An easy Baked Lemon Shrimp with Garlic recipe. Can be prepared in 45 minutes or less.

2 pounds large shrimp (about 30), peeled
2 sticks (1 cup) unsalted butter
1 1/2 teaspoons salt, or to taste
1 tablespoon mined garlic, or to taste
1/2 cup flat-leafed parsley leaves, washed well, spun dry, and chopped fine
2 tablespoons freshly grated lemon zest (from about 2 large lemons)
2 tablespoons fresh lemon juice, or to taste
Accompaniments:
cooked rice
lemon wedges

Steps:

  • Preheat oven to 450°F.
  • In a flameproof baking dish large enough to hold shrimp in one layer melt butter with salt over moderately low heat. Stir in garlic and half of parsley. Add shrimp and bake 5 minutes. Turn shrimp and sprinkle with remaining parsley, zest, and lemon juice. Bake shrimp until just cooked through, 5 to 10 minutes more.
  • Serve shrimp with rice and lemon wedges.

Baked Garlic Lemon Butter Shrimp image

Baked version of garlic lemon butter shrimp - the oven cooks more evenly and slowly, reducing the risk of over cooking the shrimp! Lots of great buttery garlicy sauce for serving over pasta and/or with a crusty bread for sopping.

2 lbs frozen raw shrimp
1/2 lb butter
4 garlic cloves
1 teaspoon salt
1/4 cup chopped fresh parsley
1 teaspoon crushed red pepper flakes
1 lemon

Steps:

  • Preheat the oven to 375.
  • Run the shrimp under water just until they come apart - no need to thaw completely.
  • In a food processor, combine butter (cut into a few cubes), garlic, salt, parsley, red pepper flakes and the juice of the lemon. Pulse a few times until the mixture resembles gravel.
  • Toss shrimp in the seasoned butter mix. Spread onto a baking sheet and bake until the shrimp is opaque (10 minutes or so, depending on the size of the shrimp).
  • Serve as is as an appetizer, or over cooked pasta for a main dish.
