Baked Artichoke and Jalapeño Cheese Spread image

Pretty red bell pepper adds color to hot artichoke spread, while pickled jalapeno slices add some spice.

1 package (8 oz) cream cheese, softened
1/2 cup mayonnaise or salad dressing
1 jar (6 oz) marinated artichoke hearts, drained, coarsely chopped
1/4 cup finely chopped red bell pepper
8 to 10 Old El Paso™ pickled jalapeño slices (from 12-oz jar), drained, chopped
1/2 cup grated Parmesan cheese
1/3 cup Progresso™ panko crispy bread crumbs
72 water crackers

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
  • In medium bowl, stir together cream cheese and mayonnaise. Stir in artichokes, bell pepper and jalapeños. Reserve 1 tablespoon of the cheese; stir remaining cheese into artichoke mixture.
  • Spread cheese mixture evenly in bottom of pie plate. Sprinkle evenly with bread crumbs and reserved tablespoon cheese.
  • Bake about 20 minutes or just until top is lightly golden. Serve warm with crackers.

Delicious sounding! How can you go wrong with cheese and olives?! Kasseri is a greek cheese made from either sheep's or goat's milk; it has a sharp, salty flavor and a cheddar-like texture. Taken from BH&Gardens Holiday Appetizers 1999 and posted for ZWT.

2/3 cup kalamata olive (pitted and quartered)
12 ounces kasseri cheese (or scamorze cheese)
2 tablespoons snipped fresh oregano
1 garlic clove, minced
1/4 teaspoon crushed red pepper flakes
French bread, apple slices or cracker

Steps:

  • Preheat oven to 450 degrees; cut cheese into 1/2-inch-thick slices.
  • Layer cheese in the bottom of a shallow 1-quart quiche dish or a 9-inch pie plate, overlapping if necessary.
  • Toss together the olives, oregano, garlic, and red pepper.
  • Sprinkle over the cheese.
  • Bake for 8 to 10 minutes or until cheese just begins to melt.
  • Serve immediately on bread, apples, or crackers; rewarm cheese as needed.

This spread is a hit! I had it at an office party and I had to have the recipe! It was one of the first things to disappear. I added my own condiments such as black olives and sour cream to make it even better! Great to take for a party, potluck, or outdoor barbecue!

2 tablespoons yellow cornmeal
1 tablespoon chili powder
3 (24 ounce) packages cream cheese, softened
2 large eggs
2 teaspoons garlic powder
1 1/2 teaspoons ground cumin
2 (8 ounce) cans diced green chilies
1 cup sliced green onion, divided (about 8)
1 jar salsa, divided (Mild, or any flavor)
2 cups shredded cheddar cheese, divided
sliced black olives
sour cream
assorted crackers or sliced baguette

Steps:

  • Preheat oven to 325° F.
  • Heavily spray bottom and side of 9-inch springform pan with non stick cooking spray.
  • Combine corn meal and chili powder; sprinkle over bottom and side of prepared pan.
  • Beat cream cheese, eggs, garlic powder, and cumin in large mixer bowl until smooth; stir in chiles and 1/2 cup green onion.
  • Pour half of batter into pan.
  • Spoon 1 cup salsa over top of batter; sprinkle 1 1/2 cups cheddar cheese over salsa.
  • Spread remaining batter over top of cheese.
  • Bake for 55 to 60 minutes or until edges are set but center still moves slightly.
  • Cool completely in pan on wire rack; remove side of springform pan.
  • Spread remaining salsa over top; sprinkle with remaining cheese and green onion.
  • If desired garnish with black olives and sour cream.
  • Serve with tortilla chips, crackers, or sliced baguette.

This is a little experiment I made that wound up being a total hit at a company party. I really just started throwing stuff together that sounded good and cheesy for an appetizer because I forgot to make one.

2 (8 ounce) packages cream cheese, softened
12 ounces fresh mozzarella, diced
½ cup mayonnaise
2 cups minced fresh basil
3 ounces green onions, chopped
1 tomato, chopped
2 tablespoons minced garlic
1 (16 ounce) loaf garlic sourdough bread, sliced in half lengthwise

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Place cream cheese in a microwave-safe bowl; heat in microwave until softened, 1 to 2 minutes. Stir mozzarella cheese and mayonnaise into cream cheese; heat in microwave until mozzarella cheese is melted, about 2 minutes.
  • Stir basil, green onions, tomato, and garlic into cheese mixture; spread onto sourdough bread slices. Arrange bread slices on a baking sheet.
  • Broil in the preheated oven until cheese is golden brown and bubbling, 3 to 10 minutes. Cool for 1 to 2 minutes before serving.
