1 cauliflower , broken down into florets, core sliced, leaves removed and reserved, thick stems sliced
2 tbsp olive oil
6 shallots , sliced
1 tsp caster sugar
1 thyme sprig
2 tbsp white wine
100g large pasta shapes, such as conchiglioni
20g butter
1 bay leaf
2 tbsp plain flour
600ml milk
100g mature cheddar
50g parmesan (or vegetarian alternative), plus extra to top
nutmeg , grated
50g gruyère or comté
1 tsp white wine vinegar or lemon juice

Steps:

  • Heat oven to 220C/200 fan/gas 9. Toss the cauliflower florets, leaves and sliced core with 1 tbsp olive oil in a roasting tin and season. Roast in the oven for 30-40 mins, or until the cauliflower is turning golden and smelling nutty. While it's roasting, heat 1 tbsp of olive oil in a non-stick frying pan and add the shallots, sugar and thyme. Cook for 10-15 mins until soft, sweet and caramelised. Add the wine and cook for a few more mins until evaporated. Meanwhile, cook the pasta in salty boiling water until just cooked. Drain and set aside.
  • For the cheese sauce, melt the butter in a non-stick saucepan over a medium heat with the bay leaf. Add the flour and cook, stirring, for 2 mins or so, until the roux is starting to bubble. Pour in the milk, little by little, stirring with a whisk, until fully incorporated and you have a smooth, lump-free sauce. Cook for about 10 mins until thickened, and then season with nutmeg and black pepper. Next, add the cheese and stir over the heat until it's melted and smooth. Taste the sauce and adjust the seasoning, adding the vinegar or lemon juice to taste.
  • Tip the pasta and shallots into the cauliflower roasting dish, then pour over the cheese sauce and stir so everything is well coated. Sprinkle over the remaining parmesan, reduce the oven to 180C/160C fan/gas 4 and bake for 20 mins, or until golden. Remove from the oven and allow to settle for about 10 mins, then serve with a crisp chicory salad.

cooking spray (such as Pam®)
3 cups bite-sized cauliflower florets
1 egg
½ tablespoon all-purpose flour
½ cup milk
salt and ground black pepper to taste
2 cups shredded sharp Cheddar cheese
1 pinch ground paprika

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with cooking spray.
  • Place cauliflower in a microwave-safe bowl with 1/2 cup water. Microwave until tender-crisp, about 5 minutes. Drain and transfer to the prepared baking dish.
  • Whisk egg and flour together in a bowl. Add milk, salt, and pepper. Pour over cauliflower florets. Sprinkle Cheddar cheese and paprika on top.
  • Bake in the preheated oven until cheese is melted and cauliflower is soft, 30 to 40 minutes.

BAKED PASTA WITH CAULIFLOWER AND CHEESE



Baked Pasta with Cauliflower and Cheese image

1/2 cup butter
1/2 cup unbleached white flour
1 quart milk, heated
1 1/2 tablespoons Dijon mustard
Pinch of nutmeg, preferably freshly grated
Salt and pepper to taste
1/4 cup vegetable oil
4 cups chopped onions
3 garlic cloves, minced or pressed
1/2 cup fresh basil, chopped (2 teaspoons dried)
1 large head of cauliflower, cut in florets
6 ripe tomatoes, chopped or 3 cups canned tomatoes, drained and chopped
3 tablespoons fresh lemon juice
1 pound medium pasta shells
1 cup freshly grated Parmesan cheese (2 1/2 ounces)
1 1/2 cups shredded mozzarella or mild provolone cheese (6 ounces)
Seasoned bread crumbs

Steps:

  • To prepare the Bechamel sauce, melt the butter in a heavy saucepan on medium heat. Sprinkle in the flour, whisking or stirring constantly, until a smooth pasteis formed. Add the heated milk slowly, a cup at a time, continuing to whisk until the sauce begins to thicken. Add the mustard, nutmeg, salt, and pepper and let the sauce thicken further on low heat. Remove from heat and cover.
  • Saute the onions, garlic, and basil in oil. When the onions are translucent, add the cauliflower and saute for 5 minutes or more. Add the tomatoes and simmer until the cauliflower is tender.
  • Cook the pasta al dente and then drain.
  • In a large bowl, combine the cooked pasta, the Sauteed vegetables, and the lemon juice. Mix in the Bechamel sauce. Put half of the pasta mixture in an oiled baking dish. Sprinkle on half of each of the cheeses. Add the rest of the pasta mixture and then the rest of the cheese. Top with seasoned bread crumbs and bake covered at 375 degrees for about 30 minutes and then uncovered for about 15 minutes or until bubbling and golden on top

