1 cup apple juice
12 pitted dates, coarsely chopped
6 cloves garlic, coarsely chopped
4 tablespoon honey
4 tablespoon olive oil
1 teaspoon kosher salt
8 large bone-in, skin-on chicken thighs, about 3 pounds

Steps:

  • Preheat oven to 400° F. Lightly spray a 9x13-inch baking dish. Prepare glaze: In a food processor, combine apple juice, dates, garlic, honey, olive oil, and salt. Pulse until fairly smooth. In a large bowl, combine chicken and glaze; toss to coat well. Transfer to the prepared baking dish and bake for 35 to 40 minutes, or until chicken reaches 175°F internal temperature. Serve with Whole Wheat Stuffing with Leeks.

1 whole chicken (about 5 pounds), cut into 10 pieces ( watch video)
Coarse salt and freshly ground pepper
3 tablespoons extra-virgin olive oil
1 lemon, quartered
1 orange, quartered, plus 1/2 cup fresh juice (from 2 to 3 oranges)
1/4 cup dry white wine, such as Sauvignon Blanc
12 large soft dates, such as medjool or khadrawi, halved and pitted
3 sprigs thyme
1 cup large green olives, such as Cerignola

Steps:

  • Preheat oven to 450 degrees. In a large roasting pan, season chicken with salt and pepper; drizzle with oil. Squeeze lemon and orange over chicken, then add fruit to pan. Add wine, orange juice, half of dates, and thyme. Roast 25 minutes.
  • Remove pan from oven; rotate chicken pieces if browning unevenly. Add olives and remaining dates. Roast until a thermometer inserted in chicken breast (avoiding bone) registers 160 degrees, about 15 minutes more. Transfer chicken and citrus to a platter.
  • Place roasting pan over high heat, mashing some of dates with the back of a wooden spoon, until sauce is reduced and thickened, about 3 minutes. Pour over chicken; serve.

2 1/4 lbs boneless skinless chicken thighs (12 thighs)
1/2 cup red wine vinegar
3 Tbsp jarred capers (do not drain)
2 Tbsp minced garlic
2 Tbsp dried oregano
1 tsp salt
1 tsp freshly ground black pepper
3 bay leaves
Two 9-oz boxes frozen artichoke hearts, thawed
12 large pitted green olives, halved
12 large pitted dates, halved
1/4 cup dark brown sugar (not packed)
3/4 cup dry white wine

Steps:

  • The night before, toss thighs, vinegar, capers and their brine, garlic, oregano, salt, pepper and bay leaves in a large bowl. Cover and refrigerate overnight. The next day, position rack in center of oven and preheat oven to 350F. Add chicken thighs and all their marinade into a large roasting pan. Sprinkle artichoke hearts, olives, dates and brown sugar over and around thighs. Drizzle with wine. Bake uncovered 1 hour, basting often with pan juices. Let stand 5 minutes before serving. Serving size: 1 chicken thigh plus 1/3 cup vegetables and sauce

1200 g chicken (½ chicken)
80 g runny honey
2 lemons, juice of
50 ml olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon smoked paprika
1 big onion, finely chopped
4 garlic cloves, minced
2 tablespoons olive oil
40 g butter
4 teaspoons ras el hanout spice mix, blend*
1 teaspoon cayenne pepper
240 ml water
130 g green olives, without pits, halved
6 dates, without pits, chopped
1 tablespoon ground cinnamon or 1 cinnamon stick
2 teaspoons ground ginger
2 teaspoons black peppercorns
1 teaspoon ground turmeric
1/2 teaspoon cardamom pod (seeds from about 10 pods)
2 1/2 tablespoons cumin
2 tablespoons ground coriander

Steps:

