BAKED CAMEMBERT WITH CHERRY JAM
Here's a wonderfully easy way to elevate an impromptu gathering: Scatter herbs over a round of your favorite soft cheese-any mild, creamy Brie or Camembert is perfect-add a small pour of vermouth for flair, and bake it for 10 minutes. Spoon on sour-cherry jam, top with nuts, and ta-da! Molten magic to put out with whatever crudités, crunchy fruits, or crackers you have on hand.

Steps:
- Preheat oven to 350°F. Place cheese on a piece of parchment-lined foil and make a small slit in top, about 1/2 inch long. Sprinkle with garlic, thyme, and bay leaf. Drizzle with vermouth. Wrap loosely in foil and place on a baking sheet. Bake 10 minutes, then remove and discard foil.
- Open parchment and dollop cheese with jam. Return to oven and bake until cheese is molten and jam is warm, 2 to 4 minutes more. Sprinkle with nuts. Serve with desired accompaniments.
BAKED CAMEMBERT WITH APRICOTS AND ALMONDS
This appetizer will not last long once you put it out! It's a favorite for special occasions in our house. You can substitute Brie for the Camembert if you wish. You can also try different jams such as blackberry or raspberry.

Steps:
- 1. Preheat oven to 400. Place Camembert in a small round casserole.
- 2. Chop almonds finely and mix with the Apricot Jam. Spread evenly over the Camembert.
- 3. Cover tightly with foil before baking. Camembert should be fully melted within 10-15 minutes. Check after 10 minutes.
- 4. Serve with sliced French Bread, crackers, sliced pears or apples. If desired, pour the schnapps over the cheese immediately after taking out of the oven.
