Steps:

  • Bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, about 3 minutes. Drain.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Spread 1/2 of the pasta sauce on the bottom of a 5-inch round casserole dish. Layer with gnocchi and spread the remaining pasta sauce on top. Sprinkle with mozzarella cheese.

Kosher salt and freshly ground pepper
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 1/2 cups whole milk
1 cup low-sodium chicken broth
1/4 teaspoon freshly grated nutmeg
1/2 rotisserie chicken, skin removed, meat shredded (about 2 cups)
1 17.5-ounce package potato gnocchi
1 1/2 cups loosely packed baby spinach
1/4 cup grated parmesan cheese (about 1 ounce)

Steps:

  • Position a rack in the upper third of the oven and preheat to 425 degrees F. Heat the olive oil in a deep ovenproof skillet over medium-high heat. Add the mushrooms, season with salt and pepper and cook, stirring occasionally, until lightly browned, about 4 minutes. Transfer to a plate and wipe out the skillet.
  • Melt the butter in the skillet over medium heat; add the flour and cook, whisking, 3 minutes. Whisk in the milk and chicken broth until smooth; simmer, whisking constantly, until slightly thickened, about 5 minutes. Whisk in 1/2 teaspoon salt and the nutmeg.

1 1/2 pounds russet potatoes
3/4 teaspoon coarse salt, plus more for pasta
1 large egg, beaten
1 1/2 to 2 cups all-purpose flour, plus more for work surface
1/2 cup shredded Fontina cheese
1/2 cup freshly grated Parmesan cheese
Lidia's Basic Marinara

Steps:

  • Place potatoes in a large pot and add enough water to cover. Bring to a boil over medium-high heat and cook until tender, about 30 minutes. Drain and let cool slightly.
  • When potatoes are cool enough to handle, peel and pass through a ricer or food mill, discarding peels. Spread mashed potatoes out on a large baking sheet and season with salt; let cool.
  • Add egg to cooled potatoes and sprinkle with 3/4 cup flour. Gather mixture together and turn out onto work surface; knead, adding more flour as necessary to prevent sticking, until dough comes together. Do not knead too much or add too much flour, as gnocchi will become heavy.
  • Cut dough into three equal pieces. Lightly flour work surface and hands. Roll each piece into a 1/2-inch-thick rope; cut each rope into 1/2-inch pieces. Roll each piece lightly in the palms of your hands. Holding a fork with one hand at a 45-degree angle, use your thumb to press lightly on one piece of dough, starting high on the inside tines of the fork. Roll dough down the whole length of the tines to create ridged gnocchi with an indentation where your thumb was. Repeat process with remaining pieces of dough. Dust gnocchi with flour and place on a large baking sheet.
  • Preheat oven to 375 degrees.
  • Bring a large pot of salted water to a boil over medium-high heat. Add gnocchi to boiling water, cooking in batches if necessary. Once gnocchi rise to the surface, continue cooking about 2 minutes more. Drain.
  • Transfer gnocchi to a small baking dish and add marinara sauce; sprinkle with cheeses. Transfer baking dish to oven; bake until warmed through, about 6 minutes. Serve.

1 teaspoon kosher salt

1 shallot, chopped

1 bay leaf
1/3 pound Gorgonzola Dolce cheese, crumbled
One 17-ounce package gnocchi

Steps:

  • Preheat the oven to 400 degrees F.
  • Mix together the breadcrumbs, Parmesan, olive oil and 1/4 teaspoon salt in a small bowl. Set aside.
  • Heat a medium Dutch oven over medium heat. Add the butter and allow to melt. Add the shallot and remaining 3/4 teaspoon salt and cook, stirring often, until the shallot is fragrant and beginning to soften, about 2 minutes. Whisk in the flour and cook for another minute. Slowly whisk in the milk for a smooth sauce. Add the bay leaf and simmer for 5 minutes, whisking occasionally. Whisk in the Gorgonzola until smooth. Add the gnocchi and stir to coat. Steps:

  • Heat cream in a small saucepan over medium heat until just simmering. Add two-thirds of the cheese; stir until melted. Stir in nutmeg and the pepper. Remove from heat; cover to keep warm.
  • Preheat oven to 400 degrees. Butter an 8-inch square baking dish; set aside. Bring a large pot of water to a boil; add the salt. Steps:

  • Combine milk, 1/4 cup butter, and a pinch of salt in a saucepan; bring to a boil. Whisk semolina into boiling milk, mixing well to prevent lumps. Reduce heat and cook, stirring often, until thickened, 3 to 4 minutes. Remove saucepan from heat. Add egg yolks, 1 cup Grana Padano, and Gruyere cheese; stir well.