  • In a bowl, whisk the honey, lemon juice, olive oil, salt, pepper and paprika together. Pour it over the chicken and let it marinate for at least 1 hour or overnight.
  • Sauté, over a medium flame, onion and garlic in olive oil and butter for about 3 - 4 minutes.
  • Add Ras el Hanout and cayenne pepper. Stir until fragrant.
  • Add water, halved olives and chopped dates, and cook covered for 20 minutes. Uncover the pan and let the sauce reduce until thickened and syrupy. Set aside.
  • Meanwhile, take the chicken out of marinade and arrange it on a baking sheet. Bake in the oven at 210 °C for 30 minutes. Then, lower the temperature to 180 °C and cook for another 20 minutes until the skin is golden brown and the chicken is cooked through.
  • Serve with olive and date sauce over Basmati rice.
  • *If you don't have it, whisk your own version: blend equal parts of ground cinnamon, cumin,ground coriander, ground ginger, ground turmeric, saffron and ground cardamom.

1 cup sour cream
32 buttery round crackers
¼ cup chopped onion

4 boneless chicken breast halves with skin
salt and ground black pepper to taste
1 pinch cayenne pepper, or to taste
2 teaspoons herbes de Provence
2 tablespoons olive oil
¼ cup sliced shallots
½ cup pitted and sliced green olives
½ cup brine-cured pitted olives, such as Kalamata, halved lengthwise and brine reserved
1 cup chicken broth
1 lemon, zested and juiced
½ teaspoon cumin
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons cold butter, cut into four pieces

Steps:

  • Season skin-side of chicken with salt, black pepper, and cayenne pepper. Turn breasts over and season skinless side with salt, black pepper, cayenne, and herbes de Provence. Turn again so that the skin-side is facing up; rest for 10 minutes.
  • Heat olive oil in a large skillet over high heat. Place chicken skin-side down in hot oil. Reduce heat to medium-high and cook chicken until skin is well-browned, about 5 minutes. Turn chicken and cook until just browned, about 2 minutes; transfer to a plate.
  • Reduce heat to medium. Cook and stir shallots in the hot skillet until just softening and golden brown, about 2 minutes. Stir olives into shallots and cook until fragrant, about 30 seconds.
  • Pour the chicken broth into the skillet; bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Add lemon juice, 2 tablespoons of the reserved olive brine, lemon zest, and cumin; increase heat to high and cook until sauce is reduced by half, 2 to 3 minutes.
  • Reduce heat to low and return chicken, skin-side up, to the skillet. Cover the skillet with a lid and cook until no longer pink in the center and the juices run clear, about 5 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken to a plate and cover with aluminum foil.
  • Stir parsley and butter into sauce, stirring continuously until butter is melted and sauce is shiny. Spoon sauce over chicken.

2 tbsp olive oil
1 large onion , finely chopped
2 garlic cloves , finely sliced
8 large boneless, skinless chicken thighs
1 large rosemary sprig, leaves picked and finely chopped
2 tbsp sundried tomato paste
2 x 400g cans chopped tomatoes
1 tbsp clear honey
100g pitted green and black olive with herbs
2 tbsp caper
small bunch flat-leaf parsley , roughly chopped
rice , to serve

Steps:

  • Heat the oil in a large saucepan or flameproof casserole dish on a medium heat, add the onion and cook for a few mins. Add the garlic and cook for 1 min more. Remove the onion and garlic from the pan and set aside on a plate.
  • Turn up the heat, add the chicken and cook for a few mins each side until golden.
  • Return the onion and garlic to the pan with the remaining ingredients. Cover and cook for 20 mins until the chicken is cooked through, juicy and tender, and the sauce is rich and thickened. Serve with rice.

3 garlic cloves, minced

3 tablespoons all-purpose flour
4-1/2 cups reduced-sodium chicken broth
1/2 ounce semisweet chocolate, coarsely chopped
6 cups shredded cooked chicken
12 corn tortillas (6 inches), warmed
1 cup sliced pimiento-stuffed olives
4 cups shredded Monterey Jack cheese

Steps:

  • In a large saucepan, saute 1 cup onion in oil until tender. Reduce heat to low. Add the garlic, salt, oregano, cumin and cinnamon; cover and cook for 10 minutes.
