1 pound farfalle pasta
2 heads broccoli, trimmed to florets (about 4 cups)
1/4 cup extra-virgin olive oil
4 tablespoons butter
3 garlic cloves, chopped
5 anchovy fillets, diced
1/4 teaspoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup grated Parmesan

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook, stirring occasionally. After 5 minutes, add the broccoli florets to the pasta and stir and cook for another 4 minutes. Drain pasta and broccoli, reserving 1 cup of the pasta water.
  • Meanwhile, in a large skillet, heat the olive oil and butter over medium heat. Add the garlic, anchovies, and red pepper flakes and cook for 5 minutes. Add the broccoli, pasta, salt and pepper and toss. Add some of the reserved pasta water, if necessary, to make a light sauce. Transfer to a serving platter and sprinkle with Parmesan.

Giada De Laurentiis made this on her show and it looked soooo good! I could smell it through the tv! I have edited this recipe to cut the fat content and try to lighten the recipe. I think this should work better. EDITED: I made this for dinner tonight, but I had to make it with "corkscrew" pasta (DSS ate the bowties for a snack). I think it worked wonderfully...the ridges held the sauce nicely. This is a great dish and I will be making this often. The pepper does sneak up on you, so beware!! I also only used 3 anchovy fillets, which I found to be the perfect amount!! Adds a very nice depth to the dish.

1 lb farfalle pasta, uncooked
3 cups broccoli florets
1/4 cup Italian dressing
1 1/2 lbs boneless chicken breasts
2 garlic cloves, minced
2 teaspoons crushed red pepper flakes
2 cups marinara sauce
4 ounces cream cheese
parmesan cheese

Steps:

  • cook pasta according to package, adding broccoli during last 3 minutes of cooking time.
  • meanwhile, heat dressing in skillet, add garlic, chicken and crushed red pepper.
  • cook chicken about 5 minutes each side or until slightly browned.
  • drain pasta and return to pan.
  • add marinara and cream cheese to chicken, cook until cream cheese is melted.
  • add pasta to chicken mixture cook 3 min longer.
  • garnish with parmesan cheese.

1 lb hot Italian sausage
1/2 cup olive oil
4 garlic cloves, minced
1/2 teaspoon salt
1 (16 ounce) package farfalle pasta
1 (16 ounce) package frozen broccoli
1/2 cup grated parmesan cheese

Steps:

  • Over medium heat, brown sausage, breaking up with back of spoon as you cook. Drain and set aside.
  • To same pan add olive oil and garlic, saute until light golden.
  • Bring large pot of water to the boil, add salt and pasta and cook for 8-10 minutes or until al dente. 3 minutes before the end of the cooking time, add broccoli; drain pasta and broccoli.
  • In large serving plate, toss together sausage, olive oil with garlic, pasta and broccoli. Add parmesan cheese and toss again lightly before serving.

Broccoli florets and seasoned chicken breast tossed in a creamy cheese sauce with farfalle (bow-tie pasta). I generally don't measure when I cook so all measurements are approximate. Feel free to add less of more of anything to suite your taste.

2 cooked boneless skinless chicken breasts, diced
2 1/2 cups broccoli florets
1 1/2 tablespoons butter
1 1/2 tablespoons flour
1/2 teaspoon garlic powder
1/4 cup dry white wine
1 cup chicken broth (or 1 cup water with 2 tsp liquid chicken boullion)
1/2 cup cream
1 cup old cheddar cheese, grated
3 -4 cups farfalle pasta

Steps:

  • For the chicken, cook however you want. Grilled, baked, fried, poached. I prefer to seanson with 1 tsp of italian seasoning and grill, but this you can do to your personal preference.
  • Bring a pot of water to a boil. Salt boiling water and cook pasta until done.
  • Meanwhile, steam broccoli florets. I do this in the microwave just to cut down on time. Place broccoli in a bowl with about an inch of water. Cover the bowl with plastic wrap. Make a slit in the plastic for steam to escape. Microwave for 1 1/2 minutes or until desired tenderness is reached.
  • Melt butter in a small pot on Medium-low heat. Add flour and garlic powder and whisk to form a roux. Cook for a few minutes. Add wine and whisk until it is evaporated. Add in chicken stock and then the cream, whisking the whole time.
  • **You need to work quick once you add the wine. If your pot is too hot when you add the wine it can turn your roux into a dough which won't mix into your liquids well.
  • Allow mixture to cook until it begins to thicken. Whisking often to ensure it does not burn. Once thickened add in cheese.
  • **whisk in a zig zag motion to ensure that the grated cheese doesn't turn into a ball in the sauce.
  • Toss pasta with broccoli and chicken and serve.