1 quart plus 2 tablespoons whole milk
1/2 teaspoon grated nutmeg
Salt
6 tablespoons unsalted butter
1 1/2 cups semolina flour
1 3-ounce piece Parmigiano-Reggiano, grated
3 large egg yolks, lightly beaten
2 tablespoons extra virgin olive oil
2 cloves garlic, sliced
1 medium onion, finely chopped
1-14 1/2-ounce can chopped tomatoes
Freshly ground black pepper

Steps:

  • In a 3- to 4-quart saucepan, combine milk, nutmeg, salt and 4 tablespoons butter. Bring just to a boil, lower heat to medium and immediately start adding semolina in a thin stream, whisking constantly. Keep whisking to make a smooth mixture. Reduce heat to very low and cook, stirring, about 15 minutes. Remove from heat. Stir in half the cheese and the egg yolks.
  • Use some of the oil to grease a baking sheet. Spread hot dough on baking sheet to a thickness of 1/2 inch. Cover with plastic wrap. Refrigerate until very cold, 4 hours or overnight.
  • Heat remaining oil in a saucepan, add garlic and onion, cook until soft and add tomatoes. Simmer gently about 10 minutes. Season with salt and pepper and set aside.
  • Preheat oven to 450 degrees. Use a little remaining butter to grease a shallow baking dish about 9 by 13 inches. Use a 2- to 3-inch round cookie cutter or a glass to cut disks of chilled dough. Keep dipping cutter in cold water to prevent sticking. Lift disks off baking sheet and arrange, slightly overlapping, in baking dish. Scraps can be kneaded briefly and smoothed out to allow for a few additional disks. Sprinkle disks in dish with remaining cheese and dot with remaining butter. Bake about 15 minutes, until lightly browned.
  • Gently reheat sauce. Serve gnocchi with some sauce alongside each portion.

2 pounds Yukon Gold potatoes, cut into large pieces
2 teaspoons salt, divided
1 ½ cups all-purpose flour, or more as needed
4 tablespoons unsalted butter
4 tablespoons all-purpose flour
2 cups chicken stock, warmed
1 cup grated Fontina cheese
1 cup grated Parmesan cheese
6 fresh sage leaves, finely chopped
1 pinch freshly ground nutmeg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Fill a large saucepan with water. Add potatoes and 1 teaspoon salt; bring to a boil. Continue to boil until potatoes are very soft, about 15 minutes. Drain and run through a food mill or a ricer for a nice, smooth consistency. Place potatoes in a bowl and refrigerate until they are cool, 15 to 20 minutes; this will help keep them fluffy.

  • Add in the chicken, mushrooms, gnocchi, and spinach. Stir to coat everything and wilt the spinach. Sprinkle with Parmesan, then transfer the whole shebang to the oven. If using a separate casserole, transfer everything to the casserole, then sprinkle with the Parmesan.
  • Bake until bubbling, about 20 minutes. If you like, turn on the broiler and brown the top for about 3 minutes.

Very quick and easy to make. All you need is the gnocchi (see my Gnocchi recipe), or any other pasta.

300 ml cream
150 g blue cheese, crumbled
125 g prosciutto, coarsely torn
70 g breadcrumbs (1 cup)
50 g parmesan cheese, grated (2/3 cup)

Steps:

  • Bring cream to the boil in a small saucepan, then simmer for 2min or until slightly reduced.
  • Add blue cheese to pan, season to taste with pepper, reduce heat to low-medium then cook, stirring occasionally, for 2-3min or until cheese has melted (don't worry if mixture isn't completely smooth).
  • Spread the gnocchi over the base of a large baking dish, scatter with prosciutto pieces then pour over the blue cheese sauce. Sprinkle with breadcrumbs and parmesan.
  • Bake in 180oC oven for 15-20min or until sauce is bubbling and crumbs are golden.

