These bacon, egg and cheese hashkets are a savory breakfast treat with a twist! Serve it up with some fruit on the side and you've got a perfect start to the day.

4 eggs, lightly beaten
4 tablespoons scallions, diced
4 slices bacon, diced
3/4 cup cheddar cheese, freshly shredded
1 cup Simply Potatoes® Shredded Hash Browns, defrosted

Steps:

  • Pre-heat oven to 350 degrees.
  • Heat small skillet on medium-high temperature.
  • While skillet is heating up, slice bacon in half lengthwise and then dice into medium sized pieces.
  • Place bacon in skillet and cook 5-7 minutes or until just crispy, set aside on plate lined with papertowel.
  • Slice white and light green parts of scallions, set aside .
  • Lightly beat eggs until just blended.
  • Spray four cupcake holes with non-stick spray.
  • Line each greased cupcake hole with enough hash browns to coat all sides.
  • Sprinkle scallion and bacon evenly into each greased and lined cupcake hole.
  • Pour egg mixture into each, filling the rest of the hash brown basket.
  • Sprinkle the cheese evenly amongst each filled cupcake hole.
  • Bake for 15-18 Minutes until cheese is slightly browned and just bubbling.
  • Serve & Enjoy!

This is my family's recipe that has been handed down through the years. We've always used the maple flavored pork sausage but any kind is good. This casserole is a nice and cozy breakfast or brunch meal that everyone will enjoy. It's got the perfect taste with lots of cheese. Yum! Be sure to use a baking dish that is deep enough to cover with aluminum foil.

1 (2 pound) package frozen hash brown potatoes, thawed
1 pound pork sausage
1 small onion, diced
5 eggs
½ cup milk
½ teaspoon onion powder
⅛ teaspoon garlic powder
salt and ground black pepper to taste
12 ounces shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish. Place the hash brown potatoes in the bottom of the baking dish.
  • Heat a skillet over medium heat and cook and stir the sausage and onion until the sausage is crumbly, evenly browned, and no longer pink; drain. Meanwhile, whisk together the eggs, milk, onion powder, garlic powder, salt, and pepper, and pour over the potatoes. Layer with half the Cheddar cheese, the sausage mixture, and the remaining Cheddar cheese. Cover with aluminum foil.
  • Bake in the preheated oven for 1 hour. Remove cover; return casserole to the oven and bake until a knife inserted into the center comes out clean, about 10 minutes. Let stand for 5 minutes before serving.

1 cup diced red pepper
chopped onion
1 (2 lb) bag Simply Potatoes Southwest Style Hash Browns
1 (16 ounce) jar ragu cheesy parmesan pasta sauce with roasted garlic

Steps:

  • Brown and drain 1 lb hot Italian sausage.
  • Saute red peppers and onions until tender.
  • Place thawed hash browns in a greased 13x9 baking dish.
  • Cover Hash browns evenly with sausage, red peppers and onions.
  • Cover all with the entire jar of Ragu Roasted Garlic Parmesan sauce.

1 tablespoon garlic powder
¼ teaspoon cayenne pepper
1 teaspoon onion powder
1 cup shredded parmesan cheese
¼ cup olive oil
12 slices cheddar cheese, cut into 1x3in (2x7 cm) strips
12 slices deli ham, cut into 1x3in (2x7 cm) strips
6 large eggs
fresh chive, chopped, for garnish

Steps:

  • Preheat the oven to 400°F (200°C). Grease a 9x13-inch (23x33-cm) baking dish with non-stick cooking spray
  • Peel the potatoes, then shred on the large holes of a box grater. Transfer to a large bowl of water and swirl around to remove excess starch. Drain and rinse, then place the potatoes in a clean kitchen towel and squeeze until they're completely dry.
  • Add the shredded potatoes to a clean, large bowl with the salt, pepper, garlic powder, cayenne, onion powder, Parmesan cheese, and olive oil. Toss until fully combined.

  • Butter an 11 x 7 inch baking dish.
  • Evenly lay buttered bread in bottom of dish.

1 1/2 cups Simply Potatoes® Shredded Hash Browns
1/3 cup breakfast sausage
1/4 cup shredded onion
5 eggs
1/2 cup breadcrumbs

Steps:

  • Boil four of the eggs for five minutes at a rolling boil then take off the heat and rinse with cold water then peel.
  • Grate the onion with a cheese grater.
  • In a mixing bowl mix together the Potatoes, sausage, onion and one egg.
  • Divide the mixture into four parts and one at a time flatten out 1/4 of the mixture onto the palm of your hand, place the egg in the middle and wrap the mixture completely around the egg.
  • Roll the eggs in bread crumbs for a light coating and then place them on a baking sheet.
  • Bake at 425 degrees Fahrenheit for 20 minutes and enjoy!
