3 tablespoons butter
½ cup all-purpose flour
½ cup milk
2 eggs, beaten
1 teaspoon white sugar
¼ teaspoon salt
¼ lemon, juiced
1 tablespoon confectioners' sugar, or to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Put butter in a 9-inch pie pan. Place pan in the preheating oven until butter is melted, 5 to 10 minutes.
  • Whisk flour, milk, eggs, white sugar, and salt together in a bowl; pour mixture into the hot butter.
  • Bake in the preheated oven until pancake is brown on the edges and a toothpick inserted in the center comes out clean, 20 to 24 minutes. Squeeze lemon over pancake and sprinkle with confectioners' sugar.

4 medium Yukon gold potatoes
1 teaspoon olive oil
2 cloves garlic, minced
1/2 small onion, cut into 1/4-inch dice
1/2 red bell pepper, cut into 1/4-inch dice
1 celery stalk, peeled to remove strings, cut into 1/4-inch dice
2 tablespoons homemade or low-sodium canned chicken stock, skimmed of fat
1/4 cup skim milk
2 tablespoons roughly chopped fresh thyme, plus sprigs for garnish
1 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper
2 large egg whites
3/4 cup plain bread crumbs, toasted
2 tablespoons vegetable oil
Sweet Red-Pepper Sauce

Steps:

  • Place potatoes in small stockpot, cover with water, and bring to a boil. Reduce heat to medium high; gently boil until tender, 40 to 45 minutes. Drain in a colander. Using a towel to hold potatoes, peel while still hot. Pass potatoes through a potato ricer or a food mill into a large bowl.
  • Heat oven to 450 degrees. Meanwhile, heat olive oil in skillet over medium-low heat. Add garlic, onions, red peppers, and celery; saute until vegetables are translucent, about 5 minutes. Add stock; saute 1 minute more. Add vegetable mixture to potatoes along with milk, thyme, salt, and black and cayenne peppers. Form 1/3 cup mixture into 3-inch round cake; transfer to platter. Repeat, making cakes with remaining mixture.
  • In a shallow dish, whisk egg whites until foamy. Place bread crumbs in a shallow dish. Coat cakes in egg whites, then in bread crumbs; transfer to a baking sheet.
  • Pour 1 tablespoon canola oil in a medium nonstick skillet; place over medium-high heat. Add half the cakes; cook until golden brown, 2 to 3 minutes on each side. Return to baking sheet; set aside. Repeat process with remaining tablespoon canola oil and cakes, wiping skillet with paper towel between batches.
  • Place cakes in oven; cook until deeply golden, about 20 minutes. Serve with Sweet Red-Pepper Sauce.

1 egg
salt and pepper
1 tablespoon milk

3/4 cup dry white wine
1/4 cup light brown sugar

  • Scrub potatoes; steam until almost tender. Plunge into cold water, then peel. Grate coarsely.

8 extra-large eggs
1 cup all-purpose flour
1 cup half-and-half
8 tablespoons (1 stick) unsalted butter, room temperature, plus 4 tablespoons, melted, for brushing on the pancakes
For the Topping
4 tablespoons unsalted butter, melted
Confectioners' sugar
2 lemons, cut into wedges

Steps:

  • Preheat the oven to 425°F.
  • In a large blender, combine the eggs, flour, and half-and-half. Blend on medium speed until the batter is fairly thick and smooth, scraping down the sides of the blender container several times.
  • Place 4 tablespoons of the softened butter in each of two 10-inch or 11-inch cast-iron skillets. Place each skillet over low heat and melt the butter.
  • Pour the batter over the melted butter in the skillets, making sure the batter is evenly distributed.
  • Carefully slide the skillets into the oven. Bake the pancakes for 25 minutes, or until puffed and golden.
  • Transfer the pancakes from the skillets to large plates or shallow bowls with a large spatula. Immediately pour 2 tablespoons of melted butter over each pancake. Sprinkle with confectioners' sugar and place wedges of lemon for squeezing on top of the sugared pancakes. Serve immediately.

2 large idaho potatoes, cleaned and grated
1 onion, grated
1 garlic clove, minced
1 scallion, finely chopped
1 teaspoon kosher salt
1/2 teaspoon cracked black pepper
2 large egg whites, whisked with a fork until frothy
8 poached eggs

Steps:

  • Preheat oven to 400°F.
  • In a large bowl, mix together first 7 ingredients.
  • On a nonstick baking sheet, spread 1/4 cup of potato mixture into a pancake about 4 inches in diameter.
  • Fill the sheet with pancakes and spray them with vegetable spray.
  • Bake until crispy, about 10-15 minutes.
  • Turn over, and cook another 10-15 more minutes or until brown and crispy.
  • Top each pancake with two poached eggs
  • Serve with 2 slices of whole grain toast or your favorite toasted bread.

i really love these baked pancakes they are great they taste so good even the kids like these

3/4 c milk
2 Tbsp butter, melted, slightly cooled
1 large egg
1/2 tsp vanilla extract
1 Tbsp sugar
1 c flour
2 tsp baking powder
1/4 tsp salt
1 c blueberries

Steps:

  • 1. preheat oven to 350.
  • 2. lightly grease a 8x8 inch baking dish. in a large mixing bowl, whisk together milk, butter, egg and vanilla.
  • 3. add sugar, flour, baking powder and salt. carefully stir in blueberries. pour batter into pan.
  • 4. bake for 20-25 minutes. serve with butter and maple syrup.
