30-MINUTE SEASONED SWEET POTATO / YAM FRIES (BAKED NOT FRIED)
Perfectly zesty sweet potato fries to accompany veggie burgers and a ton of other dishes-- you'll love them even if you're not as big a fan of sweet potatoes!

Steps:
- Scrub the sweet potatoes and leave the skin on (best part.).
- I like using a french fry cutter (it works sort of like those apple corer/slicer things) for this but if you don't have one, just use a knife to cut the potatoes into shoestrings.
- Put the raw fries into a mixing bowl, and pour in the olive oil. Toss well to coat.
- Add the seasonings and toss well again.
- Arrange the fries on a baking sheet and bake at 400F for 10 minutes.
- Turn the fries with a spatula and bake for another 10 minutes.
- Blot any excess oil with paper towels, serve, and enjoy!

SOOOOO I USED THEM FOR STEAK FRIES N USED SOME SEASONN WE LIKE.....THIS IS HOW MY DELICIOUS MEXICAN BAKD FRIED STEAK FRIES WER BORN ;) NEXT TIME I WILL MELT CHEDDAR/MONT JACK CHEESE ...& CHOPPD CHILIS....DID I HEAR SOUP DIPPERS?....OOOOOO BABY !!

POTATO HORS D'OEUVRES (BAKED, NOT FRIED)
Learned to made these back in Home Ec, the early '50s. I find it easier to refrigerate the mixture for about a half hour before shaping into balls and a small cookie scoop makes quick work of shaping the mixture into balls.

Steps:
- Mix all the ingredients together except cornflakes. Roll in 1 inch balls. Roll in the crushed cornflakes. Place on greased cookie sheets and bake at 350 degrees for 25 minutes.
- Makes 8 dozen appetizer-size potato balls. You can also form these in large patties, roll in cornflakes and bake until lightly browned as a side to your entree.

HAM & POTATO HASH WITH BAKED BEANS & HEALTHY 'FRIED' EGGS
Makeover your fry-up with this low-fat, low-calorie ham hash brown and healthier 'fried' eggs - a great brunch or weeknight dinner

- Bring a large pan of salted water to the boil. Add the potatoes and boil for 5 mins until just tender. Drain well and leave in the colander to steam-dry.
- Meanwhile, spray an ovenproof pan with cooking spray. Add the leeks with a splash of water and fry until very soft and squishy. Add a few more sprays of the oil, tip in the potatoes along with the ham, and fry to crisp up a little. Heat oven to 200C/180C fan/gas 6.
- Stir in the mustard, 1 egg and a good amount of seasoning with a fork - break up some of the potatoes roughly as you do. Flatten down the mixture, spray the top with oil, and bake in the oven for 15-20 mins until the top is crisp.
- When the hash is nearly ready, heat 200ml water in a non-stick frying pan with a lid (or use a baking sheet as a lid). When it is steaming (but before it simmers), crack in the remaining 4 eggs and cover with a lid. Cook for 2-4 mins until the eggs are done to your liking. Meanwhile, heat the beans.
- Lift an egg onto each plate, add a big scoop of hash and spoon on some beans.

BAKED FRIED BAKED POTATO
This was a new way to enjoy a potato. You have heard of twice baked potato, but have you ever heard of baked fried baked potatoes? I invented this recipe and my family loved it! It was baked, fried and yummy goodness!

- 1. Preheat oven to 400. Rub olive oil on potato halves. Salt and pepper to taste.
- 2. Wrap potatoes in foil and lay on cookie sheet, bake 30 minutes or until tender but not mushy.
- 3. Heat a tablespoon of olive oil in skillet on medium-low heat. Saute onions, bell pepper till tender. drain on a paper towel.
- 4. Heat canola oil in a deep skillet or deep fryer.
- 5. Add the rest of the season to flour. Add salt and pepper about a teaspoon of each and mix to combine.
- 6. When potatoes are cool enough to handle roll each half into flour and fry till golden brown.
- 7. Lay on cookie sheet and divide the cheese and top potatoes. bake another 5 minutes.
- 8. Place potatoes on a serving platter and top with one tablespoons of sour cream. Top each potato with the onion mixture.
