1 round (8 ounces) Brie cheese
1/2 cup dried cherries
1/2 cup chopped walnuts
1/4 cup packed brown sugar
1/4 cup brandy or unsweetened apple juice
French bread baguette, sliced and toasted or assorted crackers

Steps:

  • Preheat oven to 350°. Place cheese in a 9-in. pie plate. Combine cherries, walnuts, brown sugar and brandy; spoon over cheese., Bake 15-20 minutes or until cheese is softened. Serve with baguette.

1 lb. frozen cherries
1/3 c. granulated sugar
1/4 c. freshly squeezed lemon juice
1/4 c. water
1 tbsp. cornstarch
1 7-oz. wheel brie
Graham crackers, for serving

Steps:

  • Preheat oven to 350°.
  • Make cherry compote: In a small saucepan over high heat, combine cherries with sugar, lemon juice, and water. Bring to a boil, stirring to dissolve sugar, then immediately reduce heat to low. Add cornstarch and simmer until cherries are tender and sauce is thickened, stirring occasionally, 7 to 8 minutes. Remove from heat.
  • Place Brie into a baking dish and top with cherry compote. Bake until cheese is warm and melty, about 15 minutes.
  • Serve warm with graham crackers.

BAGUETTE STUFFED WITH BRIE AND CHERRIES



Baguette Stuffed with Brie and Cherries image

1 pound fresh Bing cherries, pitted and halved
1/2 cup good-quality Port wine
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
5 sprigs fresh thyme
1 crusty French baguette
3 ounces Brie, sliced into 1/2-inch slices
1 sprig fresh thyme

Steps:

  • For the compote: In a small saucepan on medium-high heat, add the cherries, wine, salt, pepper and thyme and stir. Bring to a boil, then reduce the heat slightly to medium. Continue to cook at a rapid simmer until the liquid is reduced by half, 25 to 30 minutes. Turn off the heat and let cool, then remove the thyme sprigs.
  • For the baguette: Preheat the oven to 400 degrees F.
  • Using a paring knife, cut a deep "v" on the top of the baguette. Pull out some of the soft bread to create a deep crevice. Place the Brie slices into the crevice, overlapping each slice. Transfer to a baking sheet.
  • Bake until the cheese is melted and the bread is slightly toasted, 5 to 7 minutes. Transfer to a cutting board. Spoon the cherry compote over the melted Brie. Slice into thick slices, garnish with the remaining thyme sprig and serve.

An easy to prepare treat that has become a staple at our gatherings. For a finger-friendly treat, scoop small amounts of brie and cherry mixture into puff pastry shells. (Either purchased or homemade) Top with almonds. Makes 48 individual servings in the puff pastry shells.

6 -8 ounces brie cheese (a round or wedge)
1 cup cherry preserves
1/4 cup brown sugar
1/2 cup slivered almonds, toasted

Steps:

  • Remove wrapping from brie, and also the rind if desired.
  • Place the brie inside an oven-safe casserole dish or serving platter that has been lightly greased. ( I use cooking spray).
  • Toast the slivered almonds until golden brown and aromatic (350 degrees, ungreased pan, ten minutes OR add almonds to 1 T. butter and microwave for 4-5 minutes) Regardless of your method, stir them several times while toasting.
  • Mix preserves and brown sugar. Pour over the brie.
  • Top with toasted almonds.
  • Bake in a 350 degree oven for 10-15 minutes, or until it starts to look gooey.
  • Serve with toasted baguette slices, crackers or apple slices.

1 (7 to 8-inch) wheel brie cheese
1/4 cup dried cherries
1/4 cup sliced toasted almonds
3 tablespoons brown sugar
2 sheets (12 by 18-inch) puff pastry
2 eggs, beaten

Steps:

  • Preheat the oven to 400 degrees F.
  • Using a warmed sharp knife, or unflavored dental floss (See Cook's Note 1) cut the wheel of brie in half horizontally and separate the top half of the wheel from the bottom half. Sprinkle the bottom half of the brie with the dried cherries, toasted almonds, and brown sugar. Replace the top half of the brie and apply pressure to secure the stuffing. Working on a well-floured surface, roll out the puff pastry so that it will fully cover the brie. Place the brie in the middle of the puff pastry and fold the excess pastry around the wheel. Put the wheel aside. Roll out another piece of puff pastry and cut out a circle the same circumference as the top of the brie. Save the trimmings for decorations. Using a pastry brush, brush the egg on top of the brie in the puff pastry and place the circle on top. Brush the top of the circle with egg. Cut out decorations using cookie cutters or a small knife on top of the brie. Brush the entire top side of the brie with the egg and place the brie on a sheet pan lined with parchment paper. Bake for 20 to 30 minutes or until the pastry begins to turn golden brown, then turn the temperature down to 325 degrees F and bake for another 20 minutes. Serve on a pretty platter. See Cook's Note 2.
  • Cook's Note 1: Instead of using a knife to cut the brie, use a piece of unflavored dental floss. Make an initial cut half way down, along the outer side of the brie with a pairing knife. Then, take a long piece of dental floss and wrap it around both hands. Starting at the front of the wheel at the initial cut, work through the wheel with the floss, separating the top half of the wheel from the bottom.
  • Cook's Note 2: The brie can be made, wrapped securely and stored in the freezer up to a month ahead of time.
