to a boil; reduce heat. Cover and cook over very low heat, about 15 minutes or until rice is tender. Remove from heat; stir in butter or margarine till melted.
  • In a mixing bowl stir together the eggs, 2 cups milk, sugar, vanilla and salt. Gradually, stir in the rice mixture into egg mixture. Pour into a 10x6x2' pan or baking dish. Bake in a 325*- for 30 minutes. Stir well; sprinkle with nutmeg and cinnamon. Bake for 15-20 minutes more or until knife in center comes out clean.
  • Serve warm or chilled with cream.

1 cup uncooked white rice
2 cups water
3 eggs, beaten
2 cups milk
½ cup white sugar
1 teaspoon vanilla extract
½ teaspoon salt
⅓ cup raisins
1 pinch ground nutmeg

Steps:

  • Place uncooked rice in a 3 quart saucepan, and add water. Bring to a boil. Reduce heat, and simmer for 25 to 30 minutes.
  • Preheat oven to 325 degrees F (165 degrees C).
  • In a large bowl, combine beaten eggs, milk, sugar, vanilla extract, and salt. Mix well. Stir in rice and raisins. Pour into a 10x6x2 inch baking dish.
  • Bake uncovered for 30 minutes; stir pudding and sprinkle with nutmeg. Bake additional 30 minutes or until a knife inserted halfway between the edge and the center comes out clean.

1 tablespoon butter
3 peaches, cut into chunks
1 cup white rice
2 cups apple juice
1 cup milk
1/2 cup coconut milk
1 cinnamon stick
1 teaspoon vanilla
1 pinch salt
2 tablespoons sugar

Steps:

  • In a large saucepan, melt the butter and add the chopped peaches. Cook over medium heat until the peaches release their some of their juice, about 5 minutes.
  • Stir in rice, apple juice, milk, and coconut milk, cinnamon stick, vanilla and salt. Bring to a boil.
  • Reduce heat to medium, cover, and cook until the rice is tender and most of the liquid is absorbed, about 20 minutes.
  • Discard the cinnamon stick and fold in the sugar. Serve warm or cold.

1 cup cooked brown rice
¼ cup water
1 ½ tablespoons brown sugar
½ teaspoon vanilla extract
1 tablespoon butter
1 pinch ground nutmeg
1 pinch ground cinnamon

Steps:

  • Stir peaches, rice, 1/4 cup water, brown sugar, and vanilla extract together in a saucepan over low heat. Simmer until peaches start to wilt, 3 to 5 minutes. Stir in butter. Sprinkle with cinnamon and nutmeg after plating.