1 pound Gnocchi (homemade or store-bought, my store-bought Gnocchi said cooked in 2 minutes)
1/4 cup + 2 tablespoons freshly grated Parmesan cheese
1 cup grated Fontal (or Gruyere) cheese
fresh thyme
WHITE SAUCE
1 tablespoon butter
1 cup milk (I used 2%)
1 tablespoon flour
pinch salt
dash of oregano, basil and pepper

Steps:

  • 1.Pre-heat oven to 425°, lightly oil an 8 x 6 inch baking dish. 2.In a large pot of boiling salted water add the Gnocchi, remove as soon as the Gnocchi float (no more than 30 seconds) and drain well. 3.In a medium pot over medium heat melt butter, then add flour and salt, combine with a whisk, add milk slowly and continue to stir until thickened (but not too thick, if it becomes too thick add a little extra milk), stir in oregano, basil and pepper. Remove from heat. Stir in half the Fontal (or Gruyere cheese) and ½ the Parmesan cheese, then gently add the Gnocchi. 4.Place in baking dish, sprinkle with remaining Fontal cheese and Parmesan cheese, top with fresh thyme if desired. Bake for 3-5 minutes then broil for another 3-5 minutes. Let sit a couple of minutes before serving. Enjoy!

2 x 400g cans cherry tomatoes
olive oil, for frying
1 onion, finely chopped
1 tsp chilli flakes
1 tbsp capers, drained
60g black pitted Kalamata olives, roughly chopped
5 anchovy fillets in oil, finely chopped
pinch of sugar
500g shop-bought gnocchi
1 x 125g ball mozzarella, torn

Steps:

  • Blitz one of the cans of tomatoes until smooth and set aside. Heat a glug of oil in a medium-sized saucepan over a medium heat. Add the onion and a generous pinch of salt and fry gently for 8-10 mins until softened and translucent. Tip the chilli and all the tomatoes into the pan, lower the heat, then simmer for 10 mins, uncovered. Fill one of the empty cans a quarter full with water and add this to the sauce. Stir through the capers, olives and anchovies. Season with salt, pepper and a couple of generous pinches of sugar. Cook on a gentle heat, uncovered, for a further 5 mins. Keep warm until needed.
  • Bring a large pan of water to the boil. Add the gnocchi and cook for 2 mins. Drain and toss with the tomato sauce, then tip into an ovenproof dish or shallow casserole. Top with the torn mozzarella and a good grating of black pepper then pop under a high grill for 3-4 mins or until the mozzarella is molten and gooey.

1 (28 ounce) jar marinara sauce (or 32 oz homemade sauce)
16 -20 meatballs
2 cups mozzarella cheese, shredded (optional)

Steps:

  • Boil the gnocchi according to package directions. Drain.
  • Meanwhile, combine the marinara sauce and meatballs in a microwave dish and cook on high for a few minutes until heated through.
  • Combine sauce/meatball mix with the gnocchi.
  • Sprinkle each serving with mozzarella, if desired.
  • If Baking:.
  • Follow steps 1 through 3 and place in a 9x13-inch pan.
  • Top with mozzarella and bake in a 375 degree Fahrenheit oven for about 25 minutes, until heated through.

1 pound ground turkey
1 (28 ounce) jar marinara sauce
2 cups shredded Cheddar cheese
1 cup sour cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, 2 to 4 minutes.
  • Meanwhile, heat a large skillet over medium-high heat. Cook and stir ground turkey in the hot skillet until browned and crumbly, about 5 minutes, making sure not to overcook as meat will continue to brown in the oven. Stir in marinara sauce; remove from heat.
  • Transfer cooked gnocchi to a 9-inch square baking dish using a slotted spoon. Top with meat sauce. Sprinkle Cheddar cheese on top.