CRUSTY BAKED SHELLS & CAULIFLOWER

Kosher salt and freshly ground black pepper
3/4 pound medium shells
Good olive oil
2 1/2 pounds cauliflower, cut into small florets (1 large head)
3 tablespoons roughly chopped fresh sage leaves
2 tablespoons capers, drained
1 tablespoon minced garlic (3 cloves)
1/2 teaspoon grated lemon zest
1/4 teaspoon crushed red pepper flakes
2 cups freshly grated Italian Fontina Val d'Aosta cheese, lightly packed (10 ounces with rind)
1 cup (8 ounces) fresh ricotta
1/2 cup panko (Japanese bread flakes)
6 tablespoons freshly grated Italian Pecorino cheese
2 tablespoons minced fresh parsley leaves

Steps:

  • Preheat the oven to 400 degrees.
  • Fill a large pot with water, add 2 tablespoons salt, and bring to a boil. Add the pasta and cook al dente, according to the instructions on the package. Since it will be baked later, don't overcook it! Drain and pour into a very large bowl.
  • Meanwhile, heat 3 tablespoons of olive oil in a large (12-inch) saute pan over medium-high heat, add half the cauliflower in one layer, and saute for 5 to 6 minutes, tossing occasionally, until the florets are lightly browned and tender. Pour the cauliflower, including the small bits, into the bowl with the pasta. Add 3 more tablespoons of oil to the saute pan, add the remaining cauliflower, cook until browned and tender, and add to the bowl.
  • Add the sage, capers, garlic, lemon zest, red pepper flakes, 2 teaspoons salt, and 1 teaspoon black pepper to the bowl and stir carefully. Stir in the Fontina. Transfer half of the mixture to a 10 x 13 x 2-inch rectangular baking dish. Spoon rounded tablespoons of ricotta on the pasta and spoon the remaining pasta mixture on top. Combine the panko, Pecorino, parsley, and 1 tablespoon of olive oil in a small bowl and sprinkle it evenly on top. Bake for 25 to 30 minutes, until browned and crusty on top. Serve hot.

CAULIFLOWER CHEESE & SPINACH PASTA BAKES



Cauliflower cheese & spinach pasta bakes image

Somewhere between macaroni and cauliflower cheese, these pasta bakes are perfect for a cold day

850ml milk
50g plain flour
50g butter , plus 1 tbsp
1 tsp Dijon mustard
100g extra mature cheddar , grated
25-50g blue cheese
½ tsp finely grated nutmeg
250g penne
1kg cauliflower (2 medium ones), cut into florets
750g frozen spinach (whole leaf), defrosted and squeezed dry
25g toasted pine nuts
4 garlic cloves , 3 sliced, 1 left whole
2 tbsp extra-virgin olive oil
700g jar tomato passata

Steps:

  • For the tomato sauce, cook the sliced garlic in the oil for 1 min, then add the passata. Season, half-cover the pan and simmer for 20 mins until rich.
  • Meanwhile, make the cheese sauce. Put the milk, flour and 50g butter into a pan. Heat, whisking non-stop, until smooth, then bubble for 3 mins, stirring to make sure any flouriness is lost. Cool for 5 mins, then stir in the mustard, most of the cheddar, half the blue cheese and half the nutmeg.
  • Boil the penne and cauliflower for 8 mins in salted water until the pasta is almost cooked and the cauli is tender. Keep 2 tbsp water from the pan, then drain. Melt 1 tbsp butter in a pan, add the whole garlic clove, spinach, remaining nutmeg, salt and lots of black pepper. Stir for 2 mins, then remove the garlic clove.
  • Set aside 300ml cheese sauce and mix the rest into the cauli and pasta. Divide half the tomato sauce between 6 dishes and top with some spinach. Fill with cauli mix, top with more spinach, then the rest of the tomato sauce. Top with the cheese sauce, cheeses and pine nuts. Cover with cling film, cool and chill for up to 2 days or freeze for up to 1 month. To cook, defrost if frozen. Heat oven to 200C/ 180C fan/gas 6. Cook on a baking sheet for 18-20 mins until golden and bubbling. Good with green salad or garlic bread.
