BAKED COD FISH FILLETS FLORENTINE-STYLE

- Preheat the oven to 425 degrees.
- Melt 2 tablespoons butter in a saucepan. Add the flour, stirring with a wire whisk. Blend well and add the milk and cream, stirring. When thickened and smooth remove from the heat and add the cheese, cayenne pepper, salt and pepper, and blend well. Add the egg, stirring rapidly. Set aside and keep warm.
- Cut away and discard any tough blemishes on the spinach leaves. Rinse well and drain.
- Place spinach in a skillet and cook over medium heat, stirring constantly with a wooden spatula. When spinach is wilted, in about 3 minutes, transfer it to a colander and drain, pressing with the back of the spatula to extract liquid. Set aside.
- With 1 tablespoon butter, grease a baking dish large enough to hold the fish in one layer. Sprinkle 1 tablespoon of the shallots over the bottom. Add the fish and sprinkle with salt and pepper. Add the wine. Bring to a boil on top of the stove, then place in the oven. Bake 10 minutes.
- Meanwhile, heat the remaining butter in a skillet and add the remaining 1 tablespoon shallots, and the spinach, salt and pepper. Cook and stir for one minute, no longer. Smooth the spinach over the bottom of an oval baking dish. Carefully place the baked codfish pieces over the spinach. Cover and keep warm.
- Pour the wine liquid from the baking dish into a saucepan. Reduce it quickly by half. Add this to the cheese sauce and stir. Bring to a boil.
- Spoon the hot sauce evenly over the fish. Sprinkle with cheese and bake, uncovered, until bubbling and the fish is nicely browned on top.

- 1. -Preheat oven to 500°F. (400°F or more) -Grease a shallow baking dish (enough to hold all fish without overcrowding). -Pat dry the fish fillets with kitchen paper. -Season the fillets with salt and pepper to taste (do not over do it because the coating is seasoned as well) -In a bowl, mix all dry ingredients (breadcrumbs + seasoning + herbs + cheese) -In another bowl, mix the melted butter with the lemon juice. -Dip the fish fillets in the butter/lemon mixture then in the breadcrumbs mixture. -Place fillets in a greased baking pan. -Bake uncovered at 500°F for 10-15 minutes, or until fish flakes easily with a fork. (depends on fish type and thickness) **I like to drizzle some olive oil or put few butter nobs on the fillets before baking them, so that the breadcrumbs become crispier and more golden. **Don't expect the same color and crispiness of deep fried fish, but it is a really good and tasty alternative. My family loves it.
BAKED FISH FILLETS

- Preheat oven to 400 degrees. Generously grease a shallow 1-quart baking dish. Melt shortening in heavy medium skillet over medium heat. Add onion and pepper; saute until golden. Stir in flour, brown sugar, marjoram, salt, thyme, and pepper until smooth. Very gradually stir in tomatoes. Bring to a boil, stirring constantly until sauce has thickened. Arrange fish in baking dish; top with sauce. Place on rimmed baking sheet and bake 12 to 15 minutes or until fish flakes easily.

HERB AND NUT CRUSTED BAKED FISH FILLETS
This is my favourite recipe for oven baked crusted fish fillets. I never really measured amounts, so the ratio herbs-parmesan-nuts as well as the total amount is an educated guess. I've so far used all kinds of nut mixes, you can even add in some ground sesame seeds. It's great with salad, but also with spinach, and I've also made it on the side of oven baked vegetables.

- Preheat oven to 220°C (425°F) and grease a baking dish which is large enough for the four fillets, then pour the lemon juice over the fillets and let them sit while preparing the crust
- In a bowl, combine chopped herbs, nuts, parmesan and olive oil, a dash of salt and pepper to taste. Mix well with a fork and add more oil if needed until you have kind of a paste.
- Pat the fillets dry, lightly salt them (skip that if you want less salt) and place them in the greased dish, they should not overlap each other!
- Distribute the paste over the fillets until they are completely covered
- Bake for about 10 minutes, the shortly remove to place some butter flakes on top of the crust. Put back into the oven and bake for additional 10-15 minutes
- Serve with a large bowl of salad and enjoy
