BAKED POTATO BUFFET
If you are having a buffet, think of baked potatoes. Serve them along with three toppings to choose from. Also, this idea makes a great gift to pass along to someone. Decorate a basket and a sign saying "Baked Potato Kit" and in it put 6 baking potatoes and little jars of toppings which you have labeled and tied with pretty twine.

Steps:
- In three small bowls combine ingredients for each topping; stir till well-blended.
- Cover and store in refrigerator till ready to use.
- About 3/4 hour before use, take them out of the refrigerator.
- If you are using them as a gift, give all three with the potatoes.
- If you are making these for a buffet, you may want to make extra topping to fit your guest list.
- NOTE: Bacon-Cheddar = 1 1/2 cups; Garlic-Pepper = 1/2 cup; Salsa = 1/2 cup.

BAKED POTATO SMORGASBORD
My Prize Winning Recipe! We make this on a Friday to use up left overs, something our family has made for many years, it is a good way to use leftovers or create from things on hand. Put out all the bowls of toppings... and let the creative fun begin! This recipe is using giant potatoes, but you can use any size. We divided our creations into 2-3 portions... I loved the looks on the kids faces when they saw the size of the potatoes! We created more memories... had fun... and ate a wonderful meal.. Awesome! Please remember to have fun... - *** Invite family and friends to your home, or do a "Potato Pot Luck" at church! Easy and fun! We did this years ago at a different church, we made a sign up sheet for all who wanted to attend, we had certain ingredients listed and left "Surprise Us" spots on the sheets... we had an amazing assortment of ingredients! The ingredients in this recipe are left overs and what we had on hand.
- Pick out desired potatoes, amount and size. In this recipe we used HUGE potatoes.
- Wash potatoes, trim off any ugly spots. Poke fork into potatoes several times. Put in 375 degree oven and bake for 1 hour (more if needed).
- Remove from oven to plates.
- Cut potatoes open and flatten out a bit.
- Add butter on top. *** I do not salt the potatoes as there should be enough flavor from toppings.
- For the Polish Potato: Add sour cream, sauerkraut, ham, Polish sausage and cheese.
- Add more sauerkraut (optional), shredded cheddar cheese, bell pepper. Actually, all ingredients are optional, this is just a guideline.
- Sour cream on top and it is ready to serve!
- *** Get creative with what ever toppings you have!
- Put as many or as few toppings on the serving table as you like... our table was crowded!
- Little Evie did not eat this whole plate... she divided it onto plates and shared with two other people! We all like different foods... create memories! Play With Your Food! xo
