SIMPLE BUT AWESOME LEMON PEPPER PORK CHOPS
This serves four, but is easily expandable. Very simple and makes the most tender pork chops you will ever eat.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Tear off a generous square of tin foil for each chop, enough to wrap and seal completely. Coat both sides of each chop with lemon pepper.
- Put 1 tablespoon butter and 1 tablespoon olive oil in the middle of each square of tin foil. Put the peppered chops on top of the butter and oil. Put 1 tablespoon of butter and 1 tablespoon olive oil on top of each chop. Add 1 teaspoon Worcestershire sauce over the top of each chop. Wrap each chop tightly and place on middle rack of oven. Bake for 35 minutes.

- Mix salt, pepper, garlic powder and flour together.
- Dredge the pork chops in this mixture.
- Brown the pork chops on both sides in the cooking oil.
- Arrange the pork chops in a 8x8 baking dish and place a lemon slice on each.
- Mix the catsup, water and brown sugar together and pour over the pork chops.
- Bake(uncovered) in a 350 degree oven for 45 minutes to 1 hour until done. Add a small amount of water, if needed, toward the end of baking period.

- Stir together the lemonade concentrate, soy sauce, celery salt, seasoned salt, and garlic powder.
- Place chops in the mixture, cover, and marinate overnight in the refrigerator.
- Preheat your oven's broiler. Remove chops from marinade and place on a broiling pan.
- Broil about 4 inches from the heat source for 5 to 7 minutes per side, or to desired degree of doneness.

- Preheat oven to 325 F (165 C.) In large skillet over medium heat brown chops on both sides.
- Remove chops and place the in a shallow baking dish.
- Combine ketchup, brown sugar,and vinegar.
- Pour mixture over chops, spreading to cover evenly.
- Cut 6 slices from the lemon and lay one slice on top of each chop.
- Squeeeze the juice from the remaining portion of lemon over chops.
- Cover and bake for 30 min.

- Generously season pork chops on both sides with salt and pepper. Let stand for 30 minutes.
- Preheat oven to 425 degrees. Heat enough oil to coat the bottom of a large ovenproof skillet (1 to 2 tablespoons) over medium-high heat. Blot excess moisture off pork chops with paper towels. Sear 2 pork chops on 1 side until crusts are golden, 4 to 5 minutes. Using tongs, brown fatty edges. Flip, and sear for 2 minutes more; transfer to a plate.
- Wipe skillet clean, add oil to coat (1 to 2 tablespoons), and repeat with remaining 2 pork chops.
- Add reserved pork chops to skillet, and transfer to oven. Roast each until an instant-read thermometer inserted into the center reaches 145 degrees, 5 to 7 minutes. Let rest for 5 minutes. Squeeze lemon wedges over pork chops.

- Preheat oven to 350 degrees F (175 degrees C).
- In a small bowl, thoroughly blend soy sauce, vegetable oil, Worcestershire sauce, lemon juice, brown sugar, and ketchup.

Steps:
- In a food processor, combine the lemons (rind & seeds too -- EVERYTHING), sugar and 1 cup water -- process until liquified.
- Strain the mixture.
- Place the lemon mixture & remaining ingredients, (except the chops & the flour) in a large stainless steel saucepan.
- Simmer for 1 hour on medium, stirring often, being careful not to burn.
- Remove from heat & set aside to cool.
- Preheat oven to 325°.
- Dredge chops in the seasoned flour.
- Brown chops in olive oil over med.-high heat until golden brown -- cook in batches, if need be.
- Place chops in roaster & pour lemonade sauce over.
- Cover roaster & place in oven.
- Cook for 1½ hours or until tender.
