Rice, cheese, and tomato sauce bake to make a delicious dinner. This versatile dish will make everyone happy. Leftovers make excellent arancini.

¾ cup grated Parmigiano-Reggiano cheese
½ cup dry bread crumbs
3 tablespoons olive oil
1 yellow onion, sliced
1 (23 ounce) jar tomato puree (passata)
1 cup low-sodium vegetable broth
1 cup frozen peas
¼ cup chopped fresh basil
1 tablespoon dried oregano
1 tablespoon dried thyme
1 clove garlic, minced
1 teaspoon coarsely ground black pepper
½ teaspoon red pepper flakes
1 ¼ cups uncooked short-grain white rice
water as needed
1 cup cubed provolone cheese

Steps:

  • Mix Parmigiano-Reggiano cheese and bread crumbs together in a bowl; set aside.
  • Heat olive oil in a Dutch oven over medium heat. Add onion and saute until tender and translucent, about 8 minutes. Add passata, vegetable broth, peas, basil, oregano, thyme, garlic, pepper, and red pepper flakes. Stir, bring to a simmer, and cook for 5 minutes. Add rice; mix well. Cover and simmer, adding a bit of water if necessary to keep rice from sticking to the bottom, until tender, about 18 minutes.
  • While the rice is cooking, preheat the oven to 375 degrees F (190 degrees C).
  • Remove the Dutch oven from the stove and gently stir in provolone cheese. Sprinkle reserved bread crumb mixture on top.
  • Bake in the preheated oven until bubbly and browned on top, about 15 minutes.

1-1/2 cups chicken broth
1/2 cup uncooked long grain rice
1/4 teaspoon Italian seasoning
1/4 teaspoon garlic powder
3 cups frozen chopped broccoli, thawed and drained
1 tablespoon grated Parmesan cheese
1 can (2.8 ounces) french-fried onions, divided
1 pound cod
Dash paprika
1/2 cup shredded cheddar cheese

Steps:

  • In a large saucepan, combine the broth, rice, Italian seasoning and garlic powder, bring to a boil. Transfer to a greased 11x7-in. baking dish. Cover and bake at 375° for 10 minutes. Add the broccoli, Parmesan cheese and half of the onions. Top with fish fillets; sprinkle with paprika., Cover and bake 20-25 minutes longer or until the fish flakes easily with a fork. Uncover; sprinkle with cheddar cheese and remaining onions. Return to the oven for 3 minutes or until cheese is melted.

2 tablespoons water
1 medium onion, chopped (1/2 cup)
3 cups cooked brown or white rice
1 can (14 1/2 ounces) no-salt-added Italian-style stewed tomatoes, undrained
1 teaspoon Italian seasoning, crumbled
6 mackerel, snapper, tilapia, sturgeon or any fish fillets, 1/4 inch thick (about 1 pound)
1 1/2 teaspoons canola or soybean oil
1/2 teaspoon paprika

Steps:

  • Heat oven to 400°. Heat water to boiling in 2 1/2-quart saucepan over medium-high heat. Cook onion in water, stirring occasionally, until crisp-tender. Stir in rice, tomatoes and Italian seasoning; cook until thoroughly heated.
  • Spoon rice mixture into ungreased rectangular baking dish, 13x9x2 inches. Place fish fillets on rice mixture. Brush fish with oil. Sprinkle with paprika.
  • Cover and bake 20 to 25 minutes or until fish flakes easily with fork.
