A hearty, flavoursome really quick to prepare and assemble one dish meal. Bill Granger's recipe from the Lifestyle Food Channel.

6 Italian sausages
800 g kipfler potatoes, scrubbed and sliced
1 1/2 teaspoons paprika
1 rosemary sprig
4 garlic cloves, unpeeled
sea salt, to taste
fresh ground black pepper, to taste
2 slices ciabatta
50 ml extra virgin olive oil
flat leaf parsley

Steps:

  • Preheat the oven to 200°C.
  • Slice the sausages into 4cm pieces and place in a large roasting pan.
  • Add the potatoes, paprika, rosemary, garlic cloves, sea salt and pepper.
  • Tear the ciabatta into bite size pieces and add to the roasting tray.
  • Drizzle over the oil and gently toss to combine.
  • Place in the oven and cook, stirring occasionally, for 30-40 minutes or until the potatoes are tender and the sausages and bread are golden brown.
  • Top with continental parsley and serve with a green salad.

Almost all my recipes are carried on through the family from the first generation of our family who arrived on these shores in 1905. Most are simple to make and filling for the tummy especially with 9 children to feed.

2 pound(s) fresh not smoked sausage (i use mix of hot and sweet italian)
3 pound(s) baking potatoes
1 large onion
2 large cloves of minced garlic
1 bunch(es) or to taste..fresh or dry rosemary
3 large bell peppers (i mix up colors)
- olive oil

Steps:

  • I prefer to parboil the potatoes after scrubbing well. Then cut into chunks...not too small While potatoes are boiling, cut sausage into pieces. My preference is about one inch or so.
  • Add coating of olive oil and minced garlic to large baking pan, add potatoes and rosemary and toss in pan to lightly cover potatoes. Add sausage chunks and again toss to make sure the meat is also lightly covered with the rosemary.
  • Bake in 425 degree oven, in about a half hour turn the potatoes and sausage for even browning. At this time add the peppers and onions to the mix and toss in with meat and potatoes. Potatoes should be crisp and golden but not overdone. Sausage obviously should be well-cooked but not overdone. Adding the onions and peppers later keeps them from overcooking.
  • Serve with salad and fresh bread and you have a filling and delicious meal. PS, on a personal note...I don't find it as good the next day. This is just a simple meal that you can adjust with your own preference in sausage as well as veggies but this is our family version.
